本发明属于运动营养食品技术领域,具体涉及一种左旋肉碱饮料及其制备方法。
背景技术
近年来,随着生活水平的提高,肥胖人群明显增加。肥胖症是指机体由于生理生化机能的改变而引起机体内脂肪沉积量过多,造成体重增加,导致机体发生一系列病理性生理生化的病症。常并发或加重高血压、冠心病、糖尿病、高血脂、胆结石及一些感染性疾病,对人体健康造成较大危害。肥胖者大多数表现为脂肪代谢异常,主要特征是血浆甘油三酯(TG)与游离脂肪酸(FFA)比正常人高。
脂肪的代谢只能在线粒体内完成,在特定的位点(β-氧化)上被氧化并释放能量,而在线粒体外的脂肪则不能参与代谢功能。左旋肉碱做为脂肪的载体,是脂肪代谢过程中的一种关键物质,负责将脂肪从线粒体外运转入线粒体内膜,促进脂肪燃烧,从而释放能量,达到消除脂肪堆积的效果。高浓度的左旋肉碱能提高脂肪能量的利用率。
左旋肉碱做为运转脂肪酸的载体,是脂肪代谢过程中的一种关键物质,能够促进脂肪酸进入线粒体基质内的氧化位点进行氧化分解。是一种类维生素营养素。可以说肉毒碱是转运脂肪酸的载体。
研究表明,左旋肉碱配合一定时长的有氧运动具有良好的减肥效果。在长时间有氧运动中,左旋肉碱可提高脂肪的氧化速率,促使其氧化功能,从而减少糖原的消耗,同时还能通过减少肌肉组织中乳酸的建立,延缓疲劳,提高运动能力。此外,左旋肉碱是人体本身可生成的物质,安全健康,无毒副作用。早在80年代,国外耐力型运动员就已经应用左旋肉碱来提高运动成绩,左旋肉碱在运动领域的应用也为广大健身爱好者和肥胖人群提供了良好的借鉴。加之传统的减肥方式往往会导致食欲不振、胃下垂、头发脱落、骨质疏松症、贫血、记忆力减退等症状,现阶段人们更提倡健康减肥,合理的运动辅以一定量的左旋肉碱作为一种健康减肥的有效方式应运而生。
目前市场上含有左旋肉碱的减肥产品种类繁多,但大部分是片剂、固体饮料和胶囊剂,由于剂型的限制,左旋肉碱多以酒石酸盐或富马酸盐的形式添加,纯度相对较低,不易吸收。CN 107319242 A公开了左旋肉碱减肥泡腾片及其制备方法,需用水崩解后方可服用,使用相对麻烦。也有公司开发出左旋肉碱类饮料,如CN 104188037 A公开了一种左旋肉碱复合饮料,添加了0.2%-0.3%的酒石酸左旋肉碱,添加量少且纯度较低。
中国专利CN 108606219 A公开一种运动型左旋肉碱粉状冲剂,包括左旋肉碱、维生素C等,本领域技术人员皆知,纯的左旋肉碱在粉状下吸湿性非常强,在粉状冲剂中只能添加左旋肉碱酒石酸盐作为原料,纯度相对较低,不易吸收。
发明内容
针对现有技术的不足,本发明的目的是提供一种左旋肉碱饮料,生物利用度高,易于吸收;通过各组分搭配使用,可抑制脂肪的积累、促进脂肪的氧化分解,更易于减肥;各物质之间协同作用,共同促进脂肪消耗,提高运动能力;解决了现有技术中胶原蛋白小分子肽吸收难的问题,有利于胶原蛋白的吸收与合成,具有增加美容和疲劳恢复的功效;本发明还提供其制备方法,饮料形式,口感丰富,方便携带,易于服用。
本发明所述的左旋肉碱饮料,以250ml/瓶、100瓶的量计,包括以下成分:左旋肉碱100-200g、胶原蛋白肽100-200g、维生素B1 0.02-0.4g、维生素B2 0.02-0.2g、维生素B60.02-0.2g、泛酸0.08-0.7g、牛磺酸10-60g、异麦芽酮糖100-500g、针叶樱桃果汁50-500g、酸味调节剂10-80g、甜味剂2-10g、防腐剂2.5-10g、食用香精5-20g,余量为纯化水。
其中:
左旋肉碱为左旋肉碱纯品,纯度在98%-102%。纯的左旋肉碱吸湿性极强,暴露在空气中会潮解甚至液化,且具有特殊气味,对人体刺激性较大,因此现有技术中左旋肉碱的添加量一般较低,或者使用不易吸潮、刺激性稍小的左旋肉碱酒石酸盐,但是左旋肉碱酒石酸盐在体内需要转化为单体才可起作用;本发明使用纯的左旋肉碱,较左旋肉碱酒石酸盐更易于吸收,通过采用特定的制备方法将其做成液体制剂,克服了其吸湿性强的问题;液体剂型比固体制剂更易分散和吸收,刺激性小,生物利用度更高。
本发明还添加异麦芽酮糖作为填充剂,异麦芽酮糖与左旋肉碱搭配使用,可抑制脂肪的积累、促进脂肪的氧化分解,更易于减肥。此外,异麦芽酮糖口感柔和,对左旋肉碱的酸涩味具有良好的平衡调节作用。
胶原蛋白肽选自以下物质的一种或两种:鱼胶原蛋白肽或骨胶原蛋白肽。
胶原蛋白肽为胶原蛋白小分子肽,分子量为500道尔顿。
本发明配方中还添加一定量的胶原蛋白小分子肽,胶原蛋白肽不仅具有美容、美白的功效,在运动营养食品中也具有较好的作用:增加肌肉量和肌肉力量,缓解关节疼痛,延长运动时间,有助于运动疲劳的恢复等。本发明配以针叶樱桃果汁,有利于胶原蛋白的吸收与合成,可直接穿过肠壁进入血液循环,被人体吸收利用,增加美容和疲劳恢复的功效;解决了现有技术中胶原蛋白小分子肽吸收难的问题。
饮料中添加维生素B1、维生素B2、维生素B6和泛酸,B族维生素是维持神经兴奋度和保持精力充沛的重要物质,参与体内新陈代谢,加速能量代谢,消耗堆积的脂肪,对减肥人群具有重要意义。维生素B1和B2直接参与能量代谢,泛酸钙是脂肪代谢的必需辅酶之一,加速脂肪消耗,维持能量平衡;左旋肉碱在维生素B6的存在下才能起作用;牛磺酸与左旋肉碱具有协同作用。上述物质配合使用可有效缓解疲劳,提高运动能力,消耗脂肪。维生素B1选自盐酸硫胺素或硝酸硫胺素中的一种或两种,维生素B2选自核黄素或核黄素5’-磷酸钠中的一种或两种,维生素B6选自盐酸吡哆醇,泛酸选自D-泛酸钙。
酸味调节剂选自以下物质中的一种或多种:柠檬酸、苹果酸、磷酸、乳酸、L-抗坏血酸、食醋。
甜味剂选自以下物质中的一种或多种:甜菊糖苷、罗汉果甜苷、索马甜、甘草甜素、阿斯巴甜、三氯蔗糖、安赛蜜、甜蜜素、糖精钠、纽甜、阿力甜。
防腐剂选自以下物质中的一种或多种:山梨酸及其钾盐、苯甲酸及其钠盐、ε-聚赖氨酸盐酸盐、乳酸链球菌素。
食用香精选自以下物质中的一种或多种:樱桃香精、橙香精、柠檬香精、橘子香精、西柚香精、菠萝香精、芒果香精、草莓香精、树莓香精、蓝莓香精、苹果香精、水蜜桃香精、西瓜香精、葡萄香精、香蕉香精、荔枝香精、番石榴香精、火龙果香精、猕猴桃香精、黑加仑香精。
本发明提供一种左旋肉碱饮料的制备方法,包括以下步骤:
(1)按质量百分比称取左旋肉碱、胶原蛋白肽、维生素B1、维生素B2、维生素B6、泛酸、牛磺酸、异麦芽酮糖、针叶樱桃果汁、酸味调节剂、甜味剂、防腐剂、食用香精,备用;
(2)胶原蛋白水合:向配料罐中加入适量纯化水和配方量胶原蛋白肽,搅拌并升温至40-50℃,直至体系变透明澄清,得胶原蛋白肽预混液;
(3)向胶原蛋白肽预混液中加入配方量左旋肉碱,开启搅拌使左旋肉碱充分溶解;
(4)将体系降温至25℃,依次加入维生素B1、维生素B2、维生素B6、泛酸、牛磺酸,搅拌至完全溶解后,再依次加入异麦芽酮糖、针叶樱桃果汁、酸味调节剂、甜味剂、防腐剂、食用香精,补齐剩余纯化水,剪切搅拌至完全溶解,得混合液;
(5)静置,过400目筛网过滤;
(6)灭菌:巴氏杀菌,温度为85-90℃,时间为3-5min;
(7)灌装:无菌灌装,250ml/瓶,封口,灯检合格后包装,得成品。
步骤(2)与步骤(4)中纯化水的重量比为1.4-1.6:1。
本发明使用纯的左旋肉碱,较左旋肉碱酒石酸盐更易于吸收,通过先制备得到得胶原蛋白肽预混液,再向其中加入配方量左旋肉碱,降温后,依次加入维生素B1、维生素B2、维生素B6、泛酸、牛磺酸,搅拌至完全溶解后,再依次加入异麦芽酮糖、针叶樱桃果汁、酸味调节剂、甜味剂、防腐剂、食用香精,补齐剩余纯化水,剪切搅拌至完全溶解;通过采用特定的加料顺序将其做成液体制剂,使所有物质充分溶解,避免晶体析出,克服了纯的左旋肉碱吸湿性强的问题。
本发明具体食用方法:
用量为:1瓶/日;
孕妇、哺乳期妇女、儿童及婴儿不宜食用;
食用方法:直接饮用,或加入果汁中摇匀后饮用;
食用时间:运动日,运动前30-60min服用;非运动日,任何时间均可服用,空腹服用最佳。
注意事项:由于左旋肉碱促进脂肪代谢,服用后宜多补充水分。
与现有技术相比,本发明具有以下优点:
(1)本发明组分中添加高纯度左旋肉碱,生物利用度高,易于吸收;添加异麦芽酮糖与左旋肉碱搭配使用,可抑制脂肪的积累、促进脂肪的氧化分解,更易于减肥。此外,异麦芽酮糖口感柔和,对左旋肉碱的酸涩味具有良好的平衡调节作用。
(2)本发明复配维生素B1、维生素B2、维生素B6、泛酸、牛磺酸和异麦芽酮糖,各物质之间协同作用,共同促进脂肪消耗,提高运动能力;
(3)本发明配方中还添加一定量的胶原蛋白小分子肽,胶原蛋白肽不仅具有美容、美白的功效,在运动营养食品中也具有较好的作用:增加肌肉量和肌肉力量,缓解关节疼痛,延长运动时间,有助于运动疲劳的恢复等;本发明配以针叶樱桃果汁,有利于胶原蛋白的吸收与合成,可直接穿过肠壁进入血液循环,被人体吸收利用,具有增加美容和疲劳恢复的功效;解决了现有技术中胶原蛋白小分子肽吸收难的问题。

(5)本发明还提供一种制备方法,通过采用特定的加料顺序将其做成液体制剂,使所有物质充分溶解,避免晶体析出,克服了纯的左旋肉碱吸湿性强的问题,制成饮料形式,口感丰富,方便携带,易于服用。
具体实施方式
下面结合实施例对本发明做进一步说明。
实施例1
一种左旋肉碱饮料,100瓶(250ml/瓶)量包括以下成分:左旋肉碱120g、胶原蛋白肽200g、硝酸硫胺素0.25g、维生素B2 0.12g、维生素B6 0.15g、泛酸钙0.6g、牛磺酸40g、针叶樱桃果汁300g、异麦芽酮糖250g、柠檬酸25g、DL-苹果酸20g、甜菊糖苷3g、三氯蔗糖1.25g、山梨酸钾5g、苯甲酸钠2.5g、樱桃香精15g,余量为纯化水。
制备方法:
(1)称取左旋肉碱120g、胶原蛋白肽400g、硝酸硫胺素0.25g、维生素B2 0.12g、维生素B6 0.15g、泛酸钙0.6g、牛磺酸40g、针叶樱桃果汁200g、异麦芽酮糖250g、柠檬酸25g、DL-苹果酸20g、甜菊糖苷3g、三氯蔗糖1.25g、山梨酸钾5g、苯甲酸钠2.5g、樱桃香精15g,备用;
(2)胶原蛋白水合:向配料罐中加入15L纯化水和胶原蛋白肽,搅拌并升温至40-50℃,直至体系变透明澄清,得胶原蛋白肽预混液;
(3)向胶原蛋白肽预混液中加入配方量左旋肉碱,开启搅拌使左旋肉碱充分溶解;
(4)将体系降温至25℃,依次加入维生素B1、维生素B2、维生素B6、泛酸、牛磺酸,搅拌至完全溶解后,再依次加入异麦芽酮糖、针叶樱桃果汁、柠檬酸、DL-苹果酸、甜菊糖苷、三氯蔗糖、山梨酸钾、苯甲酸钠、樱桃香精,补齐纯化水至25L,剪切搅拌至完全溶解,得混合液
(5)静置,过滤(400目筛网);
(6)灭菌:巴氏杀菌,85-90℃,3-5min;
(7)灌装:无菌灌装,250ml/瓶,封口,灯检合格后包装,得成品。
实施例2
一种左旋肉碱饮料,100瓶(250ml/瓶)量包括以下成分:左旋肉碱150g、胶原蛋白肽150g、硝酸硫胺素0.25g、维生素B2 0.1g、维生素B6 0.14g、泛酸钙0.5g、牛磺酸30g、针叶樱桃果汁250g、异麦芽酮糖200g、柠檬酸20、磷酸20、甜菊糖苷2g、安赛蜜2.5g、ε-聚赖氨酸盐酸盐3.5g、柠檬香精20g,余量为纯化水。
制备方法:
(1)称取左旋肉碱150g、胶原蛋白肽300g、硝酸硫胺素0.25g、维生素B2 0.1g、维生素B6 0.14g、泛酸钙0.5g、牛磺酸30g、针叶樱桃果汁250g、异麦芽酮糖200g、柠檬酸20、磷酸20、甜菊糖苷2g、安赛蜜2.5g、ε-聚赖氨酸盐酸盐3.5g、菠萝香精20g,备用;
(2)胶原蛋白水合:向配料罐中加入15L纯化水和胶原蛋白肽,搅拌并升温至40-50℃,直至体系变透明澄清,得胶原蛋白肽预混液;
(3)向胶原蛋白肽预混液中加入配方量左旋肉碱,开启搅拌使左旋肉碱充分溶解;
(4)将体系降温至25℃,依次加入维生素B1、维生素B2、维生素B6、泛酸、牛磺酸,搅拌至完全溶解后,再依次加入异麦芽酮糖、针叶樱桃果汁、柠檬酸、磷酸、甜菊糖苷、安赛蜜、ε-聚赖氨酸盐酸盐、柠檬香精,补齐纯化水至25L,剪切搅拌至完全溶解,得混合液(5)静置,过滤(400目筛网);
(6)灭菌:巴氏杀菌,85-90℃,3-5min;
(7)灌装:无菌灌装,250ml/瓶,封口,灯检合格后包装,得成品。
实施例3
一种左旋肉碱饮料,100瓶(250ml/瓶)量包括以下成分:左旋肉碱200g、胶原蛋白肽100g、盐酸硫胺素0.2g、维生素B2 0.15g、维生素B6 0.14g、泛酸钙0.45g、牛磺酸40g、针叶樱桃果汁200g、异麦芽酮糖400g、磷酸50、甜菊糖苷3g、山梨酸钾6g、苯甲酸钠2g、芒果香精10g,余量为纯化水。
制备方法:
(1)称取左旋肉碱200g、胶原蛋白肽250g、盐酸硫胺素0.2g、维生素B2 0.15g、维生素B6 0.14g、泛酸钙0.45g、牛磺酸40g、针叶樱桃果汁200g、异麦芽酮糖400g、磷酸50、甜菊糖苷3g、山梨酸钾6g、苯甲酸钠2g、芒果香精10g,备用;
(2)胶原蛋白水合:向配料罐中加入15L纯化水和胶原蛋白肽,搅拌并升温至40-50℃,直至体系变透明澄清,得胶原蛋白肽预混液;
(3)向胶原蛋白肽预混液中加入配方量左旋肉碱,开启搅拌使左旋肉碱充分溶解;
(4)将体系降温至25℃,依次加入维生素B1、维生素B2、维生素B6、泛酸、牛磺酸,搅拌至完全溶解后,再依次加入异麦芽酮糖、针叶樱桃果汁、磷酸、甜菊糖苷、山梨酸钾、苯甲酸钠、芒果香精,补齐纯化水至25L,剪切搅拌至完全溶解,得混合液
(5)静置,过滤(400目筛网);
(6)灭菌:巴氏杀菌,85-90℃,3-5min;
(7)灌装:无菌灌装,250ml/瓶,封口,灯检合格后包装,得成品。
对实施例1-3所制备得到的左旋肉碱饮料的污染物限量进行测试,测试结果见表1。

本发明具体食用方法:
用量为:1瓶/日;

试食试验:
选取10名受试者(男女各5名),体检确定无严重肾、肝、心、血液***及精神疾病,受试前6个月未服用过减肥产品,进行试食试验。试食者根据本发明具体食用方法的要求服用本发明实施例1产品,运动日主要做竞走、慢跑、跳绳、骑自行车等有氧运动。连续试食40天。
结果:在试食前和试食后分别使用体重秤测量受试者的体重,用体脂卡尺测量受试者的皮下脂肪(7点法),以此计算体脂率。受试者平均减重5.20%,平均体脂下降了6.78%,具体数据见表3。

Claims (10)
1.一种左旋肉碱饮料,其特征在于:以250ml/瓶、100瓶的量计,包括以下成分:左旋肉碱100-200g、胶原蛋白肽100-200g、维生素B1 0.02-0.4g、维生素B2 0.02-0.2g、维生素B60.02-0.2g、泛酸0.08-0.7g、牛磺酸10-60g、异麦芽酮糖100-500g、针叶樱桃果汁50-500g、酸味调节剂10-80g、甜味剂2-10g、防腐剂2.5-10g、食用香精5-20g,余量为纯化水。
2.根据权利要求1所述的左旋肉碱饮料,其特征在于:左旋肉碱为左旋肉碱纯品,纯度在98%-102%。
3.根据权利要求1所述的左旋肉碱饮料,其特征在于:胶原蛋白肽选自以下物质的一种或两种:鱼胶原蛋白肽或骨胶原蛋白肽;胶原蛋白肽为胶原蛋白小分子肽,分子量为500道尔顿。
4.根据权利要求1所述的左旋肉碱饮料,其特征在于:维生素B1选自盐酸硫胺素或硝酸硫胺素中的一种或两种,维生素B2选自核黄素或核黄素5’-磷酸钠中的一种或两种,维生素B6选自盐酸吡哆醇,泛酸选自D-泛酸钙。
5.根据权利要求1所述的左旋肉碱饮料,其特征在于:酸味调节剂选自以下物质中的一种或多种:柠檬酸、苹果酸、磷酸、乳酸、L-抗坏血酸、食醋。
6.根据权利要求1所述的左旋肉碱饮料,其特征在于:甜味剂选自以下物质中的一种或多种:甜菊糖苷、罗汉果甜苷、索马甜、甘草甜素、阿斯巴甜、三氯蔗糖、安赛蜜、甜蜜素、糖精钠、纽甜、阿力甜。
7.根据权利要求1所述的左旋肉碱饮料,其特征在于:防腐剂选自以下物质中的一种或多种:山梨酸及其钾盐、苯甲酸及其钠盐、ε-聚赖氨酸盐酸盐、乳酸链球菌素。
8.根据权利要求1所述的左旋肉碱饮料,其特征在于:食用香精选自以下物质中的一种或多种:樱桃香精、橙香精、柠檬香精、橘子香精、西柚香精、菠萝香精、芒果香精、草莓香精、树莓香精、蓝莓香精、苹果香精、水蜜桃香精、西瓜香精、葡萄香精、香蕉香精、荔枝香精、番石榴香精、火龙果香精、猕猴桃香精、黑加仑香精。
9.一种权利要求1-8任一所述的左旋肉碱饮料的制备方法,其特征在于:包括以下步骤:
(1)按质量百分比称取左旋肉碱、胶原蛋白肽、维生素B1、维生素B2、维生素B6、泛酸、牛磺酸、异麦芽酮糖、针叶樱桃果汁、酸味调节剂、甜味剂、防腐剂、食用香精,备用;
(2)胶原蛋白水合:向配料罐中加入适量纯化水和配方量胶原蛋白肽,搅拌并升温至40-50℃,直至体系变透明澄清,得胶原蛋白肽预混液;
(3)向胶原蛋白肽预混液中加入配方量左旋肉碱,开启搅拌使左旋肉碱充分溶解;
(4)将体系降温至25℃,依次加入维生素B1、维生素B2、维生素B6、泛酸、牛磺酸,搅拌至完全溶解后,再依次加入异麦芽酮糖、针叶樱桃果汁、酸味调节剂、甜味剂、防腐剂、食用香精,补齐剩余纯化水,剪切搅拌至完全溶解,得混合液;
(5)静置,过400目筛网过滤;
(6)灭菌:巴氏杀菌,温度为85-90℃,时间为3-5min;
(7)灌装:无菌灌装,250ml/瓶,封口,灯检合格后包装,得成品。
10.根据权利要求9所述的左旋肉碱饮料的制备方法,其特征在于:步骤(2)与步骤(4)中纯化水的重量比为1.4-1.6:1。
