本发明提供一种猴头菇多糖小肽益生菌固体饮料及其生产方法,属于食用菌多糖与小肽的提取及固体饮料制备技术,属于生物技术。所用原料是干猴头菇、金耳、鹰嘴豆、苹果粉、橙汁粉、复合益生菌粉。分别制备猴头菇与金耳多糖液、鹰嘴豆小肽提取液、复合益生菌粉、并通过猴头菇与金耳多糖液和鹰嘴豆小肽提取液制备得到猴头菇多糖小肽粉后,经与苹果汁粉、橙汁粉按比例复配得到固体饮料产品。该固体饮料兼顾了猴头菇多糖、金耳多糖、鹰嘴豆小肽、益生菌的功能,使该产品成为针对消化道、食道、胃、肝、肠等身体器官,具有良好的保健作用;适合食欲不佳,胃肠功能紊乱人群,具有理想的保健效果。

本发明属于食用菌多糖与小肽的提取及益生菌固体饮料制备技术,属于生物技术。
背景技术
猴头菌(学名:Hericium erinaceus),又叫猴头菇,猴菇菌,猴菇,猴蘑,是中国传统的名贵菜肴,肉嫩、味香、鲜美可口。是四大名菜(猴头、熊掌、海参、鱼翅)之一。有“山珍猴头、海味燕窝”之称。作为食用菌王国的珍品,猴头菇属于药食两用真菌,尤其是其医药方面的药用价值,受到广大消费者的青睐,具有健脾养胃、安神、抗癌的功效,对体虚乏力、消化不良、失眠、胃与十二指肠溃疡、慢性胃炎、消化道肿瘤等症有特效。
猴头菇的主要成分是多糖类,具有助消化、利五脏的功能,从猴头菇子实体中提取得到的多糖是主链由β-1,3-糖苷键、支链为β-1,6-糖苷键连接的葡聚糖混合物。
目前猴头菇作为药物生产的“猴头菌片”“猴头菇口服液”“胃乐新冲剂”“猴耳环消炎片”作为食品生产的“猴菇饼干”“猴头菇酒”等也因食用方便,疗效确切等深受消费者欢迎。但是现有的猴头菌饮料中组成成分较为简单,无法满足目前人们对饮料的所需的保健功能,具有一定的缺陷。
发明内容
本发明提供一种猴头菇多糖小肽益生菌固体饮料的生产方法。
为实现上述的发明目的,本发明采取的实施方式如下:
本方法采用猴头菇、金耳、鹰嘴豆、果汁粉做原料,先提取猴头菇、金耳多糖,再提取鹰嘴豆小肽,之后将其粉体复配益生菌,得到固体饮料。本发明所用原料是干猴头菇、金耳、鹰嘴豆、苹果粉、橙汁粉、复合益生菌粉。具体生产方法如下:
(1)猴头菇与金耳多糖液的制备:将猴头菇与金耳(按照8:2)磨成粉,加5~10倍水,70℃条件下,超声波提取设备(频率20000~50000HZ)提取多糖等水溶物2~4小时;用硅藻土过滤机,得到猴头菇金耳多糖提取液;
(2)鹰嘴豆小肽提取液的制备:鹰嘴豆泡水,用豆芽机发芽,至芽长2~5mm,用胶体磨磨浆。浆液放在反应釜中,用纯碱调pH=9~10,50℃,搅拌2小时;加入2%碱性蛋白酶反应50℃,2小时,加入1~2%中性蛋白酶,2~4%木瓜蛋白酶,50℃反应8小时;升温至95℃,10分钟,灭酶活;分离过滤:采用蝶式离心过滤机,将食用菌渣分离出去,收集滤液;渣烘干回收利用;精密过滤:采用精密竹式硅藻土过滤机,对上述滤液进行精密过滤,得到鹰嘴豆小肽提取液;
(3)猴头菇多糖小肽粉的制备:
将猴头菇、金耳多糖提取液与鹰嘴豆小肽提取液混合。
膜精制浓缩:采用膜过滤器,先脱除液体中的一价离子,脱盐,降低其电导率;之后进行浓缩脱水,得到浓缩的提取液;
喷雾干燥:采用喷雾干燥塔进行喷雾干燥,干燥塔进料温度160~180℃,出料90~110℃,得到猴头菇多糖小肽喷雾干燥粉;
筛分:得到的粉,采用60目超声波振动筛筛分,收集过60目筛的粉,得到猴头菇多糖小肽粉;
(4)复合益生菌粉制作:
采用下述比例复配益生菌,配比:
鼠李糖乳杆菌(1500亿U/g)40%
植物乳杆菌(1500亿U/g)30%
乳双歧杆菌(1500亿U/g)10%
罗伊氏乳杆菌(1500亿U/g)10%
婴儿双歧杆菌(1500亿U/g)10%
(5)猴头菇多糖小肽益生菌固体饮料的制备:
按照下列比例配制固体饮料:
猴头菇多糖小肽粉:50~90%
苹果汁粉:4~20%
橙汁粉:4~28%
复合益生菌粉:0.1~2%
上述原料用V型混料机混料;装袋,包装,得到成品。
本发明的有益效果是:

本发明产品根据国家标准《GB/T 29602-2013固体饮料》相应的方法及步骤检测,指标符合该标准要求。
具体实施方式
以下结合实施例,对依据本发明提供的具体实施方式详述如下:
实施例1
一种猴头菇多糖小肽益生菌固体饮料的制备方法,本发明所用原料是干猴头菇、金耳、鹰嘴豆、苹果粉、橙汁粉、复合益生菌粉,并进一步制备得到猴头菇与金耳多糖液、鹰嘴豆小肽提取液、猴头菇多糖小肽粉、复合益生菌粉。经猴头菇多糖小肽粉、苹果汁粉、橙汁粉、复合益生菌粉配伍组合后得到猴头菇多糖小肽固体饮料产品。
(1)猴头菇与金耳多糖液的制备:将80kg猴头菇与20kg金耳磨成粉,加9倍水,70℃条件下,超声波提取设备(频率20000HZ)提取多糖等水溶物3小时;用硅藻土过滤机过滤,得到猴头菇金耳多糖提取液;
(2)鹰嘴豆小肽提取液的制备:100kg鹰嘴豆泡水,用豆芽机发芽,至芽长3mm,加水至1吨,用胶体磨磨浆。浆液放在反应釜中,用纯碱调pH=10,50℃,2小时,加入2%碱性蛋白酶反应50℃,搅拌2小时;加入1%中性蛋白酶,2%木瓜蛋白酶,50℃反应8小时;升温至95℃,10分钟,灭酶活;分离过滤:采用蝶式离心过滤机,将食用菌渣分离出去,收集滤液;渣烘干回收利用;精密过滤:采用精密竹式硅藻土过滤机,对上述滤液进行精密过滤,得到鹰嘴豆小肽提取液;

(2)鹰嘴豆小肽提取液的制备:100kg鹰嘴豆泡水,用豆芽机发芽,至芽长2mm,加水至1吨,用胶体磨磨浆。浆液放在反应釜中,用纯碱调pH=9,50℃,2小时,加入2%碱性蛋白酶反应50℃,搅拌2小时;加入2%中性蛋白酶,4%木瓜蛋白酶,50℃反应8小时;升温至95℃,10分钟,灭酶活;分离过滤:采用蝶式离心过滤机,将食用菌渣分离出去,收集滤液;渣烘干回收利用;精密过滤:采用精密竹式硅藻土过滤机,对上述滤液进行精密过滤,得到鹰嘴豆小肽提取液;
(3)猴头菇多糖小肽粉的制备:
将猴头菇、金耳多糖提取液与鹰嘴豆小肽提取液混合。
膜精制浓缩:采用膜过滤器,先脱除液体中的一价离子,脱盐,降低其电导率;之后进行浓缩脱水,得到浓缩的提取液;
喷雾干燥:采用喷雾干燥塔进行喷雾干燥,干燥塔进料温度180℃,出料110℃,得到猴头菇多糖小肽喷雾干燥粉;
筛分:得到的粉,采用60目超声波振动筛筛分,收集过60目筛的粉,得到猴头菇多糖小肽粉;
(4)复合益生菌粉制作:
采用下述比例复配益生菌,配比:

(5)猴头菇多糖小肽益生菌固体饮料的制备:
按照下列比例配制固体饮料:
猴头菇多糖小肽粉:80%,40kg
苹果汁粉:10%,5kg
橙汁粉:9%,4.5kg
复合益生菌粉:1%,0.5kg
上述原料用V型混料机混料;装袋,包装,得到成品。
实施例3
(1)猴头菇与金耳多糖液的制备:将80kg猴头菇与20kg金耳磨成粉,加10倍水,70℃条件下,超声波提取设备(频率30000HZ)提取多糖等水溶物4小时;用硅藻土过滤机过滤,得到猴头菇金耳多糖提取液;
(2)鹰嘴豆小肽提取液的制备:100kg鹰嘴豆泡水,用豆芽机发芽,至芽长5mm,加水至1吨,用胶体磨磨浆。浆液放在反应釜中,用纯碱调pH=9.5,50℃,2小时,加入2%碱性蛋白酶反应50℃,搅拌2小时;加入1.5%中性蛋白酶,3%木瓜蛋白酶,50℃反应8小时;升温至95℃,10分钟,灭酶活;分离过滤:采用蝶式离心过滤机,将食用菌渣分离出去,收集滤液;渣烘干回收利用;精密过滤:采用精密竹式硅藻土过滤机,对上述滤液进行精密过滤,得到鹰嘴豆小肽提取液;
(3)猴头菇多糖小肽粉的制备:
将猴头菇、金耳多糖提取液与鹰嘴豆小肽提取液混合。

按照下列比例配制固体饮料:
猴头菇多糖小肽粉:80%,40kg

复合益生菌粉:1%,0.5kg
上述原料用V型混料机混料;装袋,包装,得到成品。

1.一种猴头菇多糖小肽益生菌固体饮料,其特征是按以下组分及比例配置:
猴头菇多糖小肽粉:50~90%;
苹果汁粉:4~20%;
橙汁粉:4~28%;
复合益生菌粉:0.1~2%。
2.根据权利要求1所述的猴头菇多糖小肽益生菌固体饮料,其特征是:组分及比例为:
猴头菇多糖小肽粉:80%,40kg
苹果汁粉:10%,5kg
橙汁粉:9%,5kg
复合益生菌粉:1%,0.5kg。
3.一种权利要求1或2所述的猴头菇多糖小肽益生菌固体饮料的制备方法,其特征是:所用原料是干猴头菇、金耳、鹰嘴豆、苹果粉、橙汁粉、复合益生菌粉,并进一步制备得到猴头菇与金耳多糖液、鹰嘴豆小肽提取液、猴头菇多糖小肽粉、复合益生菌粉。经猴头菇多糖小肽粉、苹果汁粉、橙汁粉、复合益生菌粉配伍组合后得到猴头菇多糖小肽固体饮料产品。
4.根据权利要求3所述的猴头菇多糖小肽益生菌固体饮料的制备方法,其特征是:
猴头菇与金耳多糖液的制备:将猴头菇与金耳按照8:2磨成粉,加5~10倍水,70℃条件下,超声波提取设备频率20000~50000HZ提取多糖等水溶物2~4小时;用硅藻土过滤机,得到猴头菇金耳多糖提取液。
5.根据权利要求3所述的猴头菇多糖小肽益生菌固体饮料的制备方法,其特征是:
鹰嘴豆小肽提取液的制备:鹰嘴豆泡水,用豆芽机发芽,至芽长2~5mm,用胶体磨磨浆,浆液放在反应釜中,用纯碱调pH=9~10,50℃,搅拌2小时;加入2%碱性蛋白酶反应50℃,2小时,加入1~2%中性蛋白酶,2~4%木瓜蛋白酶,50℃反应8小时;升温至95℃,10分钟,灭酶活;分离过滤:采用蝶式离心过滤机,将食用菌渣分离出去,收集滤液;渣烘干回收利用;精密过滤:采用精密竹式硅藻土过滤机,对上述滤液进行精密过滤,得到鹰嘴豆小肽提取液。
6.根据权利要求3所述的猴头菇多糖小肽益生菌固体饮料的制备方法,其特征是:
猴头菇多糖小肽粉的制备:
将猴头菇、金耳多糖提取液与鹰嘴豆小肽提取液混合;
膜精制浓缩:采用膜过滤器,先脱除液体中的一价离子,脱盐,降低其电导率;之后进行浓缩脱水,得到浓缩的提取液;
喷雾干燥:采用喷雾干燥塔进行喷雾干燥,干燥塔进料温度160~180℃,出料90~110℃,得到猴头菇多糖小肽喷雾干燥粉;
筛分:得到的粉,采用60目超声波振动筛筛分,收集过60目筛的粉,得到猴头菇多糖小肽粉。
7.根据权利要求3所述的猴头菇多糖小肽益生菌固体饮料的制备方法,其特征是:
复合益生菌粉制作:
采用下述比例复配益生菌,配比:
鼠李糖乳杆菌(1500亿U/g)40%
植物乳杆菌(1500亿U/g)30%
乳双歧杆菌(1500亿U/g)10%
罗伊氏乳杆菌(1500亿U/g)10%
婴儿双歧杆菌(1500亿U/g)10%。
8.根据权利要求3所述的猴头菇多糖小肽益生菌固体饮料的制备方法,其特征是:
猴头菇多糖小肽固体饮料的制备:
按照下列比例配制固体饮料:
猴头菇多糖小肽粉:50~90%;
苹果汁粉:10~20%;
橙汁粉:10~28%;
复合益生菌粉:0.1~2%;
上述原料用V型混料机混料;装袋,包装,得到成品。
