本发明属于特殊营养食品技术领域,涉及一种食品配方,尤其涉及一种含支链氨基酸的黑果腺肋花楸食品。
背景技术
随着生活节奏的加快,办公室上班族人群的日常作息越来越不规律,工作压力不断增大,加上空气质量不好,长期端坐于办公室,缺乏体育运动,高速运转的生活方式及压力致使身体长期处于亚健康状况,经常会感到身体疲劳、乏力、记忆力减弱、免疫力下降。
长期处于疲劳状态,不但不利于生活工作,更会增加患慢性疾病的风险,如高血压、糖尿病、冠心病、心脑血管疾病等。关于疲劳产生的机制国内外都有不少研究,并建立过不少假说。如巴甫洛夫的保护性抑制学说认为无论是体力疲劳还是脑力疲劳,都是大脑皮层保护性抑制发展的结果,认为大脑皮层在高强度或长时间工作过程中处于一种高度兴奋状态,脑细胞工作强度较安静时明显增加,使大脑皮层细胞工作能力下降,为了防止脑细胞的进一步耗损,大脑皮层由兴奋状态转为抑制,这种抑制即为保护性抑制;哈佛大学疲劳研究所的内环境稳定性失调学说认为疲劳是由于pH值下降,水盐代谢紊乱和血浆渗透压改变等因素引起的;Syed的能源衰竭学说认为疲劳的产生主要是由于运动过程中体内能源物质大量消耗并且得不到及时补充,且运动强度、时间不同,消耗的能源物质也不相同,产生不同的运动性疲劳;氧自由基及其引起的脂质过氧化反应增强学说认为氧自由基及其引起的脂质过氧化反应可以攻击细胞及线粒体等其他生物膜,造成离子和能量代谢紊乱,从而导致运动性疲劳。这些观点虽然有局限性,然而在现代生理学研究中仍然得到许多实验的支持和补充,被认为是阐明疲劳机制的基础。
办公室上班族人群产生疲劳的主要表现是脑力疲劳、记忆力降低、免疫力下降,其产生的主要原因是生活工作压力大,用脑过度,不合理的饮食结构,营养不均衡,生活不规律,缺乏运动。其中不合理的饮食结构以及不规律的生活习惯容易使人体缺乏支链氨基酸、α-亚麻酸、亚油酸等人体必需营养素,而这些营养素的缺乏是导致脑力疲劳的主要原因之一。
发明内容
本发明的目的在于提供一种含支链氨基酸的食品,该食品能够补充人体必需的营养素支链氨基酸、α-亚麻酸、亚油酸,食用时可根据营养素每日需要量来合理配比,满足人体每日需求,并且能够提高人体免疫力、减轻脑力疲劳、预防蛋白分解和肌肉丢失。
为实现上述目的,本发明采用如下的技术方案:
一种含支链氨基酸的黑果腺肋花楸食品,按照质量份数计,包括黑果腺肋花楸粉100-150份,支链氨基酸4-8份,肌氨酸2-3份,药食同源提取物1-4份,紫苏籽油1-2份、亚麻籽油1-2份和食品添加剂;食品添加剂的质量为黑果腺肋花楸粉质量的0.5-1‰,药食同源提取物为甘草提取物、桔梗提取物的一种或两种。
每100g黑果腺肋花楸粉中原花青素质量≥1.5g、总黄酮质量≥0.6g、总三萜质量≥0.08g。
所述支链氨基酸为质量比(2-3):(1-1.5):(1-1.5)的L-亮氨酸、L-异亮氨酸、L-缬氨酸的混合物,并且L-亮氨酸、L-异亮氨酸、L-缬氨酸均为结晶粉末,纯度≥98%。
所述肌氨酸为白色结晶食品级粉末,纯度≥98%。
所述药食同源提取物为甘草提取物和桔梗提取物的混合物时,甘草提取物与桔梗提取物的质量比为(0.5-2):(0.5-2)。
所述紫苏籽油中α-亚麻酸质量含量≥35%,亚油酸质量含量≥15%;亚麻籽油中以质量百分数计,α-亚麻酸质量含量≥35%,亚油酸质量含量≥15%。
所述食品添加剂为酸味剂、甜味剂、营养添加剂、食用色素、香精、粘合剂、润滑剂、乳化剂、抗结剂、黏稠剂、抗氧化剂、助悬剂、增溶剂、助溶剂的一种或两种以上。
所述酸味剂为柠檬酸、苹果酸、酒石酸、琥珀酸、乳酸、富马酸、己二酸、乙酸、葡萄糖酸、马来酸、丙二酸、抗坏血酸、衣康酸、植酸、柠檬酸盐、苹果酸盐、酒石酸盐、琥珀酸盐、乳酸盐、富马酸盐、己二酸盐、乙酸盐、葡萄糖酸盐、马来酸盐、丙二酸盐、抗坏血酸盐、衣康酸盐、植酸盐中的一种或两种以上;
所述甜味剂为低聚糖、蔗糖、麦芽糖、果糖、乳糖、葡糖糖、木糖醇、阿斯巴甜、糖醇、海藻糖的一种或两种以上;

所述酸味剂为柠檬酸、苹果酸或酒石酸。
与现有技术相比,本发明具有的有益效果:
1.本发明根据疲劳产生的不同机制,采用黑果腺肋花楸为主要原料,配以人体必需的支链氨基酸,以及含人体必需的α-亚麻酸、亚油酸丰富的紫苏籽油、亚麻籽油,还配以对人体有重要作用的肌氨酸和含有药食同源的植物提取物,不光含有丰富的营养素,还含有一定的药效成分,能够补充营养素、提高人体免疫力。
2.由于人体每日大约需要亮氨酸2.4g、异亮氨酸1.3g、缬氨酸0.6g、α-亚麻酸2.2g,所以本发明中主要营养素支链氨基酸、α-亚麻酸、亚油酸的质量份数参考人体每日需要量进行合理配方,每日食用100g本发明食品即可补充人体每日所需求的支链氨基酸、α-亚麻酸。该食品可以直接入口服用,可以咀嚼、含食、吞咽、冲泡,亦可加入其他食物中混合食用。

进一步的,由于L型的支链氨基酸不仅是人体必需氨基酸之一,最主要是其比D型有更高的吸收和利用率,所以本发明采用L-亮氨酸、L-异亮氨酸、L-缬氨酸的组合物。
具体实施方式
一种含支链氨基酸的食品,按照质量份数计,包括黑果腺肋花楸粉100-150份,支链氨基酸4-8份,肌氨酸2-3份,药食同源提取物1-4份,紫苏籽油1-2份、亚麻籽油1-2份和食品添加剂;食品添加剂的质量为黑果腺肋花楸粉质量的0.5-1‰,药食同源提取物为甘草提取物、桔梗提取物的一种或两种。
本发明中每100g黑果腺肋花楸粉中的原花青素质量≥1.5g、总黄酮(以芦丁计)质量≥0.6g、总三萜(以熊果酸计)质量≥0.08g。支链氨基酸为L-亮氨酸、L-异亮氨酸、L-缬氨酸的组合物,其质量比为(2-3):(1-1.5):(1-1.5);L型的支链氨基酸不光是人体必需氨基酸之一,最主要是其比D型有更高的吸收和利用率。L-亮氨酸、L-异亮氨酸、L-缬氨酸均为结晶粉末,纯度≥98%的食品级原料。肌氨酸为白色结晶粉末食品级原料,纯度≥98%。甘草提取物的规格为10:1,桔梗提取物的规格为10:1,并且当药食同源提取物为甘草提取物和桔梗提取物的混合物时,甘草提取物与桔梗提取物的质量比为(0.5-2):(0.5-2)。紫苏籽油中的α-亚麻酸质量含量≥35%,亚油酸质量含量≥15%。亚麻籽油中的α-亚麻酸质量含量≥35%,亚油酸质量含量≥15%。
本发明的食品中主要营养素支链氨基酸、α-亚麻酸、亚油酸的配比参考人体每日需要量进行合理配方。人体每日大约需要亮氨酸2.4g、异亮氨酸1.3g、缬氨酸0.6g、α-亚麻酸2.2g。本发明的食品中每100-150g产品,若添加5g支链氨基酸含有营养素L-亮氨酸2.0-3.0g、L-异亮氨酸1.0-1.5g、L-缬氨酸1.0-1.5g、α-亚麻酸0.7-1.4g,是补充支链氨基酸、α-亚麻酸很好的营养补充食品。

黑果腺肋花楸:系蔷薇科腺肋花楸属的一个种,落叶灌木,是以产果实为主集食用、药用、园林和生态价值于一身的树种。该树种原产于美国东北部,欧洲已有100余年的引种栽培历史,加拿大、俄罗斯、保加利亚、匈牙利、波兰、捷克等国家都有相当规模的栽培和相关的加工产业。我国原无此树种。辽宁省干旱地区造林研究所利用所承担的国家***“948项目”,先后从国外引进8个品种。1990年,从朝鲜引进一个品种,朝鲜是从捷克引进的。1998年,从俄罗斯引进1个品种。2001年,从美国引进6个品种。目前,我国已拥有了该树种的较丰富的种质资源基础。

支链氨基酸:蛋白质中的三种常见氨基酸,即亮氨酸、缬氨酸和异亮氨酸的统称。作用机理:这类氨基酸以两种特殊方式促进合成代谢(肌肉增长):①释放胰岛素,②释放生长激素。支链氨基酸中最重要的是亮氨酸,即酮异己酸(KIC)的前身。KIC可增加肌肉,减少脂肪,并为人体提供营养。支链氨基酸的作用,减轻脑力疲劳,有助于预防蛋白分解和肌肉丢失。

桔梗提取物:是从桔梗根中提取的有药用价值的成份,为棕黄色粉末。主要含有五环三萜的多糖甙,其他含多聚糖、甾体及其糖甙、脂肪油、脂肪酸等。桔梗总皂甙完全水解产生的皂甙元有桔梗皂甙元,远志酸和少量桔梗酸,桔梗皂甙,远志苷等。有宣肺,利咽,祛痰,排脓的功效。用于咳嗽痰多,胸闷不畅,咽痛,音哑,肺痈吐脓,疮疡脓成不溃。

一种含支链氨基酸的黑果腺肋花楸食品,按照质量份数计,包括黑果腺肋花楸粉140份,支链氨基酸5.5份,肌氨酸2份,药食同源提取物3.5份,紫苏籽油1.5份、亚麻籽油1份和食品添加剂;食品添加剂的质量为黑果腺肋花楸粉质量的0.6‰,药食同源提取物为桔梗提取物。食品添加剂包括苹果酸、糖醇、钙、高粱红、薄荷醇、甲基纤维素、硬脂酸镁、丙二醇脂肪酸酯以及滑石粉。支链氨基酸质量比2.5:1:1.3的L-亮氨酸、L-异亮氨酸、L-缬氨酸的混合物。
Claims (9)
1.一种含支链氨基酸的黑果腺肋花楸食品,其特征在于,按照质量份数计,包括黑果腺肋花楸粉100-150份,支链氨基酸4-8份,肌氨酸2-3份,药食同源提取物1-4份,紫苏籽油1-2份、亚麻籽油1-2份和食品添加剂;食品添加剂的质量为黑果腺肋花楸粉质量的0.5-1‰,药食同源提取物为甘草提取物、桔梗提取物的一种或两种。
2.根据权利要求1所述的一种含支链氨基酸的黑果腺肋花楸粉食品,其特征在于,每100g黑果腺肋花楸粉中原花青素质量≥1.5g、总黄酮质量≥0.6g、总三萜质量≥0.08g。
3.根据权利要求1所述的一种含支链氨基酸的黑果腺肋花楸粉食品,其特征在于,所述支链氨基酸为质量比(2-3):(1-1.5):(1-1.5)的L-亮氨酸、L-异亮氨酸、L-缬氨酸的混合物,并且L-亮氨酸、L-异亮氨酸、L-缬氨酸均为结晶粉末,纯度≥98%。
4.根据权利要求1所述的一种含支链氨基酸的黑果腺肋花楸粉食品,其特征在于,所述肌氨酸为白色结晶食品级粉末,纯度≥98%。
5.根据权利要求1所述的一种含支链氨基酸的黑果腺肋花楸粉食品,其特征在于,所述药食同源提取物为甘草提取物和桔梗提取物的混合物时,甘草提取物与桔梗提取物的质量比为(0.5-2):(0.5-2)。
6.根据权利要求1所述的一种含支链氨基酸的黑果腺肋花楸粉食品,其特征在于,所述紫苏籽油中α-亚麻酸质量含量≥35%,亚油酸质量含量≥15%;亚麻籽油中以质量百分数计,α-亚麻酸质量含量≥35%,亚油酸质量含量≥15%。
7.根据权利要求1所述的一种含支链氨基酸的黑果腺肋花楸粉食品,其特征在于,所述食品添加剂为酸味剂、甜味剂、营养添加剂、食用色素、香精、粘合剂、润滑剂、乳化剂、抗结剂、黏稠剂、抗氧化剂、助悬剂、增溶剂、助溶剂的一种或两种以上。
8.根据权利要求7所述的一种含支链氨基酸的黑果腺肋花楸粉食品,其特征在于,
所述酸味剂为柠檬酸、苹果酸、酒石酸、琥珀酸、乳酸、富马酸、己二酸、乙酸、葡萄糖酸、马来酸、丙二酸、抗坏血酸、衣康酸、植酸、柠檬酸盐、苹果酸盐、酒石酸盐、琥珀酸盐、乳酸盐、富马酸盐、己二酸盐、乙酸盐、葡萄糖酸盐、马来酸盐、丙二酸盐、抗坏血酸盐、衣康酸盐、植酸盐中的一种或两种以上;
所述甜味剂为低聚糖、蔗糖、麦芽糖、果糖、乳糖、葡糖糖、木糖醇、阿斯巴甜、糖醇、海藻糖的一种或两种以上;
所述营养添加剂为氨基酸、维生素C、硫胺素、核黄素、烟酸、泛酸、生物素、叶酸、钴胺素、钙、铁、锌、硒的一种或两种以上。
9.根据权利要求7所述的一种含支链氨基酸的黑果腺肋花楸粉食品,其特征在于,所述酸味剂为柠檬酸、苹果酸或酒石酸。
