Abstract
一种复合营养大豆粉的制作方法属于食品加工技术领域,具体涉及一种复合营养大豆粉的制作方法。将大豆芽加水用打浆机打成大豆芽浆,将大豆芽浆、胡萝卜丝和葵花籽仁粉混合均匀,用胶体磨磨浆得混合料浆,混合料浆经水解、煮沸后得混合料浆水解液,混合料浆水解液再经均质、浓缩、喷雾干燥即得成品。本发明的复合营养大豆粉中蛋白质的氨基酸组成合理,而且原料还经过了大豆芽中多种酶的水解,不仅速溶性好、营养丰富、易吸收,还含有γ‑氨基丁酸、苷元型黄酮、胡萝卜素等多种具有保健功效的营养物质,经常食用,可以对人体起到很好的保健作用。

本发明属于食品加工技术领域,具体涉及一种复合营养大豆粉的制作方法。
背景技术
大豆有“豆中之王”之称,被称作“植物肉”、“绿色的乳牛”,营养价值十分丰富。大豆中含蛋白质约40%,为其他粮食之冠。大豆蛋白质的氨基酸组成与牛奶蛋白质比较相近,除蛋氨酸略低外,其余必需氨基酸含量均较丰富,是比较难得的天然植物蛋白。大豆中富含大豆异黄酮,能够减轻女性更年期综合症症状,延迟女性细胞衰老,使皮肤保持弹性,减少骨丢失,促进骨生成;大豆中的卵磷脂可除掉附在血管壁上的胆固醇,防止血管硬化,预防心血管疾病,保护心脏,大豆中的卵磷脂还具有防止肝脏内积存过多脂肪的作用,从而有效地防治因肥胖而引起的脂肪肝。此外,大豆还含有丰富的维生素A、B、D、E及钙、磷、铁等矿物质,为理想的补益食疗之品。大豆中含有抗营养物质,如植酸、单宁、蛋白酶抑制剂等,它们是妨碍营养素利用的物质,另外大豆中的一些低聚糖还会引起胀气问题,这些都是大豆的缺点和不足之处,而食用发芽后的大豆可以有效克服上述的缺点和不足,这是因为大豆在发芽过程中蛋白质、脂肪、碳水化合物等能量物质被部分降解掉,植酸、单宁、蛋白酶抑制剂之类妨碍营养素利用的物质则大幅度下降。
发明内容
本发明的目的是提供一种以发芽大豆为主要原料的复合营养大豆粉的制作方法。
本发明的目的是这样实现的:
将葵花籽仁粉碎并过40目筛子得葵花籽仁粉。将胡萝卜洗净,用蔬菜切丝机切成胡萝卜丝。
称取一定质量的大豆芽,加入5倍质量的清水,用打浆机打成大豆芽浆,将大豆芽浆、胡萝卜丝和葵花籽仁粉按照质量比50:5:1的比例混合均匀,用胶体磨磨浆得混合料浆。
将混合料浆的pH调整到4.2-4.8,在45-50℃条件下维持1.5-2小时,再升温到55-60℃,保持3-4小时,然后煮沸5分钟灭酶,得混合料浆水解液,混合料浆水解液再经均质、浓缩、喷雾干燥即得成品。
本发明的复合营养大豆粉中蛋白质的氨基酸组成合理,而且原料还经过了大豆芽中多种酶的水解,不仅速溶性好、营养丰富、易吸收,还含有γ-氨基丁酸、苷元型黄酮、胡萝卜素等多种具有保健功效的营养物质,经常食用,可以对人体起到很好的保健作用。
具体实施方案
将葵花籽仁粉碎并过40目筛子得葵花籽仁粉。将胡萝卜洗净,用蔬菜切丝机切成胡萝卜丝。
称取一定质量的大豆芽,加入5倍质量的清水,用打浆机打成大豆芽浆,将大豆芽浆、胡萝卜丝和葵花籽仁粉按照质量比50:5:1的比例混合均匀,用胶体磨磨浆得混合料浆。
将混合料浆的pH调整到4.5,在48℃条件下维持2小时,再升温到58℃,保持3.5小时,然后煮沸5分钟灭酶,得混合料浆水解液,混合料浆水解液再经均质、浓缩、喷雾干燥即得成品。

1.一种复合营养大豆粉的制作方法,其特征是经过如下加工过程制备而成:
⑴将葵花籽仁粉碎并过40目筛子得葵花籽仁粉,将胡萝卜洗净,用蔬菜切丝机切成胡萝卜丝;
⑵称取一定质量的大豆芽,加入5倍质量的清水,用打浆机打成大豆芽浆,将大豆芽浆、胡萝卜丝和葵花籽仁粉按照质量比50:5:1的比例混合均匀,用胶体磨磨浆得混合料浆;
⑶将混合料浆的pH调整到4.2-4.8,在45-50℃条件下维持1.5-2小时,再升温到55-60℃,保持3-4小时,然后煮沸5分钟灭酶,得混合料浆水解液,混合料浆水解液再经均质、浓缩、喷雾干燥即得成品。
