Abstract
本发明公开了一种乳化稳定剂,其包含以下质量百分含量的组分:κ‑型卡拉胶0.8~8.0%、黄原胶0.8~8.0%、大豆磷脂24.0~58.0%、单双酸甘油酯1.6~13.3%、微晶纤维素0.4~5.6%和羧甲基纤维素钠12.0~50.0%。同时,本发明还提供了一种含有所述乳化稳定剂的全营养液及其制备方法。本发明提供的乳化稳定剂不仅能够提高全营养配方混悬液的均匀性和稳定性,不发生蛋白质沉淀及明显的脂肪上浮,还解决了灭菌后其全营养配方混悬液表面产生奶皮的现象;本发明提供的全营养液具有足够低的粘度,容易口服或管食给予,不会阻塞食管;同时具有足够低的肾溶质负荷和渗透压,食用后不会轻易发生腹泻等不适症状。

背景技术
特殊医学用途配方食品(foods for special medical purposes,FSMP)是专用于患有疾病的、能够自主进食或不能主动进食患者营养支持的一类肠内营养食品。特殊医学用途配方食品全营配方混悬液是由水和蛋白质、脂肪、糖类、维生素、矿物质等营养物质组成的液态食品,该食品能够提供人体所需要的能量和营养素,能够作为老人、儿童和孕妇因进食受限、消化吸收障碍、代谢紊乱或者特定疾病状态下的营养支持。在人体营养缺乏、或因疾病导致营养摄入不足、或因术前补充营养调节身体状态、或术后需要补充营养时,特殊医学用途配方食品全营养乳可以提供全面的营养支持,可以全面均衡营养、减少手术及相关措施对机体的应激,尽可能使机体的内在生理功能保持在稳定状态,使机体迅速从被手术扰乱的不平衡情况恢复过来,减少并发症,缩短手术后康复的时间。
目前国内市场流通的特殊医学用途配方食品大多数是以国外进口产品为主,多数为欧美产品,国内生产特殊医学用途配方食品的企业较少,特殊医学用途配方食品领域基本处于空白状态。中国和欧美国家的人种不同,体质有较大的差异,对营养素的需求也不相同,而且市场上的产品能量密度跨度较大,能量密度较低的产品不方便使用,能量密度较高又会引起胃肠道不适症状,加之特殊医学用途配方食品中含有较多的蛋白质和脂肪,生产过程中产品表面会产生一层厚奶皮,奶皮不仅影响产品的感官,还有可能造成食用者试管堵塞和窒息。因此,国内市场急需符合中国人体质的、营养全面均衡的、产品质量较高的特殊医学用途配方食品。
现有乳制品能量较低、营养不能满足人体在进食受限、消化吸收障碍等状态下对营养素的要求。一般营养液食品是一种客观不稳定的分散体系,既有蛋白质微粒和不溶性矿物质形成的悬浮液,又有脂肪类物质形成的乳浊液,还有以糖类、盐类形成的真溶液。灭菌高温处理使得蛋白质和脂质体的结构发生变化,乳制品产生表面会产生油脂和蛋白结合的奶皮,奶皮不仅会影响乳制品的稳定性,而且在儿童及婴幼儿或病人食用的过程中有可能会粘附在口腔和食管处,有堵塞食管或引起窒息的风险。脂肪颗粒随着时间的推移发生聚集并产生浮油,蛋白质颗粒会发生沉淀。因此,营养液食品的均匀性和稳定性是其安全性和货架期的最主要限制因素。要解决这一问题,需加入适量的乳化剂、增稠剂等以使产品均匀稳定。产品的质量不仅受制于均匀性、稳定性,还和能量密度紧密相关,较低的能量密度营养剂不能为人体在响应的时间内补充足够的能量和营养;能量密度较高的营养剂渗透压、肾溶质负荷较高,容易引起腹泻等食后的不适症状。

为实现上述目的,本发明采用的技术方案为:一种乳化稳定剂,包含以下质量百分含量的组分:κ-型卡拉胶0.8~8.0%、黄原胶0.8~8.0%、大豆磷脂24.0~58.0%、单双酸甘油酯1.6~13.3%、微晶纤维素0.4~5.6%和羧甲基纤维素钠12.0~50.0%。
优选地,所述乳化稳定剂包含以下质量百分含量的组分:κ-型卡拉胶2%、黄原胶2%、大豆磷脂45%、单双酸甘油酯4.5%、微晶纤维素2.5%和羧甲基纤维素钠44%。
优选地,所述乳化稳定剂包含以下质量百分含量的组分:κ-型卡拉胶1%、黄原胶4.5%、大豆磷脂50%、单双酸甘油酯10.5%、微晶纤维素4%和羧甲基纤维素钠30%。
优选地,所述乳化稳定剂包含以下质量百分含量的组分:κ-型卡拉胶6%、黄原胶1.5%、大豆磷脂38.5%、单双酸甘油酯5%、微晶纤维素1.5%和羧甲基纤维素钠47.5%。
本发明申请人经过大量的研究和总结发现,当所述乳化稳定剂包含以下质量百分含量的组分:κ-型卡拉胶2%、黄原胶2%、大豆磷脂45%、单双酸甘油酯4.5%、微晶纤维素2.5%和羧甲基纤维素钠44%时,能取得最好的使用效果,制备得到的全营养配方混悬液的均匀性和稳定性最好。
本发明还提供了所述的乳化稳定剂在制备食品中的用途。

本发明的又一目的,在于提供一种全营养液,能量密度适中,营养全面均衡,可以提供人体必需的营养物质和能量,满足患者对能量、氨基酸、必须脂肪酸、维生素、矿物质以及水分的需求;且具有足够低的粘度,容易口服或管食给予;没有奶皮产生,不会阻塞食管;具有足够低的肾溶质负荷和渗透压,食用后不会轻易发生腹泻等不适症状。

本发明还提供了所述全营养液的制备方法,包括以下步骤:
(1)水相制备:按用量称取水相组分,所述水相组分包括酪蛋白、乳清蛋白、低聚木糖、抗性淀粉、麦芽糊精、低聚果糖、磷酸三钙、氯化铬、葡萄糖酸铜、碘酸钾、葡萄糖酸亚铁、轻质氧化镁、硫酸锰、钼酸钠、柠檬酸钾、***钠、葡萄糖酸锌、氟化钠、氯化钠、柠檬酸钠、维生素A棕榈酸酯、维生素、维生素E干粉、维生素K1干粉、维生素B1盐酸硫胺素、维生素B2核黄素、维生素B6盐酸吡哆醇、维生素C抗坏血酸钠、D-泛酸钙、生物素、叶酸、烟酰胺、维生素B12氰钴胺、胆碱或酒石酸氢胆碱、κ-型卡拉胶、黄原胶、羧甲基纤维素钠和微晶纤维素;将各组分混合均匀,加入150~200份25~50℃的纯化水,搅拌成糊状,然后再加入580~670份25~50℃的纯化水,于25~50℃恒温条件下,用剪切机或搅拌机在3000~7000rpm/min的剪速或转速下搅拌均匀,得到水相混合物;
(2)油相制备:按用量称取油相组分,所述油相组分包括大豆磷脂、大豆油、菜籽油、辛癸酸甘油三酯或中链甘油三酯和单双酸甘油酯;将油相组分于30~70℃恒温条件下,用搅拌机在300~700rpm/min的转速下搅拌均匀,得到油相混合物;
(3)乳化均质灭菌:在惰性气体保护下,将配置好的油相混合物倒入水相混合物中,25~50℃恒温条件下,用剪切机或搅拌机在3000~7000rpm/min的剪速或转速下乳化5~20min;随后将乳化完成的混合物在200~800bar的均质压力下均质1~5遍;将均质后的混合物于138~141℃的条件下灭菌3~10s,灭菌后将混悬液冷却到20~40℃后送入成品罐;
(4)灌装与后杀菌:在惰性气体保护下将成品罐中的混悬液通过灌装机装入玻璃瓶或密封袋中并封口;将密封好玻璃瓶或密封袋置于旋转灭菌器中进行后杀菌,在灭菌温度为115~125℃条件下灭菌3-30min,保证F0值达到8min以上,即得所述全营养液。
优选地,所述步骤(4)制备得到的全营养液的能量密度为1~1.5kcal/ml。
相对于现有技术,本发明的有益效果为:(1)本发明乳化稳定剂的配方和配伍量是发明人经过大量试验优化得出的,其不仅能够提高混悬液的均匀性和稳定性,同时解决了脂肪凝聚及浮油的问题,还避免了奶皮的产生;(2)本发明提供的乳化稳定剂能使液体全营养配方食品在货架期内组织状态良好,不发生蛋白质沉淀及明显的脂肪上浮,进一步减缓企业的生产压力、增加批次产品的流通周期、降低企业的损失;(3)本发明提供的全营养液含有人体所需能量和全部营养素,能够为具有较完整消化功能的健康人或病人提供全面的能量和营养;所述全营养液具有足够低的粘度,使得健康人或病人容易口服或管食给予;没有奶皮产生,不会阻塞食管;所述全营养液具有足够低的肾溶质负荷和渗透压,健康人或病人口服或管食给予后,不会轻易发生腹泻等不适症状。

(4)灌装与后杀菌:在惰性气体保护下将成品罐中的混悬液通过灌装机装入玻璃瓶或密封袋中并封口;将密封好玻璃瓶或密封袋置于旋转灭菌器中进行后杀菌,在灭菌温度为125℃条件下灭菌3min,保证F0值达到8min以上,即得所述全营养液。

本发明全营养制备方法的一种实施例,包括以下步骤:

(3)乳化均质灭菌:在惰性气体保护下,将配置好的油相混合物倒入水相混合物中,25℃恒温条件下,用剪切机或搅拌机在7000rpm/min的剪速或转速下乳化5min;随后将乳化完成的混合物在600bar的均质压力下均质1遍;将均质后的混合物于141℃的条件下灭菌6s,灭菌后将混悬液冷却到20℃后送入成品罐;
(4)灌装与后杀菌:在惰性气体保护下将成品罐中的混悬液通过灌装机装入玻璃瓶或密封袋中并封口;将密封好玻璃瓶或密封袋置于旋转灭菌器中进行后杀菌,在灭菌温度为115℃条件下灭菌30min,保证F0值达到8min以上,即得所述全营养液。

本发明全营养制备方法的一种实施例,包括以下步骤:
(1)水相制备:按用量称取水相组分,所述水相组分包括酪蛋白、乳清蛋白、低聚木糖、抗性淀粉、麦芽糊精、低聚果糖、磷酸三钙、氯化铬、葡萄糖酸铜、碘酸钾、葡萄糖酸亚铁、轻质氧化镁、硫酸锰、钼酸钠、柠檬酸钾、***钠、葡萄糖酸锌、氟化钠、氯化钠、柠檬酸钠、维生素A棕榈酸酯、维生素、维生素E干粉、维生素K1干粉、维生素B1盐酸硫胺素、维生素B2核黄素、维生素B6盐酸吡哆醇、维生素C抗坏血酸钠、D-泛酸钙、生物素、叶酸、烟酰胺、维生素B12氰钴胺、胆碱或酒石酸氢胆碱、κ-型卡拉胶、黄原胶、羧甲基纤维素钠和微晶纤维素;将各组分混合均匀,加入170份40℃的纯化水,搅拌成糊状,然后再加入600份40℃的纯化水,于40℃恒温条件下,用剪切机或搅拌机在3000rpm/min的剪速或转速下搅拌均匀,得到水相混合物;
(2)油相制备:按用量称取油相组分,所述油相组分包括大豆磷脂、大豆油、菜籽油、辛癸酸甘油三酯或中链甘油三酯和单双酸甘油酯;将油相组分于30℃恒温条件下,用搅拌机在700rpm/min的转速下搅拌均匀,得到油相混合物;
(3)乳化均质灭菌:在惰性气体保护下,将配置好的油相混合物倒入水相混合物中,35℃恒温条件下,用剪切机或搅拌机在5000rpm/min的剪速或转速下乳化15min;随后将乳化完成的混合物在200bar的均质压力下均质5遍;将均质后的混合物于140℃的条件下灭菌3s,灭菌后将混悬液冷却到30℃后送入成品罐;
(4)灌装与后杀菌:在惰性气体保护下将成品罐中的混悬液通过灌装机装入玻璃瓶或密封袋中并封口;将密封好玻璃瓶或密封袋置于旋转灭菌器中进行后杀菌,在灭菌温度为120℃条件下灭菌15min,保证F0值达到8min以上,即得所述全营养液。
实施例14
本实施例研究本发明乳化稳定剂的使用效果。
取实施例1~7中的乳化稳定剂,按实施例10所述配方和实施例13所述制备方法制备得到全营养液,检测全营养液的脂肪上浮、产生奶皮和稳定性情况,评价本发明乳化稳定剂的使用效果。
检测结果如表1所示:

上述结果表明,本发明实施例1~7中的乳化稳定剂制备得到的全营养液均不会出现脂肪上浮、产生奶皮和沉淀分层等现象。发明人还发现,实施例5中的乳化稳定剂制备得到的全营养液在储存过程中均匀性和稳定性最好。

(1)水相制备:按用量称取水相组分,所述水相组分包括酪蛋白、乳清蛋白、低聚木糖、抗性淀粉、麦芽糊精、低聚果糖、磷酸三钙、氯化铬、葡萄糖酸铜、碘酸钾、葡萄糖酸亚铁、轻质氧化镁、硫酸锰、钼酸钠、柠檬酸钾、***钠、葡萄糖酸锌、氟化钠、氯化钠、柠檬酸钠、维生素A棕榈酸酯、维生素、维生素E干粉、维生素K1干粉、维生素B1盐酸硫胺素、维生素B2核黄素、维生素B6盐酸吡哆醇、维生素C抗坏血酸钠、D-泛酸钙、生物素、叶酸、烟酰胺、维生素B12氰钴胺、胆碱或酒石酸氢胆碱、κ-型卡拉胶、黄原胶、羧甲基纤维素钠和微晶纤维素;将各组分混合均匀,加入150~200份25~50℃的纯化水,搅拌成糊状,然后再加入580~670份25~50℃的纯化水,于25~50℃恒温条件下,用剪切机或搅拌机在3000~7000rpm/min的剪速或转速下搅拌均匀,得到水相混合物;
(2)油相制备:按用量称取油相组分,所述油相组分包括大豆磷脂、大豆油、菜籽油、辛癸酸甘油三酯或中链甘油三酯和单双酸甘油酯;将油相组分于30~70℃恒温条件下,用搅拌机在300~700rpm/min的转速下搅拌均匀,得到油相混合物;
(3)乳化均质灭菌:在惰性气体保护下,将配置好的油相混合物倒入水相混合物中,25~50℃恒温条件下,用剪切机或搅拌机在3000~7000rpm/min的剪速或转速下乳化5~20min;随后将乳化完成的混合物在200~800bar的均质压力下均质1~5遍;将均质后的混合物于138~141℃的条件下灭菌3~10s,灭菌后将混悬液冷却到20~40℃后送入成品罐;
(4)灌装与后杀菌:在惰性气体保护下将成品罐中的混悬液通过灌装机装入玻璃瓶或密封袋中并封口;将密封好玻璃瓶或密封袋置于旋转灭菌器中进行后杀菌,在灭菌温度为115~125℃条件下灭菌3-30min,保证F0值达到8min以上,即得所述全营养液。
9.根据权利要求8所述的制备方法,其特征在于,所述步骤(4)制备得到的全营养液的能量密度为1~1.5kcal/ml。
