本发明属于一种奶制品冷饮加工领域,提供一种低能量低脂奶制品冷饮,其组分为:菠萝5~15g、芒果5~15g、胡萝卜5~15g、山楂5~15g、紫薯1~10g、燕麦1~10g、高粱1~10g、绿豆1~10g、脱脂奶粉20~40g、甜味剂5~20g、稳定剂1~10g、乳化剂1~5g、无水奶油10~25g、牛奶10~20g、鸡蛋2~4个、水20~50g、膳食纤维1~20g。本发明将水果、杂粮加入奶制品冷饮中,使得原来油腻的口感变得清凉,更适合夏天时的食用,本产品在制作过程进行均质处理,这样防止奶制品冷饮的分层,改善奶制品冷饮外观,使得奶制品冷饮色泽更好,香度更浓,口感更醇。

本发明属于一种奶制品冷饮加工领域,具体涉及一种低能量、低脂肪奶制品冷饮。
背景技术
目前,很多年轻人、小孩子都喜欢吃奶制品冷饮,市场上销售的奶制品冷饮的种类繁多,但味道单一,组织形态单一,不能很好激起人们的食欲。传统的奶制品冷饮是以饮用水、乳或乳制品、蛋或蛋制品、糖、油脂、食品添加剂等为原料,而且加入巧克力、咖啡,经加工而成,其脂肪、蔗糖含量高,发热量大很容易造成正处于生长发育期的儿童产生肥胖,不利于他们的健康的成长。
发明内容
本发明的目的在于提供一种低能量低脂奶制品冷饮,可克服传统奶制品冷饮热量高、脂肪高、口感油腻的不足之处。
为实现上述技术问题,本发明采用的技术方案如下:
一种低能量低脂奶制品冷饮,其组分为:菠萝5~15g、芒果5~15g、胡萝卜5~15g、山楂5~15g、紫薯1~10g、燕麦1~10g、高粱1~10g、绿豆1~10g、脱脂奶粉20~40g、甜味剂5~20g、稳定剂1~10g、乳化剂1~5g、无水奶油10~25g、牛奶10~20g、鸡蛋2~4个、水20~50g、膳食纤维1~20g。
上述方案中,进一步,所述的低能量低脂奶制品冷饮,其组分为:菠萝10g、芒果10g、胡萝卜10g、山楂10g、紫薯5g、燕麦5g、高粱5g、绿豆5g、脱脂奶粉30g、甜味剂15g、稳定剂5g、乳化剂3g、无水奶油17g、牛奶15g、鸡蛋3个、水35g、膳食纤维10g。
上述方案中,所述甜味剂为蜂蜜、蔗糖、木糖醇、甘草、葡萄糖中的一种。
上述方案中,所述稳定剂为淀粉、卡拉胶、瓜尔豆胶或黄原胶。
上述方案中,所述的乳化剂为分子蒸馏单甘酯、大豆磷脂、蔗糖酯中的一种。

具体实施方式
实施例1
一种低能量低脂奶制品冷饮,其组分为:菠萝5g、芒果5g、胡萝卜5g、山楂5g、紫薯1g、燕麦1g、高粱1g、绿豆1g、脱脂奶粉20g、甜味剂5g、稳定剂1g、乳化剂1g、无水奶油10g、牛奶10g、鸡蛋2个、水20g、膳食纤维1g。
上述的低能量、低脂肪奶制品冷饮是通过以下步骤来实现的:
按配方比例称取菠萝5g、芒果5g、胡萝卜5g、山楂5g,将其破碎打浆得到水果果浆;再将其浆离心分离,过滤收集得到浆汁;将浆汁再次离心,收集上清液后调节pH为5.5,边加热边搅拌然后加入水解酶,温度升至90℃停止搅拌,再调节pH为4.0加入水解酶,灭酶,过滤,得到水果浆汁,备用;
按配方比例称取紫薯1g、燕麦1g、高粱1g、绿豆1g,用粉碎机进行粉碎,得到粗粉,加6倍量水煎煮2次,每次时间为2.5小时,合并煎液,过滤,得到提纯煎液,备用;
将鸡蛋2个的蛋黄和蛋清分开,蛋黄备用;
将步骤(2)水果浆汁、步骤(4)的煎液脱脂奶粉20g、蜂蜜5g、淀粉1g、柠檬酸5g、维生素3g、膳食纤维1g搅拌均匀并完全溶解于水中,加入溶解乳化剂1g、无水奶油10g、牛奶10g、胶原蛋白1g,不断搅拌;
巴氏灭菌:用杀菌锅进行杀菌温度为100℃;
均质:冷却至65℃,进行冷质;
凝冻:-15℃下,时间为15min;
实施例2
一种低能量、低脂肪奶制品冷饮,其组分为:菠萝8g、芒果8g、胡萝卜8g、山楂8g、紫薯3g、燕麦3g、高粱3g、绿豆3g、脱脂奶粉25g、甜味剂10g、稳定剂3g、乳化剂2g、无水奶油12g、牛奶12g、鸡蛋2个、水25g、胶原蛋白3g、柠檬酸7g、维生素5g、膳食纤维5g。
步骤与实施例1相同。

1.一种低能量低脂奶制品冷饮,其特征在于,其组分为:菠萝5~15g、芒果5~15g、胡萝卜5~15g、山楂5~15g、紫薯1~10g、燕麦1~10g、高粱1~10g、绿豆1~10g、脱脂奶粉20~40g、甜味剂5~20g、稳定剂1~10g、乳化剂1~5g、无水奶油10~25g、牛奶10~20g、鸡蛋2~4个、水20~50g、膳食纤维1~20g。
2.根据权利要求1所述的低能量低脂奶制品冷饮,其特征在于,所述的低能量低脂奶制品冷饮,其组分为:菠萝10g、芒果10g、胡萝卜10g、山楂10g、紫薯5g、燕麦5g、高粱5g、绿豆5g、脱脂奶粉30g、甜味剂15g、稳定剂5g、乳化剂3g、无水奶油17g、牛奶15g、鸡蛋3个、水35g、膳食纤维10g。
3.根据权利要求1所述的低能量低脂奶制品冷饮,其特征在于,所述甜味剂为蜂蜜、蔗糖、木糖醇、甘草、葡萄糖中的一种。
4.根据权利要求1所述的低能量低脂奶制品冷饮,其特征在于,所述稳定剂为淀粉、卡拉胶、瓜尔豆胶或黄原胶。
5.根据权利要求1所述的低能量低脂奶制品冷饮,其特征在于,所述的乳化剂为分子蒸馏单甘酯、大豆磷脂、蔗糖酯中的一种。
