Abstract
本发明涉及一种特色米制品的制备技术领域,具体涉及到一种南瓜米的制备方法。其中包括:选用普通大米为原料,然后同时将大米分别打成米粉及米浆;选用南瓜为原料,接着将南瓜切成丁并和米浆打成南瓜浆,再用米粉与南瓜浆混合起来成为泥状混合物料,然后用米粒成型机将泥状混合物料压制成米粒型形状的南瓜米,最后将南瓜米烘干至米粒含水量在10~12%而得成品南瓜米。通过实施本发明,将大米和南瓜融为一体,米粒金黄透亮,可激起人们的食欲,米中有浓郁的南瓜味,且味甜,适口性特别好;使普通大米和南瓜变成营养富极的保健米。食其米,不但使人们在日常进食中得到进补和保健。此外,大米和南瓜由此大幅度增值。

技术领域
本发明涉及一种特色米制品的制备技术领域,具体涉及到一种南瓜米的制备方法。
背景技术
南瓜是葫芦科南瓜属的植物,在中国各地都有栽种。南瓜含有淀粉、蛋白质、胡萝卜素、维生素B、维生素C和钙、磷等成分,营养丰富,为农村人经常食用的瓜菜,并日益受到城市人的重视。
从有关文献中获悉。南瓜含有丰富的胡萝卜素和维生素C,可以健脾,预防胃炎,防治夜盲症,护肝,使皮肤变得细嫩,并有中和致癌物质的作用。黄色果蔬还富含两种维生素A和D;维生素A能保护胃肠黏膜,防止胃炎、胃溃疡等疾患发生;维生素D有促进钙、磷两种矿物元素吸收的作用,进而收到壮骨强筋之功,对于儿童佝偻病、青少年近视、中老年骨质疏松症等常见病有一定预防之效。南瓜不仅有较高的食用价值,而且有着不可忽视的食疗作用。据《滇南本草》载:南瓜性温,味甘无毒,入脾、胃二经,能润肺益气,化痰排脓,驱虫解毒,治咳止喘,疗肺痈便秘,并有利尿、美容等作用。国内外医学专家、学者研究实验表明,食南瓜,还有治疗***肥大、预防***癌、防治动脉硬化与胃粘膜溃疡、化结石作用。
另外,南瓜可以使肝、肾功能得到恢复以及再生的能力,因为南瓜可以消除致癌物质亚硝酸的突变作用。南瓜中含有丰富的锌,参与人体内核酸、蛋白质的合成是肾上腺皮质激素固有成分,为人体生长发育的重要物质。南瓜中对人体的有益成分有:多糖、氨基酸、活性蛋白、胡萝卜素及多种微量元素等。
其中,各种成分的功用如下:
(1)多糖类:南瓜多糖是一种非特异性免疫增强剂,能提高机体免疫功能,促进细胞因子生成,通过活化补体等途径对免疫***发挥多方面的调节功能。
(2)类胡罗卜素:南瓜中丰富的类胡萝卜素在机体内可转化成具有重要生理功能的维生素A,从而对上皮组织的生长分化、维持正常视觉、促进骨骼的发育具有重要生理功能。
(3)矿质元素:南瓜中高钙、高钾、低钠,特别适合中老年人和高血压患者,有利于预防骨质疏松和高血压。此外,还含有磷、镁、铁、铜、锰、铬、硼等元素。
(4)氨基酸和活性蛋白:南瓜中含有人体所需的多种氨基酸,其中赖氨酸、亮氨酸、异亮氨酸、苯丙氨酸、苏氨酸等含量较高。此外,南瓜中的抗坏血酸氧化酶基因型与烟草相同,但活性明显高于烟草,表明了在南瓜中免疫活性蛋白的含量较高。
(5)脂类物质:研究发现,在南瓜种子中的脂类物质对泌尿***疾病及***增生具有良好的治疗和预防作用。
(6)淀粉:淀粉进入人体会转化为葡萄糖,而且南瓜中的淀粉有一定的其他营养元素,能增强人体的抵抗力。
(7)蛋白质:蛋白质是构成组织细胞的主要材料,蛋白质具有调节渗透压的功效,因为正常人的血浆与组织液之间的水不停地交换,但却保持着平衡,如果人体长期缺乏蛋白质,那么血浆蛋白的含量也会降低,血液内的水分会渗入周围的组织,这样就会造成营养不良性水肿了。
(8)维生素:维生素是人和动物维持正常的生理功能而必须从食物中获得的一类微量有机物质,在人体的生长、代谢、发育过程中发挥着重要的作用。如果长期缺乏某种维生素,会引起生理机能障碍而发生某种疾病,南瓜中就富含有维生素B、维生素C。
(9)矿质元素:南瓜中含有的多种矿质元素,如钙、钾、磷、镁等,都有预防骨质疏松和高血压,特别适合于中老年人与高血压患者。
目前,南瓜出了当做蔬菜来食用,人们还将其加工成有南瓜饭、南瓜饼、南瓜馒头等。

本发明的目的就是提供全新的一种南瓜米的制备方法。具体包括:选用普通大米为原料,然后同时将大米分别打成米粉及米浆;选用南瓜为原料,接着将南瓜切成丁并和米浆打成南瓜浆,再用米粉与南瓜浆混合起来成为泥状混合物料,然后用米粒成型机将泥状混合物料压制成米粒型形状的南瓜米,最后将南瓜米烘干至米粒含水量在10~12%而得成品南瓜米。通过实施本发明,将大米和南瓜融为一体,米粒金黄透亮,可激起人们的食欲,米中有浓郁的南瓜味,且味甜,适口性特别好;使普通大米和南瓜变成营养富极的保健米。食其米,不但使人们在日常进食中得到进补和保健。此外,大米和南瓜由此大幅度增值。
本发明是通过以下技术方案来实现的:
一种南瓜米,技术方案中是选用普通大米为原料,然后同时将大米分别打成米粉及米浆;选用南瓜为原料,接着将南瓜切成丁并和米浆打成南瓜浆,再用米粉与南瓜浆混合起来成为泥状混合物料,然后用米粒成型机将泥状混合物料压制成米粒型形状的南瓜米,最后将南瓜米烘干至米粒含水量在10~12%而得成品南瓜米。
具体包括如下步骤:
1、大米选料:选用无变质、无霉变、色泽正常的大米为原料。
2、制备米粉:将大米打成能过200目粉末状的米粉备用。
3、制备米浆:用比大米多3~4倍的水将大米浸泡12~15个小时,然后打成米浆备用。
4、南瓜选料及处理:选择无病虫害及新鲜的嫩南瓜或是老南瓜为原料,接着将南瓜去皮并切成丁,然后用上述米浆与南瓜按重量比是2∶1的比例混合在一起,最后将南瓜打成浆汁备用。
5、调料:用米粉拌入南瓜浆使之成为泥状混合物料,并将混合物料的含水量调整到35~40%。
6、成型:用米粒成型机将泥状混合物料压制成米粒型形状的南瓜米。
7、烘干:将南瓜米烘干至米粒含水量在10~12%而得成品南瓜米。
8、包装:将成品南瓜米按量包装起来得商品南瓜米。
本发明既有如下优点:
1、本发明所提出的南瓜米制备方法构思新颖,工艺方法措施独特,制备工艺简单、容易实施。
2、实施本发明所用的主要原料——大米,其原料资源广泛,价格低廉。
3、实施本发明所用的主要原料——南瓜,其原料资源同样十分广泛,而且价格低廉。
4、通过实施本发明,将大米和南瓜融为一体,补充了大米本身所缺乏的营养元素;米粒金黄透亮,可激起人们的食欲,米中有浓郁的南瓜味,且味甜,适口性特别好。
5、通过实施本发明,将大米和南瓜融为一体,使普通大米和南瓜变成营养富极的保健米。食其米,不但使人们在日常进食中得到进补和保健。
6、通过实施本发明,南瓜和大米也由此大幅度增值,效益异常显著。
具体实施方式
下面结合实施例对本发明的方法进一步说明。
一种南瓜米,技术方案中是选用普通大米为原料,然后同时将大米分别打成米粉及米浆;选用南瓜为原料,接着将南瓜切成丁并和米浆打成南瓜浆,再用米粉与南瓜浆混合起来成为泥状混合物料,然后用米粒成型机将泥状混合物料压制成米粒型形状的南瓜米,最后将南瓜米烘干至米粒含水量在10~12%而得成品南瓜米。
实施例1:

Claims (2)
1.一种南瓜米,其特征在于:选用普通大米为原料,然后同时将大米分别打成米粉及米浆;选用南瓜为原料,接着将南瓜切成丁并和米浆打成南瓜浆,再用米粉与南瓜浆混合起来成为泥状混合物料,然后用米粒成型机将泥状混合物料压制成米粒型形状的南瓜米,最后将南瓜米烘干至米粒含水量在10~12%而得成品南瓜米;
具体包括如下步骤:

2.根据权利要求1中所述的一种南瓜米,其特征在于:所述的南瓜可以是嫩瓜,也可以是老瓜。
