- 一种制造块状腐乳的工艺,包括以黄豆为原料,常规方法制浆、点浆,压榨成薄块,将乳块平铺于网状乳格上,平铺排乳后,采用底、面两个面接种,进行前期发酵,前期发酵完成后,不再盐腌,直接投入容器中,加入汤料,汤料中预先溶解10%的盐分和浓度16%的酒精,进行后期发酵,后期发酵完成后,取出乳块,沥干汁液,用打浆机或研磨机搅打研磨成细腻的膏体,将膏体注入压榨框中,渐渐加压成型,压榨成型后,用热的琼脂或卡拉胶溶液涂抹或喷涂于表面,最后包装。
