本发明涉及日常生活中食用的调味品,具体地说是一种醋的改进。其组方为:5~10度白酒60~80份,果汁5~25份,醋酸菌菌液5~10份,蜂蜜1~4份,上述组份经混合均匀于30~32℃条件下发酵28~30天制成本果醋。本发明与常用的食用醋相比,具有发酵醋的色泽,味醇香,果味浓,酸甜适口,含丰富的维生素及矿物质等,可开脾健胃,润肺止咳喘,养心补肝,延年益寿,有医疗保健作用。

一种保健果醋
本发明涉及日常生活中食用的调味品,具体地说是一种醋的改进。
醋是人们日常生活中常用的调味品,它通常作为烹调佐料而入菜肴或食用,并无保健作用,不能成为保健品食用。
本发明的目的是提供一种具有营养成份的保健食用醋。
本发明的组方为:5~10度白酒60~80份,果汁5~25份,醋酸菌菌液5~10份,蜂蜜1~4份,上述组份经混合均匀于30~32℃条件下发酵28~30天制成本果醋。
本发明与常用的食用醋相比,具有发酵醋的色译,味醇香,果味浓,酸甜适口,含丰富的维生素及矿物质等,可开脾健胃,润肺止咳喘,养心补肝,延年益寿,有医疗保健作用。还可防暑降温,适量加糖和香料可做保健饮料醋。
本发明中所说的果汁为天然鲜果洁净,粉粹,糖化3~5小时煮沸消毒所得的过滤液,所选用的鲜果以山楂、苹果、梨为宜。所用醋酸菌菌液为用醋酸菌三次扩繁而成;所用白酒也可采用食用酒精。
实施例
1.取加水兑制为7度的白酒70份,山渣洁净、粉碎、糖化4小时煮沸消毒过滤得果汁液20份,醋酸菌菌液10份,蜂蜜3份;按上述配比混合搅拌均匀于温度为32℃条件下发酵30天制成本果醋。
2.取6°酒或6°食用酒精,加入苹果制成的果汁22份、醋酸菌菌液8份,蜂蜜2份,搅拌均匀后于温度30℃条件下发酸28天为本果醋。

Claims (3)

1.一种保健果醋,其特征是所用组方为5~10度白酒60~80份,果汁5~25份,醋酸菌菌液5~10份,蜂蜜1~4份;上述组份经混合均匀于30~32℃条件下发酵28~30天制成本果醋。
2.按照权利要求1所述的保健果醋,其特征是所说的果汁为天然鲜果洁净、粉粹、糖化3~5小时煮沸消毒,所得的过滤液;所选用的鲜果为山楂、苹果或梨。
3.按照权利要求1所述的保健果醋,其特征是所用醋酸菌菌液为用醋酸菌三次扩繁而成;所用白酒采用食用酒精。
