本发明涉及功能食品制备领域,具体涉及一种基于猴头菇、香菇为主要原料,各复配五谷类杂粮设计的一种猴头菇营养早餐粉和一种香菇营养早餐粉。原料利用猴头菇、香菇、红豆、薏米、芡实、红枣、山药、红米、燕麦等。一种猴头菇营养早餐粉,按质量百分比计的原料组成:猴头菇粉5‑12%,红豆粉15‑25%,薏米粉15‑25%,芡实粉2‑7%,红枣粉10‑15%,山药粉2‑7%,红米粉5‑12%,燕麦粉15‑20%。一种香菇营养早餐粉,按质量百分比计的原料组成:香菇粉1‑5%,红豆粉20‑25%,薏米粉20‑25%,芡实粉2‑7%,红枣粉11‑16%,山药粉2‑7%,红米粉5‑12%,燕麦粉15‑22%。本发明配方含食用菌、五谷,没有添加任何添加剂,产品具有独特的风味和营养价值,而且食用方便,起到部分保健功能。同时使消费对象范围增大且接受性增强,本发明所用原料获取容易、制备方法简单、易于实施。

一种基于猴头菇、香菇的营养早餐粉及制备方法
技术领域
本发明涉及功能食品制备领域,具体涉及一种基于猴头菇、香菇为主要原料,搭配五谷原料设计的一种营养早餐粉。
背景技术
食物中的供能营养素是维持血糖水平的主要来源,早餐食物中的碳水化合物、蛋白质和脂肪的供能比例,应为5∶1∶0.7,这样能够很好地发挥碳水化合物在餐后快速升血糖的作用,同时又利用了蛋白质和脂肪维持进餐2小时后血糖水平的功能,两者互补,使整个上午的血糖维持在稳定的水平,来满足大脑对血糖供给的需求,对保证上午的工作、学习效率具有重要意义。
猴头菇隶属担子菌纲猴菇目猴菇科猴菇属,因其子实体外形酷似猴子的脑袋而取名。主要分布在东北大兴安岭,西北的天山和阿尔泰山,内蒙古、河南、河北、四川、湖北、广西、浙江、江西等省区也有分布。猴头菇不仅味道鲜美,营养丰富,还含有多种活性成分。猴头菇含有多糖、寡糖、多肽、甾醇、萜类、酚类、腺苷等多种活性物质,具有抗氧化、抗肿瘤、降血糖、降胆固醇、滋补、保肝、增强机体免疫力等多种养生保健作用。
香菇又名香菌、香蕈,属菌木蘑菇科。其味道鲜美有嚼劲,富含蛋白质、脂肪、膳食纤维、碳水化合物、维生素B群、维生素D原和相关矿物质元素。具有改善膳食结构、促进骨骼发育、改善营养性贫血、调节免疫***、降低胆固醇、抑制肿瘤细胞形成。
发明内容
本发明所要解决的技术问题是克服现有技术中设计的营养早餐粉营养多元性的不足,提供一种采用猴头菇、香菇各复配五谷类杂粮,利用各自原料的营养成分特征,无需添加任何添加剂便能恰好满足人体对于能量摄入的需求,同时又能使机体吸收各种营养素从而达到保健的一种营养早餐粉。
本发明包括一种猴头菇营养早餐粉和一种香菇营养早餐粉,通过下述技术方案予以实现。
一种猴头菇营养早餐粉,按质量百分比计的原料组成:猴头菇粉5-12%,红豆粉15-25%,薏米粉15-25%,芡实粉2-7%,红枣粉10-15%,山药粉2-7%,红米粉5-12%,燕麦粉15-20%。
一种香菇营养早餐粉,按质量百分比计的原料组成:香菇粉1-5%,红豆粉20-25%,薏米粉20-25%,芡实粉2-7%,红枣粉11-16%,山药粉2-7%,红米粉5-12%,燕麦粉15-22%。
如上所述的一种猴头菇营养早餐粉的制备方法,包括以下步骤:
1、按配比称量各原料;
2、将称取的各配料混合,得到混合粉;
3、将上述混合粉均匀混合;
4、将混合均匀的混合粉进行常规的杀菌包装,一袋重量75g。
如上所述的一种香菇营养早餐粉的制备方法,包括以下步骤:
1、按配比称量各原料;
2、将称取的各配料混合,得到混合粉;
3、将上述混合粉均匀混合;
4、将混合均匀的混合粉进行常规的杀菌包装,一袋重量75g。
与现有技术相比,本发明的有益效果是:
1、本发明利用食用菌、五谷的成分特征进行配方设计,在配方中无需添加任何添加剂,但是又能很好地保证产品独特的风味和营养价值,而且食用方便。
2、本发明利用食用菌的营养价值和功能性质,将食用菌添加入五谷营养早餐粉中,不仅提高了营养早餐粉的营养价值,也起到部分保健功能。不仅是消费者的营养早餐,也作为了消费者的保健品。
3、本发明中糖含量较低、无添加剂、原料天然,从而使消费对象范围增大且接受性增强。可包括患糖尿病的病人及婴幼儿。
4、本发明所用原料获取容易、制备方法简单、易于实施。

实施例1 一种猴头菇营养早餐粉
1、称量猴头菇粉8%,红豆粉22%,薏米粉22%,芡实粉4%,红枣粉13%,山药粉4%,红米9%,燕麦粉18%;
2、将称取的各配料混合,得到混合粉;
3、将上述混合粉均匀混合;
4、将混合均匀的混合粉进行常规的杀菌包装,一袋重量75g,既得香菇营养早餐粉。
实施例2 一种香菇营养早餐粉
1、称量香菇粉3%,红豆粉23%,薏米粉23%,芡实粉5%,红枣粉14%,山药粉4%,红米9%,燕麦粉19%;
2、将称取的各配料混合,得到混合粉;
3、将上述混合粉均匀混合;
4、将混合均匀的混合粉进行常规的杀菌包装,一袋重量75g,既得香菇营养早餐粉。

Claims (3)

1.一种基于猴头菇、香菇的营养早餐粉及制备方法,其特征是,由以下组分按下述质量百分比组成:
(1)一种猴头菇营养早餐粉:猴头菇粉5-12%,红豆粉15-25%,薏米粉15-25%,芡实粉2-7%,红枣粉10-15%,山药粉2-7%,红米粉5-12%,燕麦粉15-20%。
(2)一种香菇营养早餐粉:香菇粉1-5%,红豆粉20-25%,薏米粉20-25%,芡实粉2-7%,红枣粉11-16%,山药粉2-7%,红米粉5-12%,燕麦粉15-22%。
2.一种权利要求1所述的猴头菇营养早餐粉和香菇营养早餐粉的制备方法,其特征在于,首先按照权利要求1将所述的各组分粉碎备用,然后按照下述步骤进行:
1、猴头菇营养早餐粉
(1)按配比称量各原料;
(2)将称取的各配料混合,得到混合粉;
(3)将上述混合粉均匀混合;
(4)将混合均匀的混合粉进行常规的杀菌包装,一袋重量75g。
2、香菇营养早餐粉
(1)按配比称量各原料;
(2)将称取的各配料混合,得到混合粉;
(3)将上述混合粉均匀混合;
(4)将混合均匀的混合粉进行常规的杀菌包装,一袋重量75g。
3.根据权利要求2所述的猴头菇营养早餐粉和香菇营养早餐粉的制备方法,其特征在于,所述猴头菇粉、香菇粉是由干猴头菇、干香菇粉碎所得。
