Abstract
本发明涉及食品制备技术领域,具体的讲涉及一种多功能牡丹籽粕蛋白代餐粉,包括下述组分:牡丹籽粕分离蛋白、牡丹多酚、水溶性膳食纤维、浓缩乳清蛋白、大米蛋白、小麦蛋白、燕麦纤维、低聚木糖、维生素、麦芽糖醇、麦芽糊精、β‑环状糊精碳酸钙、B族维生素、维生素C、维生素E、烟酸、叶酸、钠、钾、镁、铁、锌、食品用香料。本发明的有益效果在于,本发明的代餐粉,不仅为人体提供了全面均衡的营养,具有热量低,富含膳食纤维,含有补充人体维持正常功能必需的蛋白质、氨基酸、维生素和微量元素,而且还具有多种保健功能和药理效应,如降血脂、降血压、降血糖、减肥等功效。

技术领域
本发明涉及食品制备技术领域,具体的讲涉及一种多功能牡丹籽粕蛋白代餐粉及其制备方法。
背景技术
随着社会的发展,生活节奏的加快,传统饮食结构和方式的改变导致的疾病已成为二十一世纪危害人类健康的主要问题。由于我国社会经济发展和物质生活水平不断提升,中国居民的饮食质量也得到了很大提高,人们的饮食***衡。能量过剩是导致肥胖的主要原因之一,以致近年肥胖者的人数日趋增多,而由肥胖带来的健康问题己不容忽视。据研究,肥胖至少与数十种疾病有关,如糖尿病、高脂血症、动脉硬化、冠心病、高血压等已经成为困扰全球身心健康的慢性非传染性疾病。虽然我国近几年也开始关注营养代餐的研究,但是在我国营养代餐的概念和认知度仍然处于较低的水平。
目前对我国对植物蛋白的研究和利用,还多是局限于大豆饼粕,但是大豆蛋白大部分原料已经发生了转基因改变,考虑到选用最适合人体吸收的非转基因分离蛋白对人体的重要性,我们开发了牡丹籽粕为蛋白提取原料的牡丹籽粕蛋白。目前市面上的牡丹籽粕提取产品利用的少,对牡丹籽粕蛋白提取研究也少,而牡丹籽蛋白是一种氨基酸组成丰富的植物蛋白,开发牡丹籽蛋白可以缓解我国植物蛋白紧缺的现状,丰富我国植物蛋白的资源。
发明内容
因此本发明提出一种多功能牡丹籽粕蛋白代餐粉及其制备方法,用来解决上述背景技术中的问题。
本发明的技术方案是这样实现的:一种多功能牡丹籽粕蛋白代餐粉,包括下述重量份数的组分:牡丹籽粕蛋白粉300-400g、牡丹多酚10-20g、水溶性膳食纤维50-80g、燕麦粉1100-1300g、乳清蛋白500-650g、燕麦纤维50-100g、低聚木糖80-120g、麦芽糖醇50-100g、麦芽糊精50-100g、β-环状糊精10-30g、碳酸钙2-5g、B族维生素0.1-0.5g、维生素C0.1-0.5g、维生素E 0.1-0.5g、烟酸0.5g、叶酸0.5g、钠0.3-0.5g、钾0.3-0.5g、镁0.3-0.5g、铁0.3-0.5g、锌0.3-0.5g。
进一步地,所述牡丹籽粕蛋白粉提取方法:牡丹籽或牡丹籽粕中经三步酶解得到钟酶解液,钟酶解液离心后得到游离油、乳化层、蛋白水解液和渣,其中游离油即为牡丹籽油;蛋白水解液经等电点沉淀后冷冻干燥的到牡丹籽蛋白粉。
一种多功能牡丹籽粕蛋白代餐粉的制备方法:
步骤(1),将以上物料按性状、按照提取工艺分为两类,第一类为水提取后去渣,干燥、粉碎;第二类为水提取后不经去渣处理,与物料一同干燥;
步骤(2)粉碎,粗粉碎至80-100目,然后利用冲击磨粉碎至纳米级,平均粒径为200-400nm;
步骤(3)将步骤1-2得到的物料混合均匀,灭菌,包装。
进一步地,所述步骤(3)中将物料用粉末包装机进行灌装,每包25g,装样量差异不超过±5%,用聚酯/铝/聚乙烯药品包装用复合膜对混合物进行包装。
通过上述公开内容,本发明的有益效果为:本发明的营养代餐粉营养丰富,饱腹感强,且避免了挤压膨化等高温处理带来的营养流失和易上火的特点,口感顺滑,香气浓郁,低脂低热量,长期食用也不会出现肠道不适或者退化的现象。
本发明的代餐粉,通过药食同源类中药材的添加,能够避免少食带来的免疫力下降、体能下降、疲劳无力的问题,能够提升免疫力,增强耐力和抗疲劳能力。本发明所述的代餐粉,有效调节消化速度,具有明显的降血糖和减肥功效,适合作为代餐长期食用。通过原料科学选择和配比,均匀调配蛋白质、碳水化合物以及脂肪比例,富含膳食纤维,满足人体维持自身功能所必须的蛋白质、氨基酸、维生素和微量元素,在实现减肥降脂的同时还能够达到综合营养补充的效果。

本发明提出一种多功能牡丹籽粕蛋白代餐粉及其制备方法。
一种多功能牡丹籽粕蛋白代餐粉,包括下述组分:牡丹籽粕蛋白粉、牡丹多酚、水溶性膳食纤维、燕麦粉、乳清蛋白、燕麦纤维、低聚木糖、麦芽糖醇、麦芽糊精、β-环状糊精、碳酸钙、B族维生素、维生素C、维生素E、烟酸、叶酸、钠、钾、镁、铁、锌。
牡丹籽粕蛋白粉提取方法:牡丹籽或牡丹籽粕中经三步酶解得到钟酶解液,钟酶解液离心后得到游离油、乳化层、蛋白水解液和渣,其中游离油即为牡丹籽油;蛋白水解液经等电点沉淀后冷冻干燥的到牡丹籽蛋白粉。
该多功能牡丹籽粕蛋白代餐粉的制备方法如下:
步骤(1),将以上物料按性状、按照提取工艺分为两类,第一类为水提取后去渣,干燥、粉碎;第二类为水提取后不经去渣处理,与物料一同干燥;

实施例1
一种多功能牡丹籽粕蛋白代餐粉,包括下述重量份数的组分:牡丹籽粕蛋白粉300g、牡丹多酚10g、水溶性膳食纤维50g、燕麦粉1100g、乳清蛋白500g、燕麦纤维50g、低聚木糖80g、麦芽糖醇50g、麦芽糊精50g、β-环状糊精10g、碳酸钙2g、B族维生素0.1g、维生素C0.1g、维生素E 0.1g、烟酸0.5g、叶酸0.5g、钠0.3-0.5g、钾0.3-0.5g、镁0.3g、铁0.3g、锌0.3g。
其制备方法如下:

一种多功能牡丹籽粕蛋白代餐粉,包括下述重量份数的组分:牡丹籽粕蛋白粉350g、牡丹多酚12g、水溶性膳食纤维60g、燕麦粉1200g、乳清蛋白600g、燕麦纤维80g、低聚木糖100g、麦芽糖醇60g、麦芽糊精60g、β-环状糊精20g、碳酸钙3g、B族维生素0.2g、维生素C0.3g、维生素E 0.2g、烟酸0.5g、叶酸0.5g、钠0.5g、钾0.3g、镁0.4g、铁0.5g、锌0.3g。
制备方法同实施例1。
实施例3
一种多功能牡丹籽粕蛋白代餐粉,包括下述重量份数的组分:牡丹籽粕蛋白粉360g、牡丹多酚16g、水溶性膳食纤维70g、燕麦粉1280g、乳清蛋白550g、燕麦纤维60g、低聚木糖90g、麦芽糖醇80g、麦芽糊精80g、β-环状糊精15g、碳酸钙4g、B族维生素0.3g、维生素C0.2g、维生素E 0.3g、烟酸0.5g、叶酸0.5g、钠0.3g、钾0.3g、镁0.5g、铁0.3g、锌0.5g。
制备方法同实施例1。
实施例4
一种多功能牡丹籽粕蛋白代餐粉,包括下述重量份数的组分:牡丹籽粕蛋白粉400g、牡丹多酚20g、水溶性膳食纤维80g、燕麦粉1300g、乳清蛋白650g、燕麦纤维100g、低聚木糖120g、麦芽糖醇100g、麦芽糊精100g、β-环状糊精30g、碳酸钙5g、B族维生素0.5g、维生素C 0.5g、维生素E 0.5g、烟酸0.5g、叶酸0.5g、钠0.5g、钾0.5g、镁0.5g、铁0.5g、锌0.5g。
制备方法同实施例1。

1.一种多功能牡丹籽粕蛋白代餐粉,其特征在于,包括下述重量份数的组分:牡丹籽粕蛋白粉300-400g、牡丹多酚10-20g、水溶性膳食纤维50-80g、燕麦粉1100-1300g、乳清蛋白500-650g、燕麦纤维50-100g、低聚木糖80-120g、麦芽糖醇50-100g、麦芽糊精50-100g、β-环状糊精10-30g、碳酸钙2-5g、B族维生素0.1-0.5g、维生素C 0.1-0.5g、维生素E 0.1-0.5g、烟酸0.5g、叶酸0.5g、钠0.3-0.5g、钾0.3-0.5g、镁0.3-0.5g、铁0.3-0.5g、锌0.3-0.5g。
2.根据权利要求1所述的一种多功能牡丹籽粕蛋白代餐粉,其特征在于:包括下述重量份数的组分:牡丹籽粕蛋白粉320-360g、牡丹多酚12-16g、水溶性膳食纤维60-80g、燕麦粉1200-1300g、乳清蛋白550-600g、燕麦纤维65-90g、低聚木糖80-100g、麦芽糖醇60-100g、麦芽糊精60-100g、β-环状糊精10-28g、碳酸钙2-4g、B族维生素0.1-0.4g、维生素C 0.2-0.5g、维生素E 0.2-0.5g、烟酸0.5g、叶酸0.5g、钠0.3-0.4g、钾0.4-0.5g、镁0.3-0.5g、铁0.4-0.5g、锌0.3-0.4g。
3.根据权利要求1或2所述的一种多功能牡丹籽粕蛋白代餐粉,其特征在于:所述牡丹籽粕蛋白粉提取方法:牡丹籽或牡丹籽粕中经三步酶解得到钟酶解液,钟酶解液离心后得到游离油、乳化层、蛋白水解液和渣,其中游离油即为牡丹籽油;蛋白水解液经等电点沉淀后冷冻干燥的到牡丹籽蛋白粉。
4.如权利要求1或2所述的一种多功能牡丹籽粕蛋白代餐粉的制备方法,其特征在于:
步骤(1),将以上物料按性状、按照提取工艺分为两类,第一类为水提取后去渣,干燥、粉碎;第二类为水提取后不经去渣处理,与物料一同干燥;

5.根据权利要求4所述的一种多功能牡丹籽粕蛋白代餐粉的制备方法,其特征在于:所述步骤(3)中将物料用粉末包装机进行灌装,每包25g,装样量差异不超过±5%,用聚酯/铝/聚乙烯药品包装用复合膜对混合物进行包装。
