Description
一、技术领域:本发明属功能固体食品,尤以青藏高原天然无污染有机谷物红藜麦提取物等原料,采取现代先进工艺加工而成的功能食品。
二、背景技术:本发明以红藜麦提取物、酪蛋白巨肽、肉桂醛、共轭亚油酸甘油酯、难消化麦芽糊精、西酶提取物等原料制成的功能固体饮品。该产品具有提高免疫力、减肥瘦身、降血压、降血脂、降血糖、通便排毒、抗癌等功效。目前市场上还没有同类产品,创新研发该产品可为给减肥瘦身的人群提供了一种新产品。该产品以纯天然有机谷物和生物活性成分为原料制成的减肥减肥奶昔、纯度高、吸收好、生物活性强、无任何副作用、口感纯正、服用方便、效果明显,适应于各年龄段的减肥人群服用。
三、发明内容:肥胖是一种营养代谢综合失调性疾病和低度全身慢性炎症。研究发现,肥胖病因相当复杂,不仅有明显的遗传性,还与饮食和运动密切相关。在今天肥胖已成为一个社会严重的公共卫生问题。世界卫生组织(WHO)认为,肥胖与艾滋病、吸毒、凶酒并列为世界四大社会问题,医学界称之为人类死亡率高的癌症,冠心病、糖尿病、高血压、高血脂、心脑血管疾病都与肥胖直接有关。随着我国经济的快速发展,人民生活水平的不断提高,肥胖正在成为一个关注的流行病。根据世界卫生组织的统计数学显示,全球超重人数超过10亿多,有3亿多人严重肥胖,而发展中国家的肥胖比例大幅增加。在我国根据***、科技部和国家***公布的营养与健康状况调查结果显示,我国13亿人口中有2亿人超重,特别是儿童超重迅速增长。预计今后肥胖患病率还将会有较大幅度的增长,肥胖会给国民健康造成严重的威胁,也会给个人和社会带来沉重的经济负担。
四、原料配方:红藜麦提取物40-70千克、酪蛋白巨肽5-20千克、肉桂醛0.3-0.6千克、共轭亚油酸甘油酯6-10千克、难消化麦芽糊精10-40千克、西酶提取物10-30千克为原料。
五、技术方案:
(一)红藜麦提取物(Chenopodium quinoa willd),又叫南美藜,奎麦,金谷子等。原产于美洲安第斯山区,是印加土著居民的主要传统食物,由于具有独特丰富全面的营养价值,养育了印加民族,被称为粮食之母,也可代替婴幼儿奶粉食用。近几年来引进我国青海等地区试种成功,在青藏高原海拔2800米的柴达木盆地大面积种植。红藜麦属藜木科双叶子红藜麦的成熟种子。性平味甘,具有全面均衡补充营养,有增强机体功能和增强免疫功能,修复体质,提高机体适应能力、调节内分泌、促进儿童生长发育、预防疾病、美容养颜、减肥、通便、延缓衰老、防癌抗癌、降血压、降血脂、降血糖、防治心脑血管疾病、辅助治疗慢性疾病等功效,也是孕产妇的超级营养食品,被***粮农组织认为红藜麦是唯一单体植物既满足人体基本营养需求的食物,推荐红藜麦为最适宜人类完美的营养食品,并列为全球10大健康营养的“超级谷物”,“未来食品”,以促进人类的健康。尤其适应于高血压、高血脂、高血糖、心脑血管疾病,以及婴幼儿、孕产妇、儿童、老年人等特殊体质等人群,长期食用效果显著。
营养成分:红藜麦含有丰富的蛋白质(高达16.2%,且品质与奶粉和牛肉类相当),碳水化合物、脂肪、多种氨基酸、其中含有人体必需的全部9种氨基酸,比例适当且易吸收,还富含不饱和脂肪酸、花青素、类黄酮、β-葡聚糖、胆碱、甜菜碱、α一亚麻酸、矿物质钙、镁、磷、钾、铁、锌、硒、锰、铜等,维生素B族、叶酸、维生素E等化合物,膳食纤维含量高达7.1%,不含胆固醇。
生理功能:1、增强免疫功能:研究发现,红藜麦具有增强机体防病抗病能力,调节机体免疫功能的作用,其中红藜麦中丰富的蛋白质是构成血红球和抗体的主要成分。实验证明,严重缺乏会使人的免疫细胞中的淋巴球大减,造成严重的免疫机能下降,且易感染疾病。另外,红藜麦中含有β-葡萄糖对机体免疫***有极强的作用,具有活化细胞的功能,防止机体被感染和修复被破坏的组织,同时,红藜麦中β-葡萄糖还有激活细胞,提高免疫功能的作用。而红藜麦中均衡的营养物质也可通过改善体质提高免疫力。
2、降血压:数据研究表明,红藜麦与控制血压有一定作用。研究推测,这可能是由红藜麦中的钾、镁和钙平衡有利于降血压。此外红藜麦中另一个降压因素可能是降压生物活性肽,红藜麦中的蛋白质是血管紧张转换酶(ACE)抑制肽的来源,可以通过酶水解,胃肠道消化或食品加工过程释放出来。目前从多种蛋白质如酪蛋白、乳清蛋白、β-球蛋白等均能分离出抗高血压活性肽,在以自发性高血压大鼠实验中具有降血压活性。
3、降血脂:红藜麦晶及其口服冲剂、红藜麦粉对高脂血症和高脂血症家兔血清总胆固醇(TC)、甘油三酯(TG)、β-脂蛋白等均有明显的抑制作用,并能明显升高高密度脂蛋白的胆固醇(HDL-C)水平,其降血脂成分为食物纤维不溶蛋白及脂类等。
4、抗动脉粥样硬化:红藜麦粉能明显抑制家兔血脂升高及红细胞胆固醇上升;能明显减轻动脉壁和肝脏脂质沉积,对主动脉内膜不斑块病变的形成有良好的抑制作用。
5、降血糖:研究认为,每天摄入适量的红藜麦粉可降低患糖尿病的几率。因为红藜麦中含有的钙、镁、维生素和β-葡萄糖可以增强人体合理使用胰岛素的功能。据报道,最新研究发现,经常进食红藜麦粉食品,其中含有的脂肪酸可降低患糖尿病的风险,动物实验发现,动物体内存在的脂肪酸可帮助降低胰岛素抵抗性,他们对人体通过对红藜麦制品摄入脂肪酸进行调查,研究了3700多名65岁以上老人跟踪调查,结果显示,与进食红藜麦制最少的人相比,进食红藜麦制品多的人患糖尿病的几率要低63%,同样也可以起到降低胰岛素抵抗作用,从而有效预防糖尿病。
6、减肥:多项研究表明,在摄入热量不变的前提下,饮食中增加红藜麦制品的摄入量有助减肥。因为红藜麦制品中含有丰富的胆碱和其他一些特殊的活性成分,能帮人体燃烧脂肪,减少脂肪堆积和控制体着有着重要的作用。红藜麦制品有助于控制体重的另一因素可能与它含有丰富的蛋白质和膳食纤维能增加人的饱腹感对食欲控制有关,因为蛋白质和膳食纤维能产生较强的饱腹感,延缓胃排空,从而减少其他食物的摄入量来控制食欲,达到减肥的作用。另外,红藜麦含有丰富的花青素,可以抑制脂肪细胞、巨噬细胞和血管内皮细胞,因而发挥降血脂、抗肥胖、抗炎和抗糖尿病的独特功效来实现减肥的显著作用。
7、抗肥胖炎症:肥胖是代谢炎症的诱发因素,因此,红藜麦含有丰富的花青素,对肥胖的抑制作用可以从源头抑制代谢炎症反应,通过对小鼠12周的实验显示,可显著减轻体质量,减少白色脂肪组织量,显著抑制炎性细胞因子的释放和减少脂肪组织产生的炎症介质。
8、通便:红藜麦中含有丰富的膳食纤维,能使食物在肠内通过的时间缩短,使大肠内的粪便量相对增加,有助于大肠的蠕动,使粪便易予排出,从而达到通便作用。
此外,红藜麦还具有延缓衰老、防治心脑血管疾病、护眼明目、通便、辅助治疗慢性疾病等作用。
(二)酪蛋白巨肽(casein,CMP),酪蛋白巨肽是一种新型的短肽,是从牛乳酪蛋白提炼经酶解制成的小分子生物蛋白多肽。而且具有特殊的生物学功效,具有增强免疫功能、促进新陈代谢、抑制食欲、减肥、降血压、降血脂、抗疲劳、延缓衰老等生物活性功能。
生物功能:1、增强免疫功能:研究表明,酪蛋白巨肽具有激活人体免疫细胞(抗体、T细胞、B细胞),修复、再生、提升活性全过程、激发自身免疫***的主动性,从根本上恢复和加固自身免疫***。因此,酪蛋白巨肽有显著的增强免疫功能作用。
2、减肥降脂:研究认为,酪蛋白巨肽具有很好的减少体重的功效。随机对比实验结果显示,食用酪蛋白巨肽代替其他热量组体重和体脂显著下降,试验结果与其他蛋白质相比,酪蛋白巨肽,具有明显的减肥瘦身作用;分析食用酪蛋白巨肽代替其他热量的减肥作用发现,相对服用酪蛋白巨肽后体重的基准值,研究对象体重明显下降。另外,富含酪蛋白巨肽饮食能够显著控制食欲,也能减少摄入高脂高糖零食。研究认为,酪蛋白巨肽直接作用于激素受体,刺激肠道激素释放发挥膳食纤维调节作用控制食欲,从而达到减肥瘦身的作用。
(三)、肉桂醛(cinnamaldehyde,CA),肉桂醛是存在于肉桂等植物中的一种醛类化合物,也是丙烯醛的衍生物。具有多种保健功效。现代医学研究认为,肉桂醛能增强免疫功能、减肥、抗疲劳、杀菌消毒、抗病毒、降血压、扩张血管,改善微循环、抗溃疡、抗癌等作用。
药理作用:1、减肥:最新研究表明、肉桂醛具有刺激交感神经的作用,可以诱导脂肪细胞燃烧,减少脂肪储存,从而防止脂肪在体内堆积。其作用机理,肉桂醛可直接作用于脂肪细胞,通过促使其产热,从而燃烧脂肪,来促进机体的代谢,以达到减肥的目的。
(四)、共轭亚油酸甘油酯(conjugated cinoleic Acid Giycerides,CLAG),共轭亚油酸甘油酯是存在于红花油脂中的一种天然脂肪酸,为一种新发现的活性营养物质,几乎是生活在二十一世纪现代人不可或缺的健康食品。许多研究表明,共轭亚油酸甘油酯具有减肥瘦身、降血脂、清除自由基、促进脂肪氧化代谢,调节胆固醇和甘油三脂水平、防止动脉硬化、抗氧化、促进人体蛋白质合成、增强免疫功能、防癌抗癌等作用。
生理功能:1.减肥瘦身:最新研究表明,共轭亚油酸甘油酯能抑制脂蛋白脂肪酶的活性,从而减少脂肪细胞从血液中吸收脂肪的功能,同时,共轭亚油酸甘油酯还能通过增加肉碱棕榈酰转移酶和脂肪酸氧化酶的活性,提高肌肉线粒体的氧化速度,能使体重明显下降。临床医学研究证实,通过对108名成年超重肥胖症患者的对比研究发现,在没有对肥胖症饮食进行任何限制的情况下,每天服用适量的共轭亚油酸甘油酯肥胖者体内脂肪含量显著减少,在其后的时间里这些人的体重没有出现反弹。其减肥瘦身的作用机理为,使通过增加脂肪细胞中脂肪酸的氧化,减少脂肪在体内堆积,促进脂肪分解和提高基础代谢率,抑制食欲来减少体内脂肪等作用,来达到瘦身的目的。综上所述:本产品通过对36名女性每天服用红藜麦减肥代餐,通过6周后的检测其体内脂肪含量,结果显示,每个试验者的基础代谢率平均提高13.8%,体重平均减少3.7%,体内平均脂肪下降3.3%,腰围平均减少3.6厘米。通过上数据表明,红藜麦减肥代餐具有显著的减肥功效。
(五)、难消化麦芽糊精,又称抗酶解淀粉及难消化淀粉。是存在于许多天然食物中的一种类似膳食纤维的化合物。难消化麦芽糊精是利用物理、化学或酶法处理后,改变了淀粉的天然性质,增加了新的特性和保健功能。这种经过二次加工,改变了特性的淀粉为难消化麦芽糊精。科学研究表明,难消化麦芽糊精具有减肥瘦身、降血脂、防治心血管病、降血糖、改善肠道功能、通便、抗癌防癌等功能。
生理功能:1、减肥瘦身:难消化麦芽糊精本身几乎不含热量,可减少热量的摄入,而且可减少体内脂肪的吸收与脂肪酸的合成,增加脂肪的排汇,还可控制食欲和巨量营养素平衡,并有持久的饱腹感,从而达到减肥瘦身的目的。
2、降血脂:动物实验证明,抗性定粉能降低血浆中低密度脂蛋白胆固醇和甘油三酯含量,其作用是缓解结场上皮萎缩,增加胆固醇和胆酸的排出,并减少脂质的吸收和脂肪酸的合成,从而降低血液和肝脏中的脂肪含量。
3、降血糖和防治糖尿病:研究发现,碳水化合物又称多糖,食用后要在体内酶被胃酸和酶消化分解为单糖-葡萄糖以后才能吸收并进入血液,难消化麦芽糊精可抵抗酶的分解,在体内消化吸收,具有较低的胰岛素反应,可调节和控制血糖水平,有助于维持正常的血糖。另外,难消化麦芽糊精还具有防治糖尿病的作用,能有效降低血糖生成指数和胰岛素反应,尤其对2型糖尿病餐后血糖上升具有显著的作用,因此,难消化麦芽糊精能有效控制糖尿病。
4、改善肠道功能:难消化麦芽糊精可被大肠中有益细菌发酵产生大量的短链脂肪酸丁酸、丙酸、乙酸等。可调节肠道PH值,改善有益菌的繁殖环境,促进益生菌的生长繁殖,使有益菌群迅速扩大,有效抑制腐败菌生长,防止肠道黏膜萎缩和保持肠黏膜屏障功能。因此,难消化麦芽糊精具有改善肠道功能。
5、通便:难消化麦芽糊精可增加粪便体积,刺激肠道蠕动,加速排便频率,使粪便及有害物质及时排出体外。
(六)、西梅,为蔷薇科植物西梅树的果实,性平、味酸。具有减肥、降血压、护肝、抗氧化、维持酸破平衡、消除疲劳、缓解便秘、抗贫血、保护视力、安眠、防治心脑血管疾病、抗癌等功效。
化学成分:含有蛋白质、碳水化合物、黄酮、有机酸、多种维生素和矿物质微量元素及膳食纤维,不含脂肪和胆固醇,是现代人健康的最佳食品,故有“奇迹水果”、“功能水果”之美誉。
药理作用:1、减肥:研究表明,西梅中含有黄酮可抑制脂肪在小肠中的吸收并促进***,还可抑制脂肪在肝脏内的合成:从而减少脂肪在体内蓄积,以达到减肥的目的。动物实验表明,西梅饲料组大鼠内脏重量减轻,同时发现,大鼠粪便量也有增加的倾向,其血清中的中性脂肪和胆固醇值的上升受到抑制,在肝脏中促进燃烧的一种酶的活性被激活,因此,具有显著的减肥作用。
2、通便:西梅含有丰富的膳食纤维,能促进肠道蠕动,俗称肠道清道夫,具有很好的通便作用。
六、制作工艺:
1、原料处理:先将红藜麦捡杂,清洗、沥干。
2、浸泡:将清洗后的红藜麦加入1∶1-5水浸泡8-12小时。
3、磨浆:将浸泡后的红藜麦加入1∶8-10的水磨成浆液。
4、过滤:将磨好的红藜麦浆液送入过滤机,进行过滤。
5、均质浓缩:将过滤后的红藜麦浆液加热至60℃,在25MPa下进行均质后浓缩至含固体物40-50%。
6、干燥:将浓缩后的红藜麦浆液送入低温真空干燥机,真空度控制在0.696千帕,温度控制在30-40度,进行真空干燥,干燥时间2-4小时。
7、粉碎过筛:将干燥后红藜麦固体物进行粉碎过80-10目筛(即红藜麦速溶粉)。
8、混合搅拌:将红藜麦粉与原料配方中剩余的原料混合,充分搅拌均匀。
9、检验包装:将混合后的原料,经检验合格,包装为成品。

1.藜麦瘦身营养奶昔的制作工艺,其组成特征为:红藜麦提取物40-70千克、酪蛋白巨肽5-20千克、肉桂醛0.3-0.6千克、共轭亚油酸甘油酯6-10千克为原料,经过将以上原料捡杂、清洗、沥干,加入1∶1-5的水浸泡8-12小时后,再加入8-10倍的水磨成浆液,送入过滤机,过滤后将红藜麦浆液加热至60℃,在25MPa下进行均质后浓缩至含固体物40-50%,将浓缩后的红藜麦浆液送入低温真空干燥机,真空度控制在0.696千帕,温度控制在30-40度,进行真空干燥,干燥时间2-4小时。干燥后的红藜麦固体物进行粉碎后过80-100目筛(即红藜麦速溶粉),再与原料配方中剩余的原料混合,充分搅拌均匀,经检验合格,包装为成品。
