本发明涉及保健饮料加工技术领域,尤其是一种以鲜桑葚为主要原料的保健果汁饮料及其制备方法。
背景技术
桑葚作为中药使用在我国已经有三千多年的历史,其味甘性寒,入心、肝、肾经,有补肝益肾、滋阴养血、驻容颜、抗衰老之功效。凡阴亏血少所致的眩晕耳鸣、神衰不寐、目暗盗汗、肢体麻木、大便秘结等症均可服用。由于鲜桑葚保鲜时间短于多数水果,因而中医多用干桑葚。鲜桑葚制成干桑葚,无论用何种干制工艺,鲜桑葚中大量的维生素和珍贵的花青素都几乎损失殆尽,对抗衰老、降血压血脂等功效大大降低,造成极大的资源浪费。
近年来,为了尽量保持鲜桑葚原有的成分,人们陆续开发了各种桑葚酒、桑葚醋、桑葚汁。虽然这些鲜桑葚饮料在一定程度上保持了鲜桑葚的营养成分,但是,由于桑葚尤其是鲜桑葚偏补阴血,没有补气升阳的药物相辅佐容易引起湿滞;另外,鲜桑葚偏寒,对于阳虚及气虚的人均不适合饮用。

本发明所要解决的问题是提供一种桑葚山楂饮及其制备方法,以制备出适合大多数人长期引用的具有补气养血保健作用的桑葚山楂饮。
为了解决上述技术问题,本桑葚山楂饮的技术方案是:它的有效成分包括有下列重量份的原料制成:鲜桑葚300~320,鲜山楂145~155,炙甘草30~35。

D、将步骤C所得的药液混合物与步骤A获得的桑葚发酵物混合后继续发酵46小时~52小时,过滤,加入鲜桑葚相同重量份的纯净水,再经水浴消毒,封装。

1、本方法中以鲜桑葚为君,补肝肾之阴,养肝之血;以鲜山楂为佐,由于山楂性微温,归脾胃两经,可以升脾阳以防阴过盛导致脾失建运、湿停内滞产生湿热,建胃气以消腹满积滞;辅以炙甘草,益虚补血气而复脉,气血双补,并调和著药。三味中药形成的桑葚山楂饮,三味中药即可完成气血在五脏间的平衡,毒副作用极小,且长期饮用也不会造成五脏间的失衡。本桑葚山楂饮养血而不滞,补气而不热,补中有消,适合于大多数人长期引用,尤其适合于女性,有补气养血及通便瘦身的作用。
2、本桑葚山楂饮的制备方法选用的鲜果未经过蒸煮烤等工艺,仅仅是破碎后进行发酵,因而可以保持绝大部分维生素及花青素,既增强了保健效果,又减少了资源的浪费;
3、鲜桑葚进行了两次发酵,第一次破碎后加糖发酵,代替了蒸煮,使鲜桑葚的有效成分快速析出,同时使析出的汁液有很好的口感,增加了酸甜味,并略带酒的甘醇;
4、鲜桑葚第二次与鲜山楂和炙甘草液一同发酵,既可以使鲜山楂有效成分快速析出,又可以使三味中药的有效成分相互渗透、相互作用;且发酵过程可以起到杀菌的作用,无需使用破坏营养成分的高温灭菌,也无需添加有毒的防腐剂。

实施例一:
制备本桑葚山楂饮,包括如下步骤:使用以下重量份的组分为原料:鲜桑葚320份,鲜山楂145份,炙甘草30份;
A、将320份的连桑葚籽的鲜桑葚加入30份的黑糖,搅拌20分钟,使鲜桑葚破裂,并与糖混合均匀,发酵26小时,形成桑葚发酵物;
B、将30份的炙甘草用其重量6倍的水煎煮2小时,收集煎出的药液;再加入炙甘草重量6倍的水煎煮1.4小时,收集煎出的药液;再次加入炙甘草重量6倍的水煎煮1小时,收集煎出的药液并合并前两次的药液;
C、将145份的鲜山楂连着山楂籽一起粉碎,用35目筛过筛,放入步骤B所得的药液内浸泡30分钟,形成药液混合物;
D、将步骤C所得的药液混合物与步骤A获得的桑葚发酵物混合后继续发酵46小时,过滤,加入鲜桑葚相同重量份的纯净水,再经水浴消毒,封装,即可得到桑葚山楂饮。
实施例二:
制备本桑葚山楂饮,包括如下步骤:使用以下重量份的组分为原料:鲜桑葚300份,鲜山楂150,炙甘草33份;
A、将300份连桑葚籽的鲜桑葚加入31份的黑糖,搅拌10分钟,使鲜桑葚破裂,并与糖混合均匀,发酵32小时,形成桑葚发酵物;
B、将33份的炙甘草用其重量6倍的水煎煮2小时,收集煎出的药液;再加入炙甘草重量6倍的水煎煮1.4小时,收集煎出的药液;再次加入炙甘草重量6倍的水煎煮1小时,收集煎出的药液并合并前两次的药液;
C、将150份的鲜山楂连着山楂籽一起粉碎,用35目筛过筛,放入步骤B所得的药液内浸泡40分钟,形成药液混合物;
D、将步骤C所得的药液混合物与步骤A获得的桑葚发酵物混合后继续发酵52小时,过滤,加入鲜桑葚相同重量份的纯净水,再经水浴消毒,封装,即可得到桑葚山楂饮。
实施例三:
制备桑葚山楂饮,包括如下步骤:使用以下重量份的组分为原料:鲜桑葚310份,鲜山楂155,炙甘草35份;
A、将310份连桑葚籽的鲜桑葚加入32份的红糖,搅拌15分钟,使鲜桑葚破裂,并与糖混合均匀,发酵30小时,形成桑葚发酵物;
B、将35份的炙甘草用其重量6倍的水煎煮2小时,收集煎出的药液;再加入炙甘草重量6倍的水煎煮1.4小时,收集煎出的药液;再次加入炙甘草重量6倍的水煎煮1小时,收集煎出的药液并合并前两次的药液;
C、将155份的鲜山楂连着山楂籽一起粉碎,用35目筛过筛,放入步骤B所得的药液内浸泡40分钟,形成药液混合物;
D、将步骤C所得的药液混合物与步骤A获得的桑葚发酵物混合后继续发酵50小时,过滤,加入鲜桑葚相同重量份的纯净水,再经水浴消毒,封装即可得到桑葚山楂饮。

1.一种桑葚山楂饮的制备方法,其特征在于:桑葚山楂饮的有效成分包括有下列重量份的原料制成:鲜桑葚300~320,鲜山楂145~155,炙甘草30~35;

A、将300~320重量份连桑葚籽的鲜桑葚加入30~32重量份的糖,搅拌10分钟~20分钟,使鲜桑葚破裂,并与糖混合均匀,发酵26小时~32小时,形成桑葚发酵物;
B、将30~35重量份的炙甘草用其重量6倍的水煎煮2小时,收集煎出的药液;再加入炙甘草重量6倍的水煎煮1.4小时,收集煎出的药液;再次加入炙甘草重量6倍的水煎煮1小时,收集煎出的药液并合并前两次的药液;
C、将145~155重量份的鲜山楂连着山楂籽一起粉碎,用35目筛过筛,放入步骤B所得的药液内浸泡30分钟~40分钟,形成药液混合物;
D、将步骤C所得的药液混合物与步骤A获得的桑葚发酵物混合后继续发酵46小时~52小时,过滤,加入鲜桑葚相同重量份的纯净水,再经水浴 消毒,封装。
2.根据权利要求1所述的桑葚山楂饮的制备方法,其特征在于:所述糖为黑糖或红糖。
