本发明涉及一种豆脑营养包,属于食品技术领域。本发明的豆脑营养包从内到外依次为;豆脑馅层、内皮层、肉馅料层、外皮层。本发明的豆脑营养包营养均衡,包括肉、蛋、豆脑、谷物等,将不同的材料分层,能够给人带来几种不同的口感;将不易久煮的滑嫩豆脑包在营养包的中心,保证豆脑的营养和口感。

本发明涉及一种豆脑营养包,属于食品技术领域。
背景技术
早餐是一日三餐中最重要的一餐,是全天能量和营养的重要来源,一顿营养均衡的早餐可以极大的提高人们的思考能力和精神状态。所以早餐一定要吃,而且要吃的合理营养。
但是现代快节奏的工作、学习和生活往往让人们的早餐成为最随意的一餐,常常吃些简单的食物充饥,这些简单的早餐营养有限。长此以往,很容易造成营养缺失、引起一系列的健康问题。此外,因为现有的早餐的选择少,口味少,挑食厌食的人群往往选择不吃早餐,这也会造成更严重的健康问题,例如胃肠疾病,还可能会产生身体不适、容易衰老、精神无法集中等各种问题。
发明内容
本发明要接解决的技术问题是提供一种豆脑营养包,更好的满足人们对早餐营养的需求。
为解决上述技术问题,本发明的豆脑营养包从内到外依次为:豆脑馅层、内皮层、肉馅料层、外皮层;
所述的豆脑馅层的原料以重量份计为:黄豆15~20,鸡蛋20~30,薄荷1~2;
所述豆脑馅的制作方法包括将黄豆用清水浸泡1~3h,将浸泡好的黄豆打浆,加水煮沸,加的水量与黄豆的质量比为1~1.3:1,过滤得豆汁;将得到的豆汁与鸡蛋、薄荷混合均匀,常压下蒸2~5min既得膏状的豆脑馅。
所述外皮层和所述内皮层的材料为营养包面皮,所述营养包面皮的原料配方为:以重量份计,面粉500~700,玉米生粉25~35,鸡蛋90~100,盐2.5~3,白糖3~5,色拉油9~11,水150~280,鸡肉泥90~105,花生酱16~20,菠菜汁80~100,酵母8~12;
所述营养包面皮的制作方法包括:a.将面粉,玉米粉,鸡蛋,盐,白糖,鸡肉泥,花生酱,水,菠菜汁,酵母混匀;b.调入色拉油搅匀,室温发面2~3小时。
优选的,所述肉馅料层为土鸡肉馅料,所述土鸡肉馅料的成份以重量份计为:辣酱13~15,土鸡肉50~60,鸡蛋50~60,大葱8~10,芝麻4~5。
进一步地,所述豆脑营养包的制作方法包括如下步骤:
A.按比例称取原料;
B.制作内皮层和外皮层面皮、肉馅料,豆脑馅;
C.成型:干净的板上撒上一层面粉,从下往上依此铺上外皮层面皮、肉馅料、内皮层面皮、豆脑馅,面皮大小以能保住所有上层物质为准;拉起内皮层面皮的四周,将豆脑馅包在内皮层内,捏合;将外皮层面皮拉起,将肉馅料、内皮层和豆脑馅包在外皮层内,捏合;
D.蒸熟既得豆脑营养包。
优选的,所述步骤D的工艺为常压下蒸15~30min。
本发明的有益效果:本发明的豆脑营养包营养均衡,包括肉、蛋、豆、谷物等,将不同的材料分层,能够给人带来几种不同的口感;将不易久煮的豆脑包在营养包的中心,保证豆脑的营养和滑嫩口感。

具体实施方式
如图2所示,本发明的豆脑营养包从内到外依次为;豆脑馅层11、内皮层12、肉馅料层13、外皮层14;所述的豆脑馅层11的原料以重量份计为:黄豆15~20,鸡蛋20~30,薄荷1~2;
所述豆脑馅的制作方法包括将黄豆用清水浸泡1~3h,将浸泡好的黄豆打浆,加水煮沸,加的水量与黄豆的质量比为1~1.3:1,过滤得豆汁;将得到的豆汁与鸡蛋、薄荷混合均匀,常压下蒸2~5min既得膏状的豆脑馅。
本发明营养包的外形可以为普通包子形状,通常更好的包馅,包子外形为球形,但为方便放置,通常需要有平面,如图1所示,本发明营养包的外表面可由营养包平底表面16和营养包球形表面15组成。
进一步地,所述外皮层14和所述内皮层12的材料为营养包面皮,所述营养包面皮的原料配方为:以重量份计,面粉500~700,玉米生粉25~35,鸡蛋90~100,盐2.5~3,白糖3~5,色拉油9~11,水150~280,鸡肉泥90~105,花生酱16~20,菠菜汁80~100,酵母8~12;
所述营养包面皮的制作方法包括:a.将面粉,玉米粉,鸡蛋,盐,白糖,鸡肉泥,花生酱,水,菠菜汁,酵母混匀;b.调入色拉油搅匀,室温发面2~3小时。
优选的,所述肉馅料层13为土鸡肉馅料,所述土鸡肉馅料的成份以重量份计为:辣酱13~15,土鸡肉50~60,鸡蛋50~60,大葱8~10,芝麻4~5。
进一步地,所述豆脑营养包的制作方法包括如下步骤:
A.按比例称取原料;
B.制作内皮层和外皮层面皮、肉馅料,豆脑馅;
C.成型:
干净的板上撒上一层面粉,从下往上依此铺上外皮层面皮、肉馅料、内皮层面皮、豆脑馅,面皮大小以能保住所有上层物质为准;拉起内皮层面皮的四周,将豆脑馅包在内皮层内,捏合;将外皮层面皮拉起,将肉馅料、内皮层和豆脑馅包在外皮层内,捏合;
D.蒸熟既得豆脑营养包。
所述步骤D的工艺可采用常规的蒸煮方法,蒸的时间可根据蒸的压力、温度、以及营养包大小进行调整,为经济和保证美味优选在常压下蒸煮,蒸的15~30min,可根据营养包的大小适当调整蒸煮时间,营养包的大小为常规包子大小。
下面结合实施例对本发明的具体实施方式做进一步的描述,并不因此将本发明限制在所述的实施例范围之中。
实施例1
取面粉690g,玉米生粉30g,盐3g,白糖5g,色拉油10g,水225ml,鸡肉泥100g,花生酱20g,菠菜汁100g,鸡蛋2个,酵母11g,其中,所有食材均为常规食材。
将面粉,玉米粉,鸡蛋,盐,白糖,鸡肉泥,花生酱,水,菠菜汁,酵母混匀;再调入色拉油搅匀,室温发面3小时得到内皮层和外皮层用的面皮。
取辣酱28g,土鸡肉120g,鸡蛋2个,大葱16g,芝麻10g,土鸡肉和大葱切碎,将上述原料混匀,得到土鸡肉馅料。
取黄豆60g,鸡蛋90g,薄荷6g,将黄豆用清水浸泡3h,将浸泡好的黄豆打浆,加水煮沸,加的水量与黄豆的质量比为1.3:1,过滤得豆汁;将得到的豆汁与鸡蛋、薄荷混合均匀,常压下蒸4min既得膏状的豆脑馅。
成型:在干净的板上撒上一层面粉,从下往上依此铺上外皮层面皮、肉馅料、内皮层面皮、豆脑馅,面皮大小以能保住所有上层物质为准;拉起内皮层面皮的四周,将豆脑馅包在内皮层内,捏合;将外皮层面皮四周拉起,将肉馅料、内皮层和豆脑馅包在外皮层内,捏合;
大火将水烧开,将捏合成型的生营养包放置在蒸笼内,改小火蒸18min既得拳头大小的熟豆脑营养包。
实施例2
取面粉500g,玉米生粉25g,盐2.5g,白糖4.5g,色拉油9g,水130ml,鸡肉泥90g,花生酱16g,菠菜汁80g,鸡蛋2个,酵母8g,其中,所有食材均为常规食材。
将面粉,玉米粉,鸡蛋,盐,白糖,鸡肉泥,花生酱,水,菠菜汁,酵母混匀;再调入色拉油搅匀,室温发面2.5小时得到内皮层和外皮层用的面皮。
取辣酱23g,土鸡肉100g,鸡蛋2个,大葱16g,芝麻8g,土鸡肉和大葱切碎,将上述原料混匀,得到土鸡肉馅料。
取黄豆50g,鸡蛋60g,薄荷3g,将黄豆用清水浸泡2h,将浸泡好的黄豆打浆,加水煮沸,加的水量与黄豆的质量比为1:1,过滤得豆汁;将得到的豆汁与鸡蛋、薄荷混合均匀,常压下蒸3min既得膏状的豆脑馅。
成型:在干净的板上撒上一层面粉,从下往上依此铺上外皮层面皮、肉馅料、内皮层面皮、豆脑馅,面皮大小以能保住所有上层物质为准;拉起内皮层面皮的四周,将豆脑馅包在内皮层内,捏合;将外皮层面皮四周拉起,将肉馅料、内皮层和豆脑馅包在外皮层内,捏合;
大火将水烧开,将捏合成型的生营养包放置在蒸笼内,改小火蒸15min既得拳头大小的熟豆脑营养包。

1.豆脑营养包,其特征在于,所述豆脑营养包从内到外依次为;豆脑馅层、内皮层、肉馅料层、外皮层;
所述的豆脑馅层的原料以重量份计为:黄豆15~20,鸡蛋20~30,薄荷1~2;
所述豆脑馅的制作方法包括将黄豆用清水浸泡1~3h,将浸泡好的黄豆打浆,加水煮沸,加的水量与黄豆的质量比为1~1.3:1,过滤得豆汁;
将得到的豆汁与鸡蛋、薄荷混合均匀,常压下蒸2~5min既得膏状的豆脑馅。
2.根据权利要求1所述的豆脑营养包,其特征在于,所述外皮层和所述内皮层的材料为营养包面皮,所述营养包面皮的原料配方为:以重量份计,面粉500~700,玉米生粉25~35,鸡蛋90~100,盐2.5~3,白糖3~5,色拉油9~11,水150~280,鸡肉泥90~105,花生酱16~20,菠菜汁80~100,酵母8~12;

C.成型:干净的板上撒上一层面粉,从下往上依此铺上外皮层面皮、肉馅料、内皮层面皮、豆脑馅,面皮大小以能保住所有上层物质为准;拉起内皮层面皮的四周,将豆脑馅包在内皮层内,捏合;将外皮层面皮拉起,将肉馅料、内皮层和豆脑馅包在外皮层内,捏合;
D.蒸熟既得豆脑营养包。
