背景技术
雪莲果,在中国四川被称作“ 万根苕”,属菊科,是一种菊科多年生草本植物,菊薯属植物,故又称为菊薯,原产自南美洲的安第斯山脉,是当地印第安人的一种传统根茎食品,已有500年历史。安地斯山脉的居民栽种这种植物做为根茎类蔬菜食用,菊薯的块根含有丰富的水份与果寡糖,尝起来即甜又脆,也可以当做水果食用。此外专家还研究发现雪莲果具有非常强的药用价值,特别是对于男性保健有显著作用。雪莲果含有较高的钙、镁、铁、锌、钾、硒等及微量元素。可以调理血液、降低血糖、血脂和胆固醇,预防和治疗高血压和糖尿病,对老年人心脑血管病有明显的保健作用,雪莲果的果寡糖含量是所有植物中最高的,可帮助消化,调理肠胃,治疗下痢,使排便通畅,是肠胃病的克星,消炎利尿,保持尿路畅通,减少结石和致癌毒素,清肝解毒,能有效预防面部暗疮斑点,是养颜美容的天然保健果品。

一种雪莲果功能性饮料及其制备方法,其特征在于原料按以下重量份混合:
雪莲果提取液40-70份
白砂糖20-50份
柠檬酸1-2份
木糖醇5-8份
羧甲基纤维素钠5-8份
黄原胶0.5-1份
加工工艺如下:
a.预处理:选择新鲜、成熟、无病虫害的雪莲果为原料,洗净,去皮,切成5mm左右厚度的薄片。
b.热烫:90℃蒸馏水热烫,处理时间1min,用流水迅速冷却。
c.护色:选择维生素C和柠檬酸为护色剂,配制不同浓度的护色液,将雪莲果果片在护色液中浸泡30min。
d.雪莲果低聚糖提取:榨汁后雪莲果汁50ml,加人4倍体积的纯净水,在40℃条件下,提取3h,制备含有雪莲果低聚果糖的提取液。
e.过滤:先用纱布初滤,然后再进行精滤,得雪莲果果汁。
f.杀菌:饮料灌装后,拧紧瓶盖,在沸水中杀菌5min,迅速冷却,低温保存。
所述步骤b中采用热烫是因为热烫工艺可以软化植物细胞壁,促进内容物的溶出,并能降低酚酶的活性,减轻褐变程度。
所述步骤e中过滤用100目的纱布初滤,然后用300目的纱布精滤。
