技术领域
本发明属于食品以及加工领域,具体来说,是一种能够调理肠胃功能、提高免疫力的食疗八宝粥,本发明还提供了该食疗粥的制备方法。
背景技术
“八宝粥”的原意是指用八种不同的原料熬制成粥。但是在今天,“八宝粥”的用料主要是四大类原料:米、豆类、干果类、中药材,其成分基本上都超过8种。传统的“八宝粥”一般以粳米、糯米或黑糯米为主料,再添加辅料,如绿豆、赤豆、扁豆、白扁豆、红枣、桃仁、花生、莲子、桂圆、松籽仁、山药、百合,枸杞子、芡实、薏仁米等熬制成粥。根据现代医学观点,粥作为一种半流体食品,可以调整食欲,使胃口增加,而且还有利于肠胃的吸收。
但是现有市面上的八宝粥食疗效果有限,从很多专利文献公开的技术方案来看,其主要是以某食材为主或者以某单方面疗效进行改进,比如申请号03138755.1 公开的“芦荟八宝粥”,申请号201110145267.6公开的“花生蛋白八宝粥”;申请号201310450065.1公开的“一种降血脂八宝粥”,申请号201310263563.5公开的“一种具有美容功效的八宝粥及其制备方法”,申请号201110196590.6公开的具有抗癌效果的“一种八宝粥及制备方法”,因此八宝粥类食品在全方面调理人体机能,提高免疫力的效果上没有得到充分体现。
发明内容
鉴于现有技术存在的粥类食品食疗效果单一的问题的问题,本发明旨在提供一种能够全方面调理人体机能、提高免疫力的食疗粥。
为实现上述技术目的,本发明采用的技术方案如下:
一种食疗粥,包括如下重量份配比的成分:糯米20~25份,黄芪3~5份,黄精1~5份,葛根8~15份,黒豆8~15份,山药8~15份,黑木耳1~3份,核桃仁1~3份,红枣2~3份,枸杞2~3份,芝麻2~3份,百合1~3份和水300~500份。
优选地,所述食疗粥配比为:糯米22份,黄芪3份,黄精2份,葛根10份,黒豆12份,山药12份,黑木耳2份,核桃仁2份,红枣3份,枸杞3份,芝麻3份,百合2份和水400份。
本发明同时还提供了该食疗粥的制备方法,包括如下步骤:
(1)原料准备(重量份):糯米20~25份,黄芪3~5份,黄精1~5份,葛根8~15份,黒豆8~15份,山药8~15份,黑木耳1~3份,核桃仁1~3份,红枣2~3份,枸杞2~3份,芝麻2~3份和百合1~3份;
所述糯米、黑豆、芝麻选择当年新产;所述黄芪、黄精、葛根、山药、黑木耳、核桃仁、红枣、枸杞、百合选择成熟新鲜的优质干制品;
(2)将黄芪、黄精、葛根、黑豆、山药、朩耳打粉,混合后加入100~200份水,常温下搅拌成悬浮液体,然后加热到90~110℃蒸煮10~12分钟,直至成糊状液体;
(3)将糯米、核桃仁、红枣、枸杞、芝麻、百合混合后加入200~300份水,加热到90~110℃蒸煮40~50分钟,得到粥状液体;
(4)将步骤(3)中制好的粥状液体与步骤(2)中制好的糊状液体混合,然后装罐、灭菌,冷却到常温,即得食疗粥成品。
优选地,所述步骤(1)中原料重量份配比为:糯米22份,黄芪3份,黄精2份,葛根10份,黒豆12份,山药12份,黑木耳2份,核桃仁2份,红枣3份,枸杞3份,芝麻3份和百合2份。
优选地,所述步骤(2)中加入水的量为150份,所述步骤(3)中加入水的量为250份。
本发明相比现有技术,该食疗粥具有滋阴、补肾、健脾、养胃、润肺养心、调肝明目、补血活血、补中益气、丰胸健体、除湿觧酒、排毒抗哀、增强人体免疫力等功效,长期食用能够觧除人体亚健康,延年益寿,对于一些病患者来说,有助于调理人体机能。
具体实施方式
为了使本领域的技术人员可以更好地理解本发明,下面结合实施例对本发明技术方案进一步说明。
该食疗粥中主要成分的功效和作用如下:
黄芪:其含皂甙、蔗糖、多糖、多种氨基酸、叶酸及硒、锌、铜等多种微量元素,有增强机体免疫功能、保肝、利尿、抗衰老、抗应激、降压作用,能显著增加血液中的白细胞总数,促进中性粒细胞及巨噬细胞的吞噬功能和杀菌能力。
黄精:味甘、性平,常被用作治疗脾胃虚弱引起的食欲不振、面色萎黄、精神疲倦、少气无力等,具有补气养阴,健脾,润肺,益肾以及降血压、降血糖作用,可以增加冠状动脉血流量,起降低血脂和延缓动脉粥样硬化。
葛根:可降低血压,能显著增加缺血组织的血液供应量,降低胆固醇和血粘度,抑制血小板聚集,改善微循环,葛根粉中所含的富“硒”元素,具有一定的防癌抗癌之功效,同时葛粉还具有生津止渴,抗菌解毒的作用,对冠心病,对感冒引起的咽喉痛疼、口舌生疮、小孩清火泻痢有很好的治疗作用。
黑豆:具有高蛋白(36%~40%)、低热量的特性,其中蛋白质含量高达36%—40%,还有18种氨基酸(包括人体必须的8种酸含量)以及19种油脂,不饱和酸含量达80%,吸收率高达95%以上,且黑豆粉补虚益肾、生血补血,对年轻女性来说,还有美容养颜,抗衰老的疗效。
山药:具有健脾益胃助消化、固肾益精、降低血糖、延年益寿的功效,特别是山药中所含的热量和碳水化合物只有同质量红薯的一半左右,不含脂肪,蛋白质含量也比红薯高;山药的主要成分是淀粉,其中的一部分可以转化为淀粉的分解产物糊精,糊精可以帮助消化;山药含有多种微量元素,其中钾的含量较高,所含维生素的种类和数量较少,几乎不含胡萝卜素。
黑木耳:具有益气强身、滋肾养胃、活血等功能,它能抗血凝、抗血栓、降血脂、降低血粘、软化血管,使血液流动动畅,减少心血管病发生。黑木耳所含的植物碱具有促进消化道、泌尿道各种腺体分泌的特性,植物碱能协同这些分泌物催化结石,润滑肠道,经常食用不但利于体内产生的垃圾及时排出体外,还能对胆结石、肾结石也有较好的化解功能。
核桃仁:具有补血养气、补肾填精、止咳平喘、润燥通便等功能,核桃仁有直接的抑菌消炎作用,其富含的油脂,有利于润泽肌肤,保持人体活力,同时还能够防癌抗癌,可有效防止动脉硬化,降低胆固醇,核桃仁中含有较多的蛋白质和人体必需的不饱和脂肪酸,这些成分有非常好的补脑效果,能滋养脑细胞,增强脑功能。
红枣:具有滋阴补阳,补血之功效,能提高人体免疫力,并可抑制癌细胞,能促进白细胞的生成,降低血清胆固醇,提高血清白蛋白,保护肝脏,预防骨质疏松、防治脑供血不足、防治心血管病、预防胆结石。
枸杞:滋肾,润肺,补肝,明目,能提高机体免疫力,调节血糖,降低血压,防治高血压、心脏病、动脉硬化等。其富含胡萝卜素、维生素A、B1、B2、C和钙、铁等眼睛保健的必需营养,还富含甜菜碱,可抑制脂肪在肝细胞内沉积、促进肝细胞再生,因而具有保护肝脏作用。
芝麻:富含大量的脂肪和蛋白质,其中主要为油酸、亚油酸、棕榈酸、花生酸等的甘油脂;又含甾醇、芝麻素、芝麻酚、叶酸、烟酸、蔗糖、卵磷脂、蛋白质;还有膳食纤维、糖类、维生素a、维生素B1,B2、尼克酸、维生素E、卵磷脂、钙、铁、镁等营养成分。芝麻中的亚油酸有调节胆固醇的作用,维生素E能防止过氧化脂质对皮肤的危害,抵消或中和细胞内有害物质游离基的积聚,可使皮肤白皙润泽,并能防止各种皮肤炎症。
百合:具有养心安神,润肺止咳的功效,对病后虚弱的人非常有益。其含有淀粉、蛋白质、脂肪及钙、磷、铁、镁、锌、硒、维生素B1、维生素B2、维生素C,泛酸、胡萝卜素等营养素以及如秋水仙碱等多种生物碱。这些成分综合作用于人体,不仅具有良好的营养滋补之功,而且还对秋季气候干燥而引起的多种季节性疾病有一定的防治作用。
其中黄芪、黄精味甘,为避免影响口感,加入量不宜太多。
实施例1:
精选当年新产的且无污染、无霉变、无虫蛀的糯米、黑豆、芝麻,以及成熟新鲜的黄芪、黄精、葛根、山药、黑木耳、核桃仁、红枣、枸杞、百合等优质干制品。准确称取糯米23克,黄芪4克,黄精3克,葛根10克,黒豆13克,山药13克,黑木耳1克,核桃仁1克,红枣2克,枸杞2克,芝麻3克和百合3克。先将称好的黄芪、黄精、葛根、黑豆、山药和朩耳利用超微粉碎机粉碎成粉(可以混合后一起粉碎,也可以分别粉碎后再混合),然后在所得粉状原料中加入160克水,常温下搅拌成悬浮液体,然后加热到108℃并持续蒸煮11分钟,直至成糊状液体,再将称好的糯米、核桃仁、红枣、枸杞、芝麻和百合混合,加入220克水,加热到105℃并持续蒸煮45分钟,得到粥状液体;将粥状液体与糊状液体均匀混合后装罐、灭菌,冷却后得到食疗粥成品。
实施例2:
精选当年新产的且无污染、无霉变、无虫蛀的糯米、黑豆、芝麻,以及成熟新鲜的黄芪、黄精、葛根、山药、黑木耳、核桃仁、红枣、枸杞、百合等优质干制品。准确称取糯米20克,黄芪3克,黄精2克,葛根10克,黒豆15克,山药10克,黑木耳2克,核桃仁2克,红枣3克,枸杞3克,芝麻2克和百合1克。先将称好的黄芪、黄精、葛根、黑豆、山药和朩耳利用超微粉碎机粉碎成粉,然后在所得粉状原料中加入130克水,常温下搅拌成悬浮液体,然后加热到95℃并持续蒸煮12分钟,直至成糊状液体,再将称好的糯米、核桃仁、红枣、枸杞、芝麻和百合混合,加入270克水,加热到110℃并持续蒸煮45分钟,得到粥状液体;将粥状液体与糊状液体均匀混合后装罐、灭菌,冷却后得到食疗粥成品。
实施例3:
精选当年新产的且无污染、无霉变、无虫蛀的糯米、黑豆、芝麻,以及成熟新鲜的黄芪、黄精、葛根、山药、黑木耳、核桃仁、红枣、枸杞、百合等优质干制品。准确称取糯米25克,黄芪5克,黄精3克,葛根15克,黒豆12克,山药12克,黑木耳3克,核桃仁2克,红枣3克,枸杞3克,芝麻2克和百合2克。先将称好的黄芪、黄精、葛根、黑豆、山药和朩耳利用超微粉碎机粉碎成粉,然后在所得粉状原料中加入180克水,常温下搅拌成悬浮液体,然后加热到105℃并持续蒸煮12分钟,直至成糊状液体,再将称好的糯米、核桃仁、红枣、枸杞、芝麻和百合混合,加入300克水,加热到105℃并持续蒸煮42分钟,得到粥状液体;将粥状液体与糊状液体均匀混合后装罐、灭菌,冷却后得到食疗粥成品。
实施例4:
精选当年新产的且无污染、无霉变、无虫蛀的糯米、黑豆、芝麻,以及成熟新鲜的黄芪、黄精、葛根、山药、黑木耳、核桃仁、红枣、枸杞、百合等优质干制品。准确称取糯米22克,黄芪3克,黄精2克,葛根10克,黒豆12克,山药12克,黑木耳2克,核桃仁2克,红枣3克,枸杞3克,芝麻3克和百合2克。先将称好的黄芪、黄精、葛根、黑豆、山药和朩耳利用超微粉碎机粉碎成粉,然后在所得粉状原料中加入150克水,常温下搅拌成悬浮液体,然后加热到100℃并持续蒸煮10分钟,直至成糊状液体,再将称好的糯米、核桃仁、红枣、枸杞、芝麻和百合混合,加入250克水,加热到100℃并持续蒸煮45分钟,得到粥状液体;将粥状液体与糊状液体均匀混合后装罐、灭菌,冷却到常温后得到食疗粥成品。

3.一种食疗粥的制备方法,其特征在于,包括如下步骤:
(1)原料准备(重量份):糯米20~25份,黄芪3~5份,黄精1~5份,葛根8~15份,黒豆8~15份,山药8~15份,黑木耳1~3份,核桃仁1~3份,红枣2~3份,枸杞2~3份,芝麻2~3份和百合1~3份;
所述糯米、黑豆、芝麻选择当年新产;所述黄芪、黄精、葛根、山药、黑木耳、核桃仁、红枣、枸杞、百合选择成熟新鲜的优质干制品;
(2)将黄芪、黄精、葛根、黑豆、山药、朩耳打粉,混合后加入100~200份水,常温下搅拌成悬浮液体,然后加热到90~110℃蒸煮10~12分钟,直至成糊状液体;
(3)将糯米、核桃仁、红枣、枸杞、芝麻、百合混合后加入200~300份水,加热到90~110℃蒸煮40~50分钟,得到粥状液体;
(4)将步骤(3)中制好的粥状液体与步骤(2)中制好的糊状液体混合,然后装罐、灭菌,冷却到常温,即得食疗粥成品。
