花生含有脂肪44-45%,蛋白24-36%,碳水化合物20%,富含多种维生素和矿物元素,有关的花生乳制品也是我国十分受欢迎的饮品之一。据报道,花生具有健脾养胃、润肺化痰的功效,可用于大便燥结。目前,还没有关于具有通便功能的蜂胶花生乳制品报道。
发明内容
本发明的目的就在于为 解决现有技术的不足而提供一种具有通便功能的蜂胶花生乳制品。
本发明的目的是以下述技术方案实现的:
一种具有通便功能的蜂胶花生乳,由以下重量份的原料制备而成:全脂牛奶25-30份、花生仁25-30份、蜂胶1-1.4份、蜂蜜3-4份、蜂蜡0.8-1份、卡拉胶0.1-0.12份、单甘脂0.08-0.1份、水40-50份、果葡糖浆1.5-2.5份。
进一步,由以下重量份的原料制备而成:全脂牛奶27.5份、花生仁27.5份、蜂胶1.25份、蜂蜜3.5份、蜂蜡0.9份、卡拉胶0.11份、单甘脂0. 09份、水45份、果葡糖浆2份。
如上所述的具有通便功能的蜂胶花生乳的制备方法,包括以下步骤:
(1)取花生仁加水磨浆,过滤,取滤液得到花生原浆;
(2)取蜂胶、蜂蜡分别加热溶化,然后加入花生原浆中,卡拉胶、单甘脂加水溶解后也加入花生原浆中,然后加入全脂牛奶、蜂蜜和果葡糖浆,混合均匀;
(3)均质、灭菌、灌装。
本发明提供的蜂胶花生乳,其主要原料除了花生外,均采用蜂产品,而不包括其他中药原料,而且采用价格低廉的蜂蜡代替部分价格昂贵的蜂胶,节约了成本,但是同样具备显著的润肠通便功能。同时,蜂蜡在本发明中还作为辅助乳化剂,与卡拉胶、单甘脂一起搭配使用,制备得到的花生乳组织均匀稳定,长时间贮存下无沉淀絮凝产生。另外使用蜂蜜、果葡糖浆搭配使用作为甜味剂,其获得了较好的风味口感。因此,本发明提供的蜂胶花生乳,口感好,组织细腻均匀稳定,对便秘具有显著的疗效,适宜多数便秘人群长期食用。
具体实施方式
实施例1
一种具有通便功能的蜂胶花生乳,由以下重量份的原料制备而成:全脂牛奶25-30份、花生仁25-30份、蜂胶1-1.4份、蜂蜜3-4份、蜂蜡0.8-1份、卡拉胶0.1-0.12份、单甘脂0.08-0.1份、水40-50份、果葡糖浆1.5-2.5份。
如上所述的具有通便功能的蜂胶花生乳的制备方法,包括以下步骤:
(1)取花生仁加水磨浆,过滤,取滤液得到花生原浆;
(2)取蜂胶、蜂蜡分别加热溶化,然后加入花生原浆中,卡拉胶、单甘脂加水溶解后也加入花生原浆中,然后加入全脂牛奶、蜂蜜和果葡糖浆,混合均匀;
(3)均质、灭菌、灌装。
上述生产过程中温度控制在60℃以下,以免蜂蜜、蜂胶失去活性。
由于蜂胶不溶于水,因此由蜂胶制备的饮料容易发生沉淀;本发明将蜂胶、全脂牛奶、脂肪含量较高的花生结合,通过添加乳化剂,制备获得稳定的乳化体系,组织均匀细腻,无沉淀分层。乳化剂采用卡拉胶、单甘脂和蜂蜡复配,既考虑蜂蜡具有辅助通便的功能,可减少蜂胶的使用量,又因为蜂蜡具有蜂蜜样香气,使用蜂蜡可获得纯正柔和的口感,但是蜂蜡单独作为乳化剂,容易发生絮凝沉淀,经实验,发现与卡拉胶、单甘脂配合使用,可获得很好的乳化效果。花生产品服用较多,会产生较腻的口感,而本发明采用果葡糖浆搭配蜂产品使用,产生清凉舒爽果香,从而解腻,吸引人们继续食用。
便秘产生的主要原因为肠道蠕动力的减弱,肠道内水分和粘液的减少和肠道内益生菌的减少;配方中花生含有较多油酸,可软化大便,促进排便;蜂蜜可以激活肠道内益生菌,恢复肠道内菌类的均衡;蜂胶一方面可增强肠道的收缩力,缩短肠道收缩周期,促进肠道蠕动,并使肠内压增高,另一方面蜂胶抗菌解毒的功能也可以杀灭肠道内的有害菌,减少有害气体产生,恢复肠道技能;蜂蜡除了解毒的作用,还具有止痢疾的作用,与润肠通便功能互补。因此,本发明采用蜂胶促进肠道蠕动,采用花生软化大便,采用蜂蜜和蜂胶促使肠道菌类平衡,采用牛奶生津,全面的消除了便秘产生的因素,获得显著的润肠通便功能。同时采用蜂蜡止痢,与润肠通便功能互补,防止肠道过分蠕动,发生泄泻。
实施例2
一种具有通便功能的蜂胶花生乳,由以下重量份的原料制备而成:全脂牛奶27.5份、花生仁27.5份、蜂胶1.25份、蜂蜜3.5份、蜂蜡0.9份、卡拉胶0.11份、单甘脂0. 09份、水45份、果葡糖浆2份。
如上所述的具有通便功能的蜂胶花生乳的制备方法,包括以下步骤:
(1)取花生仁加水磨浆,过滤,取滤液得到花生原浆;
(2)取蜂胶、蜂蜡分别加热溶化,然后加入花生原浆中,卡拉胶、单甘脂加水溶解后也加入花生原浆中,然后加入全脂牛奶、蜂蜜和果葡糖浆,混合均匀;
(3)均质、灭菌、灌装。
本发明提供的具有通便功能的蜂胶花生乳实施例3-20配方见表1-3,其余同实施例2。
试验例
1、乳化剂和甜味剂优化实验
经过预试验,以全脂牛奶27.5份、花生仁27.5份、蜂胶1.25份、蜂蜜3.5份、蜂蜡0.9份、水45份为基本配方,配方中其他原料见表4,制备方法同实施例2,感官评价结果见表5。感官评价标准为组织状态40分:组织均匀细腻、无沉淀分层,无凝块,粘度适中;口感30分:甜度适中,口感柔和细腻润滑,无苦味;风味30分:风味协调,具有花生乳特有香味,无异味。
试验中发现,仅使用单甘脂或卡拉胶和蜂蜡复配,制备得到的花生乳组织不均匀细腻,乳清容易分层;使用黄原胶和卡拉胶与蜂蜡复配,制备得到的花生乳组织粘稠,使用单甘脂和黄原胶与蜂蜡复配,制备得到的花生乳组织粗糙。使用白糖或阿斯巴甜与蜂蜜复配作为甜味剂,口感较甜腻。
、功效实验
取健康KM小鼠75只,体重18-22g,随机分成5组,即正常对照组、模型对照组、实施例2样品组,实施例3样品组,实施例4样品组。连续灌胃7天,每天2次,剂量为0.26mL/10g小鼠体重,空白对照组灌胃等剂量生理盐水。各组小鼠实验前禁食不禁水16小时。
实验前配制墨汁,准确称取***树胶100g,加水800ml,煮沸至溶液透明,称取活性碳粉末50g加至上述溶液中煮沸三次,待溶液凉后加水定容到1000ml,于冰箱中4℃保存,用前摇匀。实验前配制复方地芬诺酯混悬液,浓度为0.05%,复方地芬诺酯片,每片含2.5mg复方地芬诺酯。取复方地芬诺酯片50mg(20片),用研钵研碎后加蒸馏水至100ml,临用前配制。
实验开始时,正常对照组给予纯净水,模型对照组和其它给药组灌胃给予复方地芬诺酯5mg/kg,给予0.5h后,各组小鼠灌胃给予含受试样品的墨汁(含5% 活性碳和10%***树胶),动物单笼饲养,正常饮水进食。从灌墨汁开始,记录每只动物首粒排黑便时间、5小时内排黑便粒数及重量。进行统计学处理并比较组间差异。实验结果见表6。

1.一种具有通便功能的蜂胶花生乳,其特征在于由以下重量份的原料制备而成:全脂牛奶25-30份、花生仁25-30份、蜂胶1-1.4份、蜂蜜3-4份、蜂蜡0.8-1份、卡拉胶0.1-0.12份、单甘脂0. 08-0.1份、水40-50份、果葡糖浆1.5-2.5份;
所述蜂胶花生乳的制备方法包括如下步骤:
(1)取花生仁加水磨浆,过滤,取滤液得到花生原浆;
(2)取蜂胶、蜂蜡分别加热溶化,然后加入花生原浆中,卡拉胶、单甘脂加水溶解后也加入花生原浆中,然后加入全脂牛奶、蜂蜜和果葡糖浆,混合均匀;
(3)均质、灭菌、灌装。
2.如权利要求1所述的具有通便功能的蜂胶花生乳,其特征在于由以下重量份的原料制备而成:全脂牛奶27.5份、花生仁27.5份、蜂胶1.25份、蜂蜜3.5份、蜂蜡0.9份、卡拉胶0.11份、单甘脂0. 09份、水45份、果葡糖浆2份。
