Abstract
本发明属于香精香料技术领域,具体涉及一种果蔬味香精及其制备方法,所述一种果蔬味香精,其制备原料按重量份包括以下组分:青柠檬10‑15份、猕猴桃10‑15份、无花果10‑15份、西红柿8‑12份、芹菜8‑12份、基料3‑5份;所述基料按重量份包括糊精8‑10份、冰糖2‑5份和益生菌0.5‑1份。本发明的果蔬味香精,兼具水果味和蔬菜味,用于食品中,能够增加食用者食欲,促进肠道蠕动,有利于吸收;此外,本发明还提供上述一种果蔬味香精的制备方法,该制备方法制备的香精能更好的保存果蔬本味,具果蔬清香,吸收效果更好。
Description
技术领域
本发明属于香精香料技术领域,具体涉及一种果蔬味香精及其制备方法。
背景技术
随着人们生活水平的提高,日常生活中各种食物都随时可以得到,随之而产生的挑食、厌食的现象累见不鲜。而食物是人体补充营养及能量的主要来源,若出现厌食现象将给身体各机能的生长发育带来不利,特别是正在长身体的青少年、儿童,出现厌食将严重影响发育。
目前麻辣食品、烧烤食品以及零食受到青少年、儿童的广大青睐,而这类食品使用了大量添加剂,营养价值不高。将如何转变其饮食习惯,或是通过在食物中添加香料来促进挑食厌食人群的食欲,是个值得研究的问题。食用香精作为一种食品添加剂,主要是用来改进食物的口感及香味,通过纯天然香精来促进食欲的报道鲜见。
发明内容
针对现有技术的不足,本发明的作用在于提供一种果蔬味香精,兼具水果味和蔬菜味,用于食品中,能够增加食用者食欲,有利于肠道蠕动,促进吸收;此外,本发明还提供上述果蔬味香精的制备方法,该方法制备的香精能更好的保存果蔬本味,吸收效果更好。
本发明解决其技术问题所采用的技术方案是提供一种果蔬味香精,其制备原料按重量份包括以下组分:青柠檬10-15份、猕猴桃10-15份、无花果10-15份、西红柿8-12份、芹菜8-12份、基料3-5份;所述基料按重量份包括糊精8-10份、冰糖2-5份和益生菌0.5-1份。
在上述技术方案中,各组分的作用如下:
青柠檬性温、味苦、无毒,具有止渴生津、祛暑清热、安胎、疏滞、化痰、止咳、健胃、健脾、止痛、杀菌等功能,吃柠檬果或喝柠檬汁,可以化食、解酒,排毒。
猕猴桃含有猕猴桃碱、蛋白水解酶、单宁果胶和糖类等有机物,以及钙、钾、硒、锌、锗等微量元素和人体所需17种氨基酸外,还含有丰富的维生素C、葡萄酸、果糖、柠檬酸、苹果酸、脂肪,对保持人体健康具有重要的作用,其还具有提升免疫功能,治疗肝脏疾病,消化不良,贫血,泌尿***问题等。
无花果性甘、平、无毒,其汁、饮料具有独特的清香味,生津止渴,老幼皆宜,具有健胃清肠,消肿解毒功效,适合消化不良者、食欲不振者、高血脂患者、高血压患者、冠心病患者、动脉硬化患者、癌症患者、便秘者适宜食用。
西红柿含有丰富的胡萝卜素、番茄红素,其味甘、酸,性凉,微寒,能清热止渴,养阴,凉血,归肝、胃、肺经,具有生津止渴,健胃消食,清热解毒,凉血平肝,补血养血和增进食欲的功效。
芹菜性微寒,味甘苦,无毒,富含蛋白质、碳水化合物、胡萝卜素、B族维生素、钙、磷、铁等,叶茎中还含有药效成分的芹菜苷、佛手苷内酯和挥发油,具有降血压、降血脂、防治动脉粥样硬化的作用;对神经衰弱、***、痛风、抗肌肉痉挛也有一定的辅助食疗作用;它还能促进胃液分泌,增加食欲。
冰糖,为禾本科甘蔗属植物甘蔗茎中的液汁,制成白砂糖后再煎炼而成的冰块状结晶。具有补中和胃,润肺止咳的功效。
进一步地,其制备原料按照重量份包括以下组分:青柠檬10份、猕猴桃12份、无花果12份、西红柿10份、芹菜10份、基料4份;所述基料按重量份包括糊精9份、冰糖3份和益生菌0.5份。
本发明还提供上述一种果蔬味香精的制备方法,包括以下步骤:
1)将原料青柠檬、猕猴桃、无花果、西红柿、芹菜清洗干净;
2)将洗净好的原料进行快速冷冻处理;
3)将步2)中冷冻的原料放入破碎机破碎、混合,得泥状混合物;
4)将步骤3)所得泥状混合物加入水,超声波打匀,加入纤维素酶水解,得酶解料;
5)将步骤4)所得酶解料进行微波灭酶后,过滤残渣,滤液为果蔬发酵原浆;
6)将步骤5)所得果蔬发酵原浆与基料混合,进行高压均质,重复两次,得果蔬味香精乳液;
7)将步骤6)所得果蔬味香精乳液进行低温喷雾干燥,研磨得果蔬味香精粉。
进一步地,步骤2)中冷冻温度为零下20至零下25℃。
上述技术方案中采用冷冻预处理,防止破碎过程中果蔬中活性物质被快速氧化,影响香精品质。
进一步地,步骤3)中所述泥状混合物与所述水的质量之比为1:(2-3)。
进一步地,步骤3)所述超声频率为25-40KHz。
进一步地,步骤3)所述酶解温度为40-50℃,时间为9-12h。
进一步地,步骤5)所述微波频率为910-925MHz,时间为5-15min。
在本发明中,采用微波灭酶,处理时间短,升温快,对果蔬的影响很小。
进一步地,步骤6)所述均质压力为20-30MPa,温度为40-50℃。
进一步地,步骤7)中干燥温度为40-50℃。
本发明采用均质将果蔬发酵原浆及其基料均至纳米级,使各物质更稳定,且有利于吸收。同时,该香精中加入益生菌,在增加食欲的同时能促进肠胃的蠕动和吸收。
与现有技术相比,本发明具有的有益效果是:本发明的果蔬味香精,兼具水果味和蔬菜味,用于食品中,能够增加食用者食欲,促进其肠道吸收;此外,本发明制备方法制备的香精能更好的保存果蔬本味,具果蔬清香,吸收效果更好。
具体实施方式
下述实施例中的实验方法,如无特别说明,均为常规方法。下述实施例涉及的原料若无特别说明,均为普通市售品,皆可通过市场购买获得。下面结合实施例对本发明作进一步详细描述:
实施例1
一种果蔬味香精,其制备原料按重量份包括以下组分:青柠檬10份、猕猴桃12份、无花果12份、西红柿10份、芹菜10份、基料4份;所述基料按重量份包括糊精9份、冰糖3份和益生菌0.5份。
其采用以下制备方法制备:
1)将原料青柠檬、猕猴桃、无花果、西红柿、芹菜清洗干净;
2)将洗净好的原料在零下20℃进行快速冷冻处理;
3)将步2)中冷冻的原料放入破碎机破碎、混合,得泥状混合物;
4)将步骤3)所得泥状混合物加入2倍的水,频率为25KHz的超声波打匀,加入纤维素酶进行水解,酶解温度控制在40℃,酶解12h,得酶解料;
5)将步骤4)所得酶解料在频率为910MHz下进行微波灭酶15min,灭酶后过滤残渣,滤液为果蔬发酵原浆;
6)将步骤5)所得果蔬发酵原浆与基料混合,在温度为40℃,压力为30MPa进行高压均质,重复两次,得果蔬味香精乳液;
7)将步骤6)所得果蔬味香精乳液在40℃下进行低温喷雾干燥,研磨得果蔬味香精粉。
实施例2
一种果蔬味香精,其制备原料按重量份包括以下组分:青柠檬12份、猕猴桃10份、无花果15份、西红柿12份、芹菜10份、基料3份;所述基料按重量份包括糊精8份、冰糖2份和益生菌0.6份。
其采用以下制备方法制备:
1)将原料青柠檬、猕猴桃、无花果、西红柿、芹菜清洗干净;
2)将洗净好的原料在零下22℃进行快速冷冻处理;
3)将步2)中冷冻的原料放入破碎机破碎、混合,得泥状混合物;
4)将步骤3)所得泥状混合物加入2.5倍的水,频率为30KHz的超声波打匀,加入纤维素酶进行水解,酶解温度控制在45℃,酶解10h,得酶解料;
5)将步骤4)所得酶解料在频率为915MHz下进行微波灭酶10min,灭酶后过滤残渣,滤液为果蔬发酵原浆;
6)将步骤5)所得果蔬发酵原浆与基料混合,在温度为45℃,压力为25MPa进行高压均质,重复两次,得果蔬味香精乳液;
7)将步骤6)所得果蔬味香精乳液在45℃下进行低温喷雾干燥,研磨得果蔬味香精粉。
实施例3
一种果蔬味香精,其制备原料按重量份包括以下组分:青柠檬15份、猕猴桃15份、无花果10份、西红柿15份、芹菜12份、基料5份;所述基料按重量份包括糊精10份、冰糖5份和益生菌1份。
其采用以下制备方法制备:
1)将原料青柠檬、猕猴桃、无花果、西红柿、芹菜清洗干净;
2)将洗净好的原料在零下25℃进行快速冷冻处理;
3)将步2)中冷冻的原料放入破碎机破碎、混合,得泥状混合物;
4)将步骤3)所得泥状混合物加入3倍的水,频率为25KHz的超声波打匀,加入纤维素酶进行水解,酶解温度控制在50℃,酶解9h,得酶解料;
5)将步骤4)所得酶解料在频率为920MHz下进行微波灭酶6min,灭酶后过滤残渣,滤液为果蔬发酵原浆;
6)将步骤5)所得果蔬发酵原浆与基料混合,在温度为50℃,压力为20MPa进行高压均质,重复两次,得果蔬味香精乳液;
7)将步骤6)所得果蔬味香精乳液在50℃下进行低温喷雾干燥,研磨得果蔬味香精粉。
对比例
一种香精,其制备原料按重量份包括以下组分:青柠檬10份、猕猴桃12份、无花果12份、西红柿10份、芹菜10份、基料4份;所述基料按重量份包括糊精9份、冰糖3份。
其采用以下制备方法制备:
1)将原料青柠檬、猕猴桃、无花果、西红柿、芹菜清洗干净;
2)将洗净好的原料放入破碎机破碎、混合,得泥状混合物;
3)将步骤2)所得泥状混合物加入3倍的水,频率为35KHz的超声波打匀,加入纤维素酶进行水解,酶解温度控制在40℃,酶解12h,得酶解料;
4)将步骤3)所得酶解料在100℃下进行灭酶60min,灭酶后过滤残渣,滤液为果蔬发酵原浆;
5)将步骤4)所得果蔬发酵原浆与基料混合,得果蔬味香精混合液;
6)将步骤5)所得果蔬味香精乳液在50℃下进行低温喷雾干燥,研磨得果蔬味香精粉。
为了验证本发明方法制备获得的果蔬味香精的感官及效果,进行了以下试验:
试验例1感官评价
本发明所采用的原材料均为新鲜蔬果,基料均为食品级原料,制备工艺均经消毒,所获得的香精可直接食用。将本实施例和对比例制备的香精直接拌入白米饭中,加入量均为2%。
感官评价标准:4-5分:细腻,兼具各原料的清香味,并有层次感,给人舒适的感觉,提高食欲;3-4分:较细,有各原料清香味,但是层次感较弱,食用口感一般;2-3分:较粗,有淡淡清香味,但是分不出是何香味,整体风味有不协调感;0-2分:粗粒,无清香味,整体风味口感较差。

从表1可以看出,实施例的风味均要优于对比例1,说明本发明的制备方法更有利于保留蔬果的本味;同时各试验例整体感觉评价都比较高,说明本发明的香精配方口感好,能提高食欲。
试验例2
选择12例平时不爱吃米饭的儿童,其中6男,6女,年龄在3-6岁,分成三组,每组4人,进行为期5天的跟踪试验。试验组:将实施例1制得的果蔬味香精每餐按1%的量加入到米饭中,观察,每天统计数据;对比例组:将对比例1制得的果蔬味香精每餐按1%的量加入到米饭中,观察,每天统计数据;对照组:白米饭,观察。各试验组除了米饭不同外,其它菜类均相同。表2每天食用情况(数据采集以米饭为主)
从表2可以看出,对照组这些平时不爱吃米饭的儿童,食量基本不变,而试验组儿童在食用添加本发明制备的香精后食量大增,且连续食用几天后,食量均不断上升,且即将达到该阶段儿童谷类食量的上限;对比例组儿童食量也大增但是效果不如本发明效果好,说明本发明所制备的香精具有增加食用者食欲的效果,同时其含有益生菌,促进肠道蠕动,有利于吸收。
最后需要强调的是,以上所述仅为本发明的优选实施例,并不用于限制本发明,对于本领域的技术人员来说,本发明可以有各种变化和更改,凡在本发明的精神和原则之内,所做的任何修改、等同替换、改进等,均应包含在本发明的保护范围之内。
Claims (10)
1.一种果蔬味香精,其特征在于,其制备原料按重量份包括以下组分:青柠檬10-15份、猕猴桃10-15份、无花果10-15份、西红柿8-12份、芹菜8-12份、基料3-5份;
所述基料按重量份包括糊精8-10份、冰糖2-5份和益生菌0.5-1份。
2.根据权利要求1所述一种果蔬味香精,其特征在于,其制备原料按照重量份包括以下组分:青柠檬10份、猕猴桃12份、无花果12份、西红柿10份、芹菜10份、基料4份;
所述基料按重量份包括糊精9份、冰糖3份和益生菌0.5份。
3.权利要求1或2所述一种果蔬味香精的制备方法,其特征在于,包括以下步骤:
1)将原料青柠檬、猕猴桃、无花果、西红柿、芹菜清洗干净;
2)将洗净好的原料进行快速冷冻处理;
3)将步2)中冷冻的原料放入破碎机破碎、混合,得泥状混合物;
4)将步骤3)所得泥状混合物加入水,超声波打匀,加入纤维素酶水解,得酶解料;
5)将步骤4)所得酶解料进行微波灭酶后,过滤残渣,滤液为果蔬发酵原浆;
6)将步骤5)所得果蔬发酵原浆与基料混合,进行高压均质,重复两次,得果蔬味香精乳液;
7)将步骤6)所得果蔬味香精乳液进行低温喷雾干燥,研磨得果蔬味香精粉。
4.根据权利要求3所述一种果蔬味香精的制备方法,其特征在于,所述步骤2)中冷冻温度为零下20至零下25℃。
5.根据权利要求3所述一种果蔬味香精的制备方法,其特征在于,所述步骤3)中所述泥状混合物与所述水的质量之比为1:(2-3)。
6.根据权利要求3所述一种果蔬味香精的制备方法,其特征在于,所述步骤3)中超声波频率为25-40KHz。
7.根据权利要求3所述一种果蔬味香精的制备方法,其特征在于,所述步骤3)中酶解温度为40-50℃,时间为9-12h。
8.根据权利要求3所述一种果蔬味香精的制备方法,其特征在于,所述步骤5)微波频率为910-925MHz,时间为5-15min。
9.根据权利要求3所述一种果蔬味香精的制备方法,其特征在于,所述步骤6)均质压力为20-30MPa,温度为40-50℃。
10.根据权利要求3所述一种果蔬味香精的制备方法,其特征在于,所述步骤7)中干燥温度为40-50℃。
