本发明属于食品保健技术领域,尤其是涉及一种适合于特殊群体航天员使用的营养餐制剂。
背景技术
航天员是作为一种特殊的人群,在航天飞行过程中,由于受辐射、微重力、磁场及昼夜节律变化的影响,造成体内代谢及生理状态紊乱,具体为航天员消化功能紊乱、免疫功能下降,直接影响航天员的工作与健康。
食疗又称食治,是在中医理论指导下利用食物的特性来调节机体功能,使其获得健康或愈疾防病的一种方法。中医很早就认识到食物不仅能营养而且还能疗疾祛病。如近代医家张锡纯在《医学衷中参西录》中曾指出:食物“病人服之、不但疗病、并可充饥”。五谷杂粮即为很好的食疗原料,其含有丰富全面的营养物质,具有有极好的养生保健作用,尤其按照中医学的理论,补肾很重要,黑色食物就是一种有效的补肾食品,黑色食物能够补肾,肾中精气充足人体就强壮,如果肾气不足人体就虚弱,中医认为补肾非常重要,黑色食品恰恰有补肾中精气的作用,多吃黑色食品可以增加体质、预防疾病、延缓衰老、提交记忆力,黑色食品对人们的健康非常重要。
因此本发明所要结局的技术问题在于,利用各种五谷杂粮的营养特性进行科学配比,完整保留其有效成分,其保健功效可调节特定人群的机体功能,但不以治疗为目的。
发明内容
本发明的目的是提供了一种营养丰富、口感佳、易吸收、增强机体耐力的适合于航天员食用的黑色营养餐制剂,同时该制剂还可以作为部队、航海任务以及登山、徒步旅行等野外活动用,也可以作为运动员、健身爱好者的首选食品。
为实现上述目的,本发明采用如下技术方案,一种适合于航天员食用的黑色营养餐制剂,其特征在于,所述黑色营养餐制剂由以下组分配方组成:
黑米粉,10%-30%;
黑糯米粉,10%-30%;
黑豆粉,5%-25%;
黑麦粉,5%-25%;
黑芝麻粉,5%-20%;
黑苦荞粉,5%-20%;
黑小米粉,5%-20%;
黑玉米粉,5%-10%;
豆奶粉,5%-10%;
全脂乳粉,5%-10%;
麦芽糊精,5%-10%;
木糖醇,1%-5%。
优选地,所述黑色营养餐制剂由以下组分配方组成:黑米粉16%、黑糯米粉13%、黑豆粉12%、黑麦粉12%、黑芝麻粉10%、黑苦荞粉8%、黑小米粉6%、黑玉米粉6%、豆奶粉5%、全脂乳粉5%、麦芽糊精5%、木糖醇2%。
优选地,所述黑米粉为黑大米粉或黑糙米粉。
本发明所述的营养制剂可用于制备提高免疫力、降低血脂和改善人体代谢的食品或保健品。
根据记载和现代研究证明,本发明的功能性食品各组分的功能是:
(1)黑米:性平,味甘,归脾、胃经;
中医认为黑米有显著的药用价值,古农医书记载:黑米“滋阴补肾, 健身暖胃,明目活血”,“清肝润肠”,“滑湿益精,补肺缓筋”等功效;可入药入膳,对头昏目眩、贫血白发、腰膝酸软、夜盲耳鸣症、疗效尤佳。长期食用可延年益寿。因此,人们俗称 :“药米”、“长寿米”。由于它最适于孕妇、产妇等补血之用,又称“月米”、“补血米”等。历代帝王也把它作为宫廷养生珍品,称为“贡米”。现代医学证实,黑米具有滋阴补肾,健脾暖肝、补益脾胃,益气活血,养肝明目等疗效。经常食用黑米,有利于防治头昏、目眩、贫血、白发、眼疾、腰膝酸软、肺燥咳嗽、大便秘结、小便不利、肾虚水肿、食欲不振、脾胃虚弱等症。由于黑米所含营养成分多聚集在黑色皮层,故不宜精加工,以食用糙米或标准三等米为宜。按照营养专家黎黍匀研究,黑米的生命力指数为7.7021,食物防病指数为36.05,具有较强的保健功能。
黑米所含锰、锌、铜等无机盐大都比大米高1-3倍;更含有大米所缺乏的维生素C、叶绿素、花青素、胡萝卜素及强心甙等特殊成分,因而黑米比普通大米更具营养。多食黑米具有开胃益中,健脾暖肝,明目活血,滑涩补精之功,对于少年白发、妇女产后虚弱,病后体虚以及贫血、肾虚均有很好的补养作用。
(2)黑糯米:被誉为“黑珍珠”,稻米类植物,是带有***的种皮的大米,因为米质有糯性,所以又称为血糯米,黑糯米的营养价值很高,除含蛋白质、脂肪、碳水化合物外,还含丰富的钙、磷、铁、维生素B1、B2等。黑糯米有补血养气功效,常被人们称为“补血米”、“长寿米”。用黑糯米煮的粥,色泽呈咖啡色,吃起来浓香可口。据有关科研部门在黑糯米产区调查,食用黑糯米,对慢性病患者、恢复期病人、孕妇、幼儿、身体虚弱者都有滋补作用。以黑糯米为主要原料制成的饮料、食品,更有明显的医疗效果。
(3)黑豆:具有高蛋白、低热量的特性,根据中国科学家的一项研究发现,黑豆皮提取物能够提高机体对铁元素的吸收,带皮食用黑豆能够改善贫血症状。
(4)黑麦:富有营养,含淀粉、脂肪和蛋白质、膳食纤维、维生素B和磷、钾等。黑麦富含蛋白质和矿物质,黑麦蛋白质含量约为17%左右,其组成氨基酸含量普遍高于普通小麦,其中苯丙氨酸约是普通小麦6倍多,色氨酸含量更约是普通小麦的15倍。黑麦矿物质含量也很丰富,而且普遍高于普通小麦,含钙量是普通小麦的4倍,铁是其12倍,镁更是其15倍,另外还富含硒元素和碘元素,因此黑麦也被称为补钙麦、补血麦和富硒麦等。
膳食纤维被誉为“第七大营养素”,对于人体健康十分有益。黑麦的膳食纤维具有两大特点,一方面,黑麦膳食纤维的含量很高,是普通浅色小麦的3倍左右,而且也远超过人们常吃的食物中膳食纤维含量;另一方面,在健肠胃、助消化和防抗癌等作用上,黑麦的膳食纤维也是高居所有谷物膳食纤维之首,同时远远超过水果和蔬菜膳食纤维。
木酚素,又称木脂素,是组成纤维类复合物的一类多酚化合物,也是植物***的一种。黑麦中木酚素含量较高,而且同时包含开环异落叶松树脂酚和乌台树脂酚两种成分,这是一个与普通小麦的重要区别点,因为普通小麦虽然也含有一定量木酚素,但其中成分仅为开环异落叶松树脂酚。大量研究证实,开环异落叶松树脂酚和乌台树脂酚在人体内可以转变成肠内酯和肠二醇,进而发挥非常良好的防癌抗癌作用,尤其是对于***癌、大肠癌和乳腺癌的防抗效果非常好。
阿魏酸,具有很强抗氧化活性,因为阿魏酸对过氧化氢、超氧自由基、羟基自由基和过氧化亚硝基等都有强大的清除作用,另一方面还可以抑制产生自由基的酶,促进抗氧化酶的产生。同时,阿魏酸还能保护体内细胞免受过氧化物的侵袭,尤其是羟基自由基和一氧化氮造成的氧化损伤。
烷基间苯二酚(ARs)由国外学者温克特等首次在麦类中发现的一类特殊的酚类化合物。在所研究的诸多谷物里,仅黑麦及小麦等麦类中含有大量的ARs。ARs具有多种重要的生物活性作用,如抗细菌(革兰氏阳性菌)、抗肿瘤、抗氧化和稳定细胞膜等,还可以作为食用全麦食品的生物标记,用于测定血浆ARs成分可以用来鉴别全麦食品。
黑麦中还含有丰富的益生元成分,尤其是黑麦麸,含有极为丰富的果聚糖、戊聚糖、β-葡聚糖和***木聚糖等,这些都属于难消化碳水化合物,虽然这些成分难以被人体消化,但却具有非常重要的益生元特性,调节肠道菌群平衡,降低血中胆固醇、降低餐后血糖的作用,同时还能增加胃肠到的蠕动,促进有害物质排出,对预防肠道疾病具有良好的作用。
(5)黑芝麻:又叫胡麻、油麻、乌麻子,其味甘,性平;对于养血,润肠,益精血,补肝肾,头晕眼花,须发早白、病后脱发、耳鸣耳聋、肠燥便秘有极佳的治疗功效。黑芝麻含有大量的脂肪和蛋白质,还含有糖类、维生素A、维生素E、卵磷脂、钙、铁、铬等营养成分。有健胃、保肝、促进红细胞生长的作用,同时可以增加体内黑色素,有利于头发生长。
(6)黑苦荞:不仅富含其他粮食作物中几乎没有的芦丁(VP)及硒元素(Se),同时还含有18种氨基酸、9种脂肪酸(VF)、丰富的膳食纤维、叶绿素、粗蛋白、碳水化合物、矿物质及微量元素,含量合理,并且不含糖和胆固醇。其营养成份更是远远优于大米、小麦、玉米、大豆和肉类等普通食物,含有丰富的维生素及矿物质,还有丰富的膳食纤维,属纯天然珍贵营养食品。同时可以预防肥胖、宽肠健胃、健脾养胃,有止虚汗之功效,对脾胃虚寒,食欲不佳,腹胀腹泻有一定缓解作用;还含有其它谷物几乎不含有的维生素P及硒元素,维生素P可以软化血管,对高血压、高血糖、高血脂都有辅助调节的作用。并被称为“抗癌之王”。降气
(7)黑小米:药用功效独特,中医学认为,小米味甘,性微寒,有补虚损、健脾胃、清虚热、安眠等功效。黑小米是很好的蛋白质营养源,蛋白质的氨基酸构成中色氨酸含量高,色氨酸在人体内通过生物转化生成一类重要的物质,发挥着调节睡眠、情绪及生物节律等重要的生理作用,食用色氨酸含量丰富的食物可起到催眠的作用,同时小米蛋白是一种低过敏性蛋白,非常安全。
黑小米富含多种维生素,其中维生素A和B1含量最高。缺乏维生素A 会引起皮肤干燥、呼吸道感染、眼部干燥等症状,而维生素B1缺乏则可能出现体虚疲倦、便秘等。另有研究发现,补充维生素B1对于预防和缓解心肌病具有显著疗效。
黑小米中矿物质含量丰富,尤其是锌元素含量高,在常见的黑色食品中仅次于黑麦。另外,黑小米中镁元素和钾元素含量也很丰富,同时还富含被誉为“抗癌之王”的硒元素。
(8)黑玉米:微量元素含量高,是其它谷物的2-8倍,赖氨酸含量高达0.45%,为高赖作物。黑玉米含有18种以上氨基酸,其八种必需氨基酸组成比例与含量完全符合***粮农组织与世界卫生组织所提出的"理想蛋白质"模式,故其营养价值可与动物性蛋白质相媲美,是素食者的理想食品。黑玉米几种微量元素含量远远高于其它谷类作物,尤其是钾含量高达6310 ~9050mg/kg,是其它谷物的3~8倍,它可调节体液平衡抗疲劳,具有预防和治疗高血压、脑血栓、维护心脏功能、有助于调节情感、放松情绪、稳定心理。黑玉米还是少有的碱性谷物,有减肥功能。
黑玉米含铁高,是补血食品。
黑玉米的锌含量是其它谷物的3倍,是很好的补锌食品,锌在人体内参与核酸,蛋白质的合成和碳水化合物、维生素a的代谢,能维护胰腺、性腺、脑下垂体,消化***和皮肤的正常生理功能。
黑玉米含有丰富的钙、磷,是其它谷物的8-10倍。钙、磷的主要生理功能其构成人体骨骼和牙齿。钙能维持神经、肌肉正常的兴奋性,是促进血液凝固,肌肉收缩与松弛及正常神经传导的基础,若人体内缺乏可导致佝偻病,软骨病、骨质疏松等症。
黑玉米的黑色素含量高,黑色素具有激发人体细胞活性,降低血清胆固醇,对防治动脉硬化、高血压等心血管疾病有积极作用、能提高人体免疫力、补肾养颜,有很好的保健功效。
本发明有益效果:
本发明充分利用各五谷杂粮营养特性,以纯食材原料为主,进行科学配比,无任何添加剂,绿色健康,食用安全放心,不仅营养丰富、香浓甘醇,同时通过对各五谷杂粮的科学配比,调节人体免疫机制,从而实现健脾暖肝、补虚强体、养肝强心、明目安神、润肺止渴、补血活血、消除疲劳、护肤美容等保健功效,尤其具有显著的通便安眠补肾功效;非常适合航天员的特殊人群,也可用于部队、航海任务以及登山、徒步旅行等野外活动用,也可以作为运动员、健身爱好者的首选食品。

实施例1:
一种适合于航天员食用的黑色营养餐制剂,所述黑色营养餐制剂由以下组分配方组成:黑米粉16%、黑糯米粉13%、黑豆粉12%、黑麦粉12%、黑芝麻粉10%、黑苦荞粉8%、黑小米粉6%、黑玉米粉6%、豆奶粉5%、全脂乳粉5%、麦芽糊精5%、木糖醇2%。
上述黑色营养制剂的制备方法,包括如下步骤:
①原料挑选:对所有五谷原料进行除杂处理并精选;
②原料预处理:将经过除杂并精选的五谷原料进行独立地低温(100~120℃)烘焙处理—液氮速冻—原料粉碎,备用;
③组分配制:将预处理后的五谷原料和豆奶粉、全脂乳粉、麦芽糊精、木糖醇按照重量百分比,即黑米粉16%、黑糯米粉13%、黑豆粉12%、黑麦粉12%、黑芝麻粉10%、黑苦荞粉8%、黑小米粉6%、黑玉米粉6%、豆奶粉5%、全脂乳粉5%、麦芽糊精5%、木糖醇2%进行科学配制,真空条件下混合均匀;
④分装:将步骤③中获得的混合物分装成包,储存,即得到一种黑色营养制剂。
实施例2:
一种适合于航天员食用的黑色营养餐制剂,其特征在于,所述黑色营养餐制剂由以下组分配方组成:黑糙米粉16%、黑糯米粉13%、黑豆粉12%、黑麦粉12%、黑芝麻粉10%、黑苦荞粉8%、黑小米粉6%、黑玉米粉6%、豆奶粉5%、全脂乳粉5%、麦芽糊精5%、木糖醇2%。
上述黑色营养制剂的制备方法,包括如下步骤:
①原料挑选:对所有五谷原料进行除杂处理并精选;
②原料预处理:将经过除杂并精选的五谷原料进行独立地低温(100~120℃)烘焙处理—液氮速冻—原料粉碎,备用;

④分装:将步骤③中获得的混合物分装成包,储存,即得到一种黑色营养制剂。
本发明所述的复合制剂可用于制备提高免疫力、降低血脂和改善人体代谢的食品或保健品。

Claims (5)
1.一种适合于航天员食用的黑色营养餐制剂,其特征在于,所述黑色营养餐制剂由以下组分配方组成:
黑米粉,10%-30%;
黑糯米粉,10%-30%;
黑豆粉,5%-25%;
黑麦粉,5%-25%;
黑芝麻粉,5%-20%;
黑苦荞粉,5%-20%;
黑小米粉,5%-20%;
黑玉米粉,5%-10%;
豆奶粉,5%-10%;
全脂乳粉,5%-10%;
麦芽糊精,5%-10%;
木糖醇,1%-5%。
2.根据权利要求1所述的一种适合于航天员食用的黑色营养餐制剂,其特征在于:所述黑色营养餐制剂由以下组分配方组成:黑米粉16%、黑糯米粉13%、黑豆粉12%、黑麦粉12%、黑芝麻粉10%、黑苦荞粉8%、黑小米粉6%、黑玉米粉6%、豆奶粉5%、全脂乳粉5%、麦芽糊精5%、木糖醇2%。
3.根据权利要求1所述的一种适合于航天员食用的黑色营养餐制剂,其特征在于:所述黑米粉为黑大米粉或黑糙米粉。
4.根据权利要求1或2所述的一种适合于航天员食用的黑色营养餐制剂的制备方法,其特征在于:包括如下步骤:
原料挑选:对所有五谷原料进行除杂处理并精选;
原料预处理:将经过除杂并精选的五谷原料进行独立地低温(100~120℃)烘焙处理—液氮速冻—原料粉碎,备用;
组分配制:将预处理后的五谷原料和豆奶粉、全脂乳粉、麦芽糊精、木糖醇按照重量百分比,即黑米粉16%、黑糯米粉13%、黑豆粉12%、黑麦粉12%、黑芝麻粉10%、黑苦荞粉8%、黑小米粉6%、黑玉米粉6%、豆奶粉5%、全脂乳粉5%、麦芽糊精5%、木糖醇2%进行科学配制,真空条件下混合均匀;
④分装:将步骤③中获得的混合物分装成包,储存,即得到一种黑色营养制剂。
5.根据权利要求1或2所述的一种适合于航天员食用的黑色营养餐制剂的应用,其特征在于:所述的制剂可用于制备提高免疫力、降低血脂和改善人体代谢的食品或保健品。
