and then, concentrating the secondary membrane concentrated juice to 65-degree BX through a falling film vacuum evaporation system, adding the powder, wherein the adding amount of the powder is 10% of the weight of the secondary membrane concentrated juice after evaporation concentration to 60-65-degree BX, uniformly stirring, boiling the sugar with an interlayer iron pan under the normal pressure state until the brix of the sugar cake is 94-95-degree BX, transferring the sugar cake to a crystallization assisting box, stirring and crystallizing, pouring the sugar cake into a wood mold paved with food paper subjected to strict sterilization, naturally cooling and molding the sugar cake, and packaging the sugar cake after paper removal to obtain the polyphenol-rich functional black sugar.
Example 3
A processing method of functional brown sugar rich in polyphenol comprises the following steps:
(1) squeezing sugarcane to obtain mixed juice, removing large particle impurities such as bagasse and the like by using a 80-mesh vibrating screen, and removing small particle impurities by using a 300-mesh rotary vibrating screen to obtain a raw material solution;
(2) adding lime milk into the raw material liquid to adjust the pH value to 7.2, heating the raw material liquid to 65 ℃ through a tubular heat exchanger, pumping the raw material liquid to a raw material tank buffer tank, and heating the raw material liquid to 90 ℃ through steam to obtain heated raw material liquid;
(3) clarifying and filtering with 200nm primary ceramic membrane with transmembrane pressure difference of 0.25Mpa, membrane surface flow rate of 5m/s and volume concentration multiple of 10 to remove most of impurities such as bacteria, ash and colloid in the mixed juice to obtain primary membrane clear juice and primary membrane filtration concentrated solution, and pumping the primary membrane concentrated solution into the raw material solution after passing through a membrane concentrated solution clarification treatment system;
(4) pumping the primary membrane clear juice into a secondary membrane feed liquid tank, filtering by a secondary membrane with the molecular weight cutoff of 2kDa, wherein the transmembrane pressure difference is 0.8Mpa, the membrane surface flow rate is 4.5m/s, the filtering temperature is 70 ℃, the volume concentration multiple is 8, and effectively intercepting polyphenols and the like in the primary membrane clear juice to respectively obtain secondary membrane clear juice with lower color value, lower turbidity and higher purity and secondary membrane concentrated juice rich in polyphenols; and pumping the secondary membrane clear juice to a clear juice box of a sugar refinery for producing white granulated sugar, and using the secondary membrane concentrated juice for producing the polyphenol-rich functional brown sugar, wherein the specific method comprises the following steps:
firstly, arbitrarily weighing donkey-hide gelatin, red dates, longan, angelica sinensis, codonopsis pilosula, medlar, lily, motherwort and ginger, wherein the weight of the donkey-hide gelatin, the red dates, the longan, the angelica sinensis, the codonopsis pilosula, the medlar, the lily, the motherwort and the ginger is 5% of the weight of the second-level membrane concentrated juice after evaporation concentration to 60-65 DEG BX, adding 8-10 times of water by weight, decocting for 60min, removing; or crushing, and sieving with a sieve of 80-100 meshes to obtain powder;
and then, concentrating the secondary membrane concentrated juice to 65-degree BX through a falling film vacuum evaporation system, adding the juice or powder obtained by decoction, uniformly stirring, decocting the sugar by using an interlayer iron pan under the normal pressure state until the brix of the sugar cake is 94-95-degree BX, transferring the sugar cake to a crystallization-promoting box, stirring for crystallization, pouring the sugar cake into a wood mold paved with food paper subjected to strict sterilization, naturally cooling and forming, removing the paper, and packaging to obtain the polyphenol-rich functional brown sugar.
Claims (3)
1. The processing method of the functional brown sugar rich in polyphenol is characterized by comprising the following steps:
(1) taking sugarcane without sugarcane tips and sugarcane leaves as raw materials, juicing and primarily removing impurities to obtain raw material liquid;
(2) adding lime milk into the raw material liquid to adjust the pH value to 7.0-7.5, and heating to 80-90 ℃ to obtain a heated raw material liquid;
(3) filtering and heating the raw material liquid by adopting a primary ceramic membrane with the aperture of 50-200 nm to obtain primary membrane clear juice and primary membrane concentrated juice, wherein the transmembrane pressure difference is 0.25-0.45 Mpa, the membrane surface flow rate is 4-5 m/s, and the volume concentration time is 8-12;
(4) filtering the primary membrane clear juice by using a secondary membrane with the molecular weight cutoff of 1-5 kDa to obtain secondary membrane clear juice and secondary membrane concentrated juice enriched with phenolic substances, wherein the transmembrane pressure difference is 0.6-1.0 Mpa, the membrane surface flow rate is 4.5-5.5 m/s, and the volume concentration multiple is 8-10;
(5) the secondary membrane concentrated juice is used for producing the functional brown sugar rich in polyphenol, and the specific method comprises the following steps:
firstly, selecting at least one or more of donkey-hide gelatin, red dates, longan, angelica, codonopsis pilosula, medlar, lily, motherwort and ginger as functional components, adding water, decocting to obtain juice or drying and crushing into powder,
then, evaporating and concentrating the secondary membrane concentrated juice to 60-65%oBX, adding the juice or powder of the above functional components, stirring, and decocting at normal pressure to give sugar cake with brix94~96oBX, pouring the sugar cake into a mould after stirring and crystallizing, naturally cooling and forming, and packaging to obtain the polyphenol-rich functional brown sugar;
in the step (5), 2 parts of donkey-hide gelatin, 10 parts of red date, 5 parts of longan, 1 part of angelica, 1 part of codonopsis pilosula, 0.5 part of medlar, 2 parts of lily, 1 part of motherwort and 1 part of ginger are counted in parts by weight; or in the step (5), 10 parts of donkey-hide gelatin, 5 parts of red date, 2 parts of longan, 2 parts of angelica, 1 part of codonopsis pilosula, 0.5 part of medlar, 3 parts of lily, 2 parts of motherwort and 3 parts of ginger by weight;
in the step (5), the total weight of the added functional components is the second-stage membrane concentrated juice, and the evaporation concentration is carried out until the total weight is 60-65%o5-15% of the post-BX weight.
2. The method of claim 1, wherein the secondary membrane juice is used for white sugar production.
3. The method for processing the functional brown sugar rich in polyphenol according to claim 1, wherein the primary membrane concentrated juice is saturated with carbonic acid, subjected to plate and frame filter pressing, and then pumped into a raw material liquid.
