本发明涉及一种含有多种营养物质的驼乳核桃蛋白粉,包括以下质量份数的原料:驼乳蛋白:20‑40份,大豆寡肽:10‑20份,核桃寡肽:40‑60份,植物提取维生素:10‑20份。一种含有多种营养物质的驼乳核桃寡肽粉的制备方法,包括如下步骤:分别制备驼乳、核桃寡肽粉浆液、蔬果浆液和大豆寡肽蛋白滤液,充分混合,并旋蒸浓缩,旋蒸温度为50‑70℃,之后进行冻干处理,得到含有多种营养物质的驼乳核桃寡肽粉。本发明中的蛋白粉中同时含有核桃寡肽、大豆寡肽和驼乳蛋白,同时还含有多种果蔬纤维和维生素,具有很全面的营养价值。本发明中的核桃寡肽、大豆寡肽分子量小,易于吸收,容易消化,适合婴幼儿和中老年人服用,也适用于久病初愈的人服用。

技术领域
本发明涉及寡肽的制备方法,具体涉及一种含有多种物质的驼乳核桃蛋白粉及其制备方法。
背景技术
医学专家研究认为驼奶是最接近母乳的乳中珍品。驼乳中硒的含量较高,为牛奶中的 5.2倍,属于富硒食品,具有抑制癌细胞生长、延缓衰老的作用。驼乳蛋白质中乳清蛋白所占比例较高,驼乳乳清蛋白含a-乳白蛋白、β-乳球蛋白、乳铁蛋白、免疫球蛋白、溶菌酶等成分,具有杀菌、抗病毒、抗肿瘤细胞等作用,并可增强双歧杆菌等益生菌的生长能力。经试验证明,驼乳具有提高机体免疫功能和抑制结核杆菌生长的作用。目前市场上销售的蛋白粉大多是采用牛奶作为原料生成出来的,营养成分较为单一,且不及驼乳的营养价值高。而由于驼的饲养还没有达到奶牛饲养的规模,所以驼乳的普及度不高,市面上也没有相关的驼乳制品,致使现有驼乳制品的制备还停留在手工制作的阶段,成品的营养价值不能很好的保障。
核桃仁含有蛋白质、脂肪酸、糖、纤维、维生素等多种营养成分以及锌、锰、铬等人体不可缺少的微量元素,具有“药食同源”的特性。核桃中的磷脂,对脑神经有良好保健作用。经常食用核桃,既能健身体,又能抗衰老。据测定,每百克核桃含蛋白质14.9克,脂肪58.8 克。核桃中的脂肪71%为亚油酸,12%为亚麻酸,碳水化合物9.6克,膳食纤维9.6克,胡萝卜素30微克,维生素E43.21毫克,钾3.44毫克,钙56毫克,磷294毫克,铁2.7毫克,硒4.62微克,锌2.17毫克。就营养成分而言,核桃营养价值是大豆的8.5倍,花生的6倍,鸡蛋的12倍,牛奶的25倍,肉类的10倍,1斤核桃仁相当于5斤鸡蛋或9斤牛奶的营养价值。核桃蛋白中18种氨基酸种类齐全,且人体所需的8种必需氨基酸含量合理,对人体生理作用有着重要功能的谷氨酸、天冬氨酸、精氨酸含量均较高。核桃多肽一般由3~20个氨基酸构成,其生理活性功能包括促进营养吸收、提高免疫力、调节神经、抗氧化、降血压和抗菌等。
现有的蛋白粉中成分单一,不含有免疫因子和微量元素,且,植物蛋白由于分子量大不易吸收。因此,需要设计一种营养全面的、易吸收的蛋白粉。
发明内容
为解决现有技术中存在的问题,本发明提供了一种含有多种物质的驼乳核桃蛋白粉及其制备方法,具体的技术方案如下所述:

脱脂核桃饼粕中加水进行研磨,得到核桃寡肽浆液;用碱调节所述核桃寡肽浆液的pH值至8~10,加入蛋白酶,然后在55~75℃条件下保温振荡30-60min后,调节pH值至中性,过滤,去掉残渣,得到含核桃寡肽的滤液;
步骤三,制备蔬果浆液
取蔬果原料,清洗、去皮、打浆,获得果蔬浆液;
步骤四,制备含有大豆寡肽的滤液
大豆分离蛋白粉的分散、水化:将大豆分离蛋白粉用去离子水配制为蛋白浆,通过剪切将大豆分离蛋白浆分散和水化;调节蛋白浆pH值至8~10,加入复合蛋白酶,于50℃~55℃搅拌水解1h,超滤,得到含有大豆寡肽的滤液;
步骤五,将步骤一、二、三和四制备得到的驼乳、核桃寡肽粉浆液、蔬果浆液和大豆寡肽滤液,充分混合,并旋蒸浓缩,旋蒸温度为50-70℃,浓缩至原体积的十分之一,之后进行冻干处理,得到所述的含有多种物质的驼乳核桃寡肽粉。
进一步地,所述的蔬果原料为草莓、胡萝卜、芹菜、椰浆、蔓越莓中的至少两种。

本发明的有益效果为:本发明将驼乳、核桃粉提取液和蔬果汁充分混合,旋蒸浓缩,并进一步低温干燥,这样很好地保护了蔬果中的维生素和其它营养物质不被破坏,还起到了很好的混合作用。本发明中的蛋白粉还有多种微量元素和低分子蛋白,好吸收、营养全面,可用于营养不良者补充营养。本发明实用压榨过的核桃糟粕进行蛋白质提取,变废为宝,具有经济节约的优点。采用驼乳直接进行处理,保全了驼乳中的所有的营养成分。采用低温干燥,保证植物中的维生素不被破坏。
本发明中的蛋白粉中同时含有核桃寡肽、大豆寡肽和驼乳蛋白,同时还含有多种果蔬纤维和维生素,具有很全面的营养价值。本发明中的核桃寡肽、大豆寡肽分子量小,易于吸收,容易消化,适合婴幼儿和中老年人服用,也适用于久病初愈的人服用。

4.一种如权利要求1所述的含有多种营养物质的驼乳核桃蛋白粉的制备方法,其特征在于,包括如下步骤:
步骤一,处理驼乳:取新鲜的驼乳,进行巴氏杀菌处理;
步骤二,制备含核桃寡肽的滤液
脱脂核桃饼粕中加水进行研磨,得到核桃寡肽浆液;用碱调节所述核桃寡肽浆液的pH值至8~10,加入蛋白酶,然后在55~75℃条件下保温振荡30-60min后,调节pH值至中性,过滤,去掉残渣,得到含核桃寡肽的滤液;
步骤三,制备蔬果浆液
取蔬果原料,清洗、去皮、打浆,获得果蔬浆液;
步骤四,制备含有大豆寡肽的滤液

6.根据权利要求4所述的含有多种营养物质的驼乳核桃蛋白粉的制备方法,其特征在于,所述的大豆寡肽的分子量1000-10000Da之间。
