背景技术
陈皮又称橘柚,为芸香科植物橘及其栽培变种的干燥成熟果皮,具有燥湿化痰、理气健脾之功效。作为药食同源的材料,陈皮主要包括广陈皮、川陈皮、建陈皮和赣陈皮。其中广陈皮为茶枝柑的干燥成熟果皮,主产地为广东省江门市新会地区,为广东省十大道地药材之首。《神农本草经》记载“橘抽,味辛温。主胸中瘾热,逆气,利水谷,久服去臭,下气”。《本草纲目》记载“疗呕哆反胃嘈杂,时吐清水,痰痞咳疟,大便闭塞,妇人乳痈。入食料,解鱼腥毒”,“其治百病,总取其理气燥湿之功。同补药则补,同泻药则泻,同升药则升,同降药则降”。现代医学研究表明,陈皮还有升压和预防动脉粥样硬化等作用。陈皮主要含有黄酮和挥发油两大类物质,陈皮水提取物具有显著的药理活性,陈皮水煎液对肠胃起调节作用,两者都具有抗氧化活性。
陈皮在药食两用的领域具有很广大的用途,但是目前的研究和应用多应用于中药和烹饪领域,对其进一步的加工应用较少,尤其是在制备保健饮品方面。
发明内容
为了解决上述问题,本发明提供了一种广陈皮保健饮品及其制备方法,采用多种“药食同源”的中药,制备成中药煎液加入到果醋中,并添加可溶性膳食纤维,同时加入柑青皮和大红皮,既保留芳香气味又保证了橙皮甙含量,使饮品具有开胃健脾,防暑降温,除湿消痞,止咳祛痰,预防便秘等功效。

一种广陈皮保健饮品,包含以下质量份物质:理气健脾类中药20-60份,混合水果30-50份,可溶性膳食纤维3-5份,白砂糖6-12份,酸味剂0.1-0.5份,果胶酶0.02-0.1份,活化葡萄酒酵母0.01-0.1份,活化醋酸菌0.01-0.1份,水80-90份。

一种制备所述广陈皮保健饮品的方法,包括以下步骤:
(1)将清洗干净的混合水果取1/4烘干后粉碎成约2~4mm粒径的颗粒,然后将水果颗粒放入干馏釜中,1KW、350~500℃下加热,冷凝收集馏出液,将馏出液离心分离后用虹吸法取中层的澄清液,然后按料液比为1:1000加入活性炭粉末混合搅拌20~30min,过滤得水果木醋液;
(2)将理气健脾类中药按料液比为1:8~9加水煎煮65~78min,过滤,将滤液真空干燥,得到中药粉;
(3)将剩余的混合水果榨汁,加入步骤(1)2/3水果木醋液混合均匀,然后加入0.3%的果胶酶,40~42℃酶解50~60min,过滤,得澄清水果汁;
(4)用步骤(1)所得水果木醋液调节澄清果汁pH为3~4,用白砂糖调整糖度为16~18%,再按0.08%的接种量加入活化葡萄酒酵母,搅拌均匀后于26~28℃发酵7~8d,得发酵酒***;
(5)将发酵酒***调节酒精度为7%,31~32℃下灭菌,按10%的接种量加入活化醋酸菌,发酵至酒精度为3~6%,按料液比为1:1000加入活性炭粉末混合搅拌20~30min,过滤得混合水果果醋;
(6)向混合水果果醋中添加中药粉、酸味剂、白砂糖、可溶性膳食纤维,加水稀释后经70~75℃灭菌8~10min,即得本发明制备的保健饮品。
优选的,所制备的保健饮品酸度为1-2.5%。

山楂能够助消化,降血脂、抗动脉粥样硬化,对心血管***具有保护作用;罗汉果对支气管炎、高血压等疾病有显著疗效,还是起到防治冠心病、血管硬化、肥胖症的作用,能够清热解暑、化痰止咳、凉血舒骨、清肺润肠和生津止渴;枳实对心血管***具有保护作用,能够促进消化,健脾,治疗便秘;半夏具有燥湿化痰,降逆止呕的作用;茯苓用于水肿尿少,痰饮眩悸,脾虚食少,便溏泄泻,心神不安,惊悸失眠;白术具有健脾益气,燥湿利水,止汗,安胎的功效,能够除湿益燥,和中益气,温中,去脾胃中湿,除胃热,强脾胃,进饮食;桔梗能够祛痰镇咳,降血糖,具有镇静、镇痛和解热的作用;生姜具有开胃健脾,防暑降温,除湿消痞,止咳祛痰等功效。
陈皮按不同的采收加工时间分为柑青皮、微红皮和大红皮,柑青皮于生理未成熟时(农历立秋至寒露)采收加工,外表色泽青褐色至青黑色,不显皱缩,质硬、皮薄,味辛苦、气芳香,橙皮甙含量为2.5-4.5%,大红皮于生理成熟时(农历小雪至小寒)采收加工,外表色泽棕红色至棕黑色,皱缩十分明显,质软、皮厚、味微辛、甜香。橙皮甙含量为1.5-3.0%。

(3)将剩余的混合水果榨汁,加入步骤(1)2/3水果木醋液混合均匀,然后加入0.3%的果胶酶,40~42℃酶解50~60min,过滤,得澄清水果汁;
(4)用步骤(1)所得水果木醋液调节澄清果汁pH为3~4,用白砂糖调整糖度为16~18%,再按0.08%的接种量加入活化葡萄酒酵母,搅拌均匀后于26~28℃发酵7~8d,得发酵酒***;
(5)将发酵酒***调节酒精度为7%,31~32℃下灭菌,按10%的接种量加入活化醋酸菌,发酵至酒精度为3~6%,按料液比为1:1000加入活性炭粉末混合搅拌20~30min,过滤得混合水果果醋;
(6)向混合水果果醋中添加中药粉、酸味剂、白砂糖、可溶性膳食纤维,加水稀释后经70~75℃灭菌8~10min,即得本发明制备的保健饮品。
优选的,所制备的保健饮品酸度为1-2.5%。
实施例2
一种广陈皮保健饮品,包含以下质量份物质:理气健脾类中药30份,混合水果35份,可溶性膳食纤维3.5份,白砂糖7份,酸味剂0.2份,果胶酶0.04份,活化葡萄酒酵母0.03份,活化醋酸菌0.03份,水82份。
实施例3
一种广陈皮保健饮品,包含以下质量份物质:理气健脾类中药40份,混合水果40份,可溶性膳食纤维4份,白砂糖9份,酸味剂0.3份,果胶酶0.06份,活化葡萄酒酵母0.05份,活化醋酸菌0.05份,水85份。
实施例4
一种广陈皮保健饮品,包含以下质量份物质:理气健脾类中药50份,混合水果45份,可溶性膳食纤维4.5份,白砂糖11份,酸味剂0.4份,果胶酶0.1份,活化葡萄酒酵母0.07份,活化醋酸菌0.07份,水88份。
实施例5
一种广陈皮保健饮品,包含以下质量份物质:理气健脾类中药60份,混合水果50份,可溶性膳食纤维5份,白砂糖12份,酸味剂0.5份,果胶酶0.1份,活化葡萄酒酵母0.1份,活化醋酸菌0.1份,水90份。
功效验证
1.对兔离体肠肌运动的影响
取普通健康家兔20只,分为5组,雌雄各半,体重2.0-2.5kg;取家兔猛击其头枕部致昏,迅速剖开腹腔,取近幽门端十二指肠,置冷台氏液中。沿肠壁剪去肠系膜,将肠管剪成1.5-2cm的小段备用。调节恒温平滑肌槽,使水温保持在(37±0.5)℃。将压力换能器与BL-420F生物机能实验***连接。取兔肠一段,两端各穿一线,其中一线固定于L型通气管上,放入有50mL台式液的浴槽内,固定L型同器官,并调节恒温平滑肌槽,缓慢通入气泡(2个气泡/s)。肠肌另一端与压力换能器相连,加1g负荷,打开BL-420F生物机能试验***,待肠肌运动恢复正常后,记录一段肠管正常活动曲线,开始滴加实施例1-5样品,滴加量为0.2mL。结果见表1。

由表1可知,实施例1-5对兔离体肠肌表现为促进作用,说明本发明能够增强动物的肠胃动力,其中实施例3的效果最显著。
2.祛痰作用研究
取昆明种小鼠60只,体重18-25g,随机分为6组,雌雄各半,每组10只,分别为蒸馏水空白组和实施例1-5样品组。灌胃喂食(0.2mL/10g)、空白组给予等量蒸馏水,每日一次,连续灌胃7d。末次喂食前各组小鼠禁食12h、末次给药后30min,小鼠腹腔注射5%酚红溶液0.1mL/10g,30min后脱颈椎处死动物,暴露气管,剥去气管周围组织,剪下自甲状软骨下至支气管分支处的一段气管,浸入盛有2mL5%NaHCO3溶液的试管中,振摇并放置过夜,以将其中的酚红充分洗出,3000r/min离心10min,得到透明上清液,546nm处测定OD值。结果见表2。

由表2可知,实施例1-5均有明显的祛痰作用,其中实施例3的效果最显著。
以上所述实施例仅表达了本发明的几种实施方式,其描述较为具体和详细,但并不能因此而理解为对本发明专利范围的限制。应当指出的是,对于本领域的普通技术人员来说,在不脱离本发明构思的前提下,还可以做出若干变形和改进,这些都属于本发明的保护范围。

1.一种广陈皮保健饮品,其特征在于,包含以下质量份物质:理气健脾类中药20-60份,混合水果30-50份,可溶性膳食纤维3-5份,白砂糖6-12份,酸味剂0.1-0.5份,果胶酶0.02-0.1份,活化葡萄酒酵母0.01-0.1份,活化醋酸菌0.01-0.1份,水80-90份。
2.根据权利要求1所述的一种广陈皮保健饮品,其特征在于,包含以下质量份物质:理气健脾类中药30-50份,混合水果35-45份,可溶性膳食纤维3.5-4.5份,白砂糖7-11份,酸味剂0.2-0.4份,果胶酶0.04-0.1份,活化葡萄酒酵母0.03-0.07份,活化醋酸菌0.03-0.07份,水82-88份。
3.根据权利要求2所述的一种广陈皮保健饮品,其特征在于,包含以下质量份物质:理气健脾类中药40份,混合水果40份,可溶性膳食纤维4份,白砂糖9份,酸味剂0.3份,果胶酶0.06份,活化葡萄酒酵母0.05份,活化醋酸菌0.05份,水85份。
4.根据权利要求1-3任一项所述的一种广陈皮保健饮品,其特征在于,所述酸味剂为柠檬酸钾、柠檬酸和乳酸的混合物。
5.根据权利要求1-3任一项所述的一种广陈皮保健饮品,其特征在于,所述理气健脾类中药包含以下质量份物质:广陈皮20-30份,山楂3-5份,罗汉果2-4份,枳实3-5份,半夏3-5份,茯苓3-5份,白术3-5份,桔梗3-5份,生姜3-5份。
6.根据权利要求5所述的一种广陈皮保健饮品,其特征在于,所述广陈皮中柑青皮:大红皮=1:3。
7.根据权利要求1-3任一项所述的一种广陈皮保健饮品,其特征在于,所述混合水果包含草莓、菠萝、苹果、黄皮、琵琶、桑葚、葡萄、猕猴桃中的至少三种。
8.一种制备如权利要求1-7任一项所述广陈皮保健饮品的方法,其特征在于,包括以下步骤:
(1)将清洗干净的混合水果取1/4烘干后粉碎成约2~4mm粒径的颗粒,然后将水果颗粒放入干馏釜中,1KW、350~500℃下加热,冷凝收集馏出液,将馏出液离心分离后用虹吸法取中层的澄清液,然后按料液比为1:1000加入活性炭粉末混合搅拌20~30min,过滤得水果木醋液;
(2)将理气健脾类中药按料液比为1:8~9加水煎煮65~78min,过滤,将滤液真空干燥,得到中药粉;
(3)将剩余的混合水果榨汁,加入步骤(1)2/3水果木醋液混合均匀,然后加入0.3%的果胶酶,40~42℃酶解50~60min,过滤,得澄清水果汁;
(4)用步骤(1)所得水果木醋液调节澄清果汁pH为3~4,用白砂糖调整糖度为16~18%,再按0.08%的接种量加入活化葡萄酒酵母,搅拌均匀后于26~28℃发酵7~8d,得发酵酒***;
(5)将发酵酒***调节酒精度为7%,31~32℃下灭菌,按10%的接种量加入活化醋酸菌,发酵至酒精度为3~6%,按料液比为1:1000加入活性炭粉末混合搅拌20~30min,过滤得混合水果果醋;
(6)向混合水果果醋中添加中药粉、酸味剂、白砂糖、可溶性膳食纤维,加水稀释后经70~75℃灭菌8~10min,即得本发明制备的保健饮品。
9.根据权利要求8所述的一种保健饮品制备方法,其特征在于,所制备的保健饮品酸度为1-2.5%。
