本发明涉及一种秘制油辣椒,其组份按重量份数为:辣椒粉50~200份、白芝麻1~4份、葵花米0.5~2份、花生米0.5~2份、草果0.1~0.4份、山奈0.1~0.4份、桂皮0.1~0.4份、八角0.2~0.8份、菜籽油80~320份、盐适量。采用上述各组份制备油辣椒的方法为:先将各原料按所需用量备好;然后将葵花米、花生米炒香,除去花生衣并制成1~3mm大小的粒状;将辣椒粉、粒状葵花米和花生米、盐混合均匀;最后炼制油辣椒。本发明是发明人经过多次实践试制出的一种风味独特、口感香辣的秘制油辣椒,该油辣椒制备成本低廉,色、香、味都有很大突破,非常受人们的喜爱。

技术领域
本发明属于食品加工领域,特别涉及一种秘制油辣椒。
背景技术
油辣椒是一种辣椒的深加工产品,在南方深得人们的喜爱,特别是西南地区,由于气候温暖潮湿,人们吃辣椒的目的第一是开胃,因为辣椒中含有多种维生素,能补充人体所需要的各种维生素,同时提高人的食欲;第二因为西南地区气候潮湿,人们食用辣椒后会出汗,这样既温暖了身体,又可将体内的湿气排出体外。因此在西南地区,可以说吃饭是无辣椒不欢,辣椒成为人们餐桌上不可或缺的食物,但辣椒的做法非常繁多,所得的口感也不尽相同。但香、辣是所有辣椒制品共同的目标。
发明内容
本发明的目的是提供一种风味独特,口感香辣的秘制油辣椒。
一种秘制油辣椒,其组份按重量份数为:辣椒粉50~200份、白芝麻1~4份、葵花米0.5~2份、花生米0.5~2份、草果0.1~0.4份、山奈0.1~0.4份、桂皮0.1~0.4份、八角0.2~0.8份、菜籽油80~320份、盐适量;
采用上述各组份制备油辣椒的方法为:
(1)原料准备:先将各原料按所需用量备好;
(2)辅料炒香:将备好的葵花米、花生米分别放入铁锅中炒香,然后除去花生米上的花生衣,将炒香后的葵花米和花生米混合,并用擂钵将两者粉碎成1~3mm大小的粒状,备用;
(3)炼制准备:将备好的辣椒粉、粒状葵花米和花生米、盐适量混合均匀,得辣椒粉混合物备用;
(4)炼制油辣椒:将备好的草果、山奈、桂皮、八角放入一个干净的大口容器内;把备好的菜籽油倒入铁锅中,用炒勺在铁锅里搅动,加热到油不再冒烟,关火后把烧热的油倒入放了香料的大口容器内,待油七分热时,捞出香料,放入备好的白芝麻,用木勺慢慢搅动;然后用另一个木勺把辣椒粉混合物一勺一勺的放入大口容器中,继续不停的搅动,当大口容器中浸泡辣椒粉的热油开始冒泡,还要继续的搅拌直至香味益出,得成品油辣椒。
(5)包装:待炼制好的油辣椒冷却后即可装瓶。

具体实施方式
油辣椒是人们喜爱的食物之一,其既可以作佐料,用于炒菜、凉菜调味,又可以作为菜品供人们食用,但不管怎样的烹饪方法,目的都是让人们吃得开心、吃得舒服。
以下结合实例对本发明的原理和特征进行描述,所举实例只用于解释发明,并非用于限定本发明的范围。
实施例1
一种秘制油辣椒,其组份按重量份数为:辣椒粉50份、白芝麻1份、葵花米0.5份、花生米0.5份、草果0.1份、山奈0.1份、桂皮0.1份、八角0.2份、菜籽油80份、盐适量。
将上述各组份制备油辣椒的方法为:
(1)原料准备:先将各原料按所需用量备好;
(2)辅料炒香:将备好的葵花米、花生米分别放入铁锅中炒香,然后除去花生米上的花生衣,将炒香后的葵花米和花生米混合,并用擂钵将两者粉碎成1~3mm大小的粒状,备用;
(3)炼制准备:将备好的辣椒粉、粒状葵花米和花生米、盐适量混合均匀,得辣椒粉混合物备用;

本发明制备过程中,白芝麻一定要先放,这样才能爆出香味,最后放的话,只能起到好看的作用。而且辣椒粉混合物也要一勺一勺的放入大口容器中的热油内,切记不能一下倒进去,因为慢慢放进去并不停的搅动,这样辣椒粉才受热均匀,而且先放进去的也不会糊。
实施例2
一种秘制油辣椒,其组份按重量份数为:辣椒粉100份、白芝麻2份、葵花米1份、花生米1份、草果0.2份、山奈0.2份、桂皮0.2份、八角0.4份、菜籽油160份、盐适量。油辣椒的制备方法同实施例1一样,但经过比较,采用该组份比例,制备出的油辣椒口感最好。
实施例3
一种秘制油辣椒,其组份按重量份数为:辣椒粉150份、白芝麻3份、葵花米1.5份、花生米1.5份、草果0.3份、山奈0.3份、桂皮0.3份、八角0.6份、菜籽油240份、盐适量。油辣椒的制备方法同实施例1一样。
实施例4
一种秘制油辣椒,其组份按重量份数为:辣椒粉200份、白芝麻4份、葵花米2份、花生米2份、草果0.4份、山奈0.4份、桂皮0.4份、八角0.8份、菜籽油320份、盐适量。油辣椒的制备方法同实施例1一样。
Claims (2)
1.一种秘制油辣椒,其特征在于:该油辣椒的组份按重量份数为:辣椒粉50~200份、白芝麻1~4份、葵花米0.5~2份、花生米0.5~2份、草果0.1~0.4份、山奈0.1~0.4份、桂皮0.1~0.4份、八角0.2~0.8份、菜籽油80~320份、盐适量;
采用上述各组份制备油辣椒的方法为:
(1)原料准备:先将各原料按所需用量备好;
