本发明公开了一种含鱼腥草的植物饮料及其制备方法,包括如下步骤:采用高压和双水相萃取处理鱼腥草原料得到浸膏,然后将水提后得到的山菊花和广西甜茶浸膏混合,加纯净水溶解,均质,过滤,灭菌,分装得到。相比现有技术简单的水提,可以更好的将鱼腥草中含有的有效成分鱼腥草素、鱼腥草挥发油分解出,利于后续工艺处理后利于人体吸收。本发明不添加蔗糖,而是通过广西甜茶来调节饮料的口感,广西甜茶中含有丰富的甜茶素,不仅可以作为甜味剂调节口感,而且还适合糖尿病患者饮用。本发明不添加防腐剂、稳定剂等添加剂,而是通过配方的简化、工艺的优化,使得得到的植物饮料稳定。

本发明涉及一种饮料,特别是涉及一种含鱼腥草的植物饮料,本发明还涉及这种植物饮料的制备方法。
背景技术
植物饮料,指的是以植物或植物抽提物(茶、咖啡除外)为原料(非果蔬类植物的根、茎、叶、花、种子及竹或树木自身分泌的汁液,如谷物、食用菌、食用藻类和蕨类、可可、菊花等)经加工或发酵制成的饮料制品。植物饮料是继碳酸、果蔬饮料之后的第三代饮品,相比普通饮料,植物饮料的天然、绿色成份更高。中国饮料行业是改革开放以来发展起来的新兴行业,是中国消费品中的发展热点和新增长点。由于我国目前的人均饮料消费量(70L/年)尚低于世界平均水平(90升/年),随着国民生活水平的不断提高,饮料市场潜力巨大。目前补营养、补餐、增强体能和智能、休闲等饮料的开发会更加凸显饮料市场的未来潜力。随着市场的扩大和品种的增多,植物饮料由于其特有的功能越来越受到人们的亲睐。
目前已有很多植物饮料的研究,大部分植物饮料配方不科学,只是随意的把几种中药材拼凑到一起,然后煎煮过滤,添加其他调味剂及防腐剂后灌装,工艺粗糙,且为了达到防腐和调整口感等目的,或多或少的添加一些化学成分(如防腐剂、调味剂等),这不仅达不到植物饮料的保健和营养等功能,还会对人体造成一定的危害。例如中国专利CN103859112A,公开了一种鱼腥草代用茶的制作工艺,通过原料选取、摊青、除湿、回潮、整形、烘干、提香、拣梗、包装这些过程让鱼腥草形成颗粒形态,作为茶制品使用,该发明的鱼腥草代用茶与普通的茶制品在外形、气味、颜色上相似,能够作为茶制品饮用,饮用起来无苦涩味,无腥臭,具有清香味,饮用起来口感上具有类似茶制品的味道,但是该发明工艺简单,对鱼腥草有效成分的利用度不高,无法有效鱼腥草的功效。
未来几年,植物饮料将迎来高速发展期,各饮料厂家纷纷涉足这一领域。植物饮料由于天生具备“天然、绿色、营养、健康”的品类特征,符合饮料市场发展潮流和趋势,越来越受消费者喜爱。
发明内容
本发明的目的是为了解决现有技术的不足,提供一种能有效发挥鱼腥草的功效植物饮料,本发明还公开了这种植物饮料的制备方法。
本发明一种含鱼腥草的植物饮料的制备方法,包括如下步骤:
1)取10重量份的鱼腥草,打碎,放入高压罐中,加入相同重量的纯净水,加压至4kgf/cm2,使其压力均匀,并保持10-15min,恢复常压,过滤,得到提取液,对提取液进行双水相萃取,获得萃取上相和萃取下相,双水相萃取所使用的双水相体系由聚乙二醇、氢氧化钠和水构成,聚乙二醇、氢氧化钠和水在双水相体系中的质量百分比为20:20:60,所述聚乙二醇的重均分子量为1000-8000;
2)将步骤1)获得的萃取上相,采用截留分子量为1000-100000的超滤膜脱盐,浓缩至相对密度为1.30(70℃时测)的浸膏;
3)取6重量份的山菊花、2重量份的广西甜茶,混合后,加入7-8倍重量份的纯净水煎煮提取1-2次,每次1-2小时,过滤,合并提取液,滤液浓缩至相对密度为1.30(70℃时测)的浸膏;
4)将步骤2)和步骤3)得到的浸膏混合后,加入100重量份的纯净水,溶解后,均质,过滤;
5)将步骤4)得到滤液用高温瞬时灭菌机在115-135℃下瞬时灭菌,无菌灌装。
本发明所述的鱼腥草、山菊花和广西甜茶,为新鲜的或干制后的。
本发明还包括采用本发明的制备方法得到一种含鱼腥草的植物饮料。
本发明完全采用植物为原料,其中:
鱼腥草,英文名HERBA HOUTTUYNIAE,是中国药典收录的草药,草药来源为三白草科植物蕺菜(拉丁学名:Houttuynia cordata Thunb.)的干燥地上部分。夏季茎叶茂盛花穗多时采割,除去杂质,晒干。草药性状:茎呈扁圆柱形,扭曲,长20-35cm,直径0.2-0.3cm;表面棕黄色,具纵棱数条,节明显,下部节上有残存须根;质脆,易折断。叶互生,叶片卷折皱缩,展平后呈心形,长3-5cm,宽3-4.5cm;先端渐尖,全缘;上表面暗黄绿色至暗棕色,下表面灰绿色或灰棕色;叶柄细长,基部与托叶合生成鞘状。穗状花序顶生,黄棕色。搓碎有鱼腥气味。鱼腥草味辛,性寒凉,归肺经。能清热解毒、消肿疗疮、利尿除湿、清热止痢、健胃消食,用治实热、热毒、湿邪、疾热为患的肺痈、疮疡肿毒、痔疮便血、脾胃积热等。现代药理实验表明,本品具有抗菌、抗病毒、提高机体免疫力、利尿等作用。
山菊花,又名山野菊、路边菊、野黄菊、苦薏等,为菊科菊属多年生草本植物,分布于东北、华北、华中、华南及西南各省,生于山坡、荒野、路边。其花具有极佳的药用保健功效和极高的饮用价值,是一种保健饮用茶。野菊花为菊科植物野菊的头状花序。性凉,味苦、辛,归肺肝二经,疏风清热,消肿解毒,治疗风热感冒,肺炎,高血压、口疮、丹毒等症野菊花广泛分布于我国东北、华北、西北、华东、西南等地,野生资源丰富。山菊花含菊醇、野菊花内酯、氨基酸、微量元素等多种活性成分。其水提取液对心血管***有明显保护作用,能提高心输出量,增加心肌供氧量,保护缺血心肌的正常生理功能。山菊花水提物及水蒸气蒸馏法提取的蓝绿色挥发油对多种致病菌、病毒有杀灭或抑制活性,水提取物对金黄色葡萄球菌、痢疾杆菌、大肠埃希菌、伤寒杆菌等的抑制活性强于挥发油;并有抗炎、抗氧化、镇痛活性。具有清热解毒,消肿。对金黄色葡萄球菌、白喉杆菌、链球菌、绿脓杆菌、蒺疾杆菌、流感病毒,均有抑制作用。
广西甜茶,学名Rubus Suavissmus S,Gee.英文名Sweet tea,是蔷薇科悬钩子属植物中的一种,为多年生有刺落叶灌木,高1-2m,单叶,矩圆状卵形,长5-10m,叶柄长1.5-4cm。花单生叶腋,白色,直径2-3cm,垂生;萼裂片长矩圆状卵形,渐尖,无毛。聚合果球形、黄色。它和普通悬钩子不同之处是叶子味甜。甜茶全身是宝,根、茎、叶、果实均可入茶入药。甜茶叶虽然在广西民间应用已久,但我国八十年代初药物调查时才发现这个新变种。广西甜茶生长在海拔800-1000m左右的荒山上,主产区在广西大瑶山地区,主要分布在广西其它地区及广东、湖南、江西等省。悬钩子在我国其它地方都可见到,却没有这种甜味。因此,学者们认为广西甜茶应定为一个新变种。
与现有技术相比,本发明具有以下优点:
1、本发明通过对鱼腥草原料进行高压处理和双水相萃取,相比现有技术简单的水提,可以更好的将鱼腥草中含有的有效成分鱼腥草素、鱼腥草挥发油分解出,利于后续工艺处理后利于人体吸收。
2、本发明不添加蔗糖,而是通过广西甜茶来调节饮料的口感,广西甜茶中含有丰富的甜茶素,不仅可以作为甜味剂调节口感,而且还适合糖尿病患者饮用。
3、本发明不添加防腐剂、稳定剂等添加剂,而是通过配方的简化、工艺的优化,使得得到的植物饮料稳定。
具体实施方式
下面以具体实施例对本发明作进一步说明,但本发明并不局限于这些实施例。
实施例1
一种含鱼腥草的植物饮料的制备方法,包括如下步骤:
1)取100kg新鲜的鱼腥草,打碎,放入高压罐中,加入相同重量的纯净水,加压至4kgf/cm2,使其压力均匀,并保持10-15min,恢复常压,过滤,得到提取液,对提取液进行双水相萃取,获得萃取上相和萃取下相,双水相萃取所使用的双水相体系由聚乙二醇、氢氧化钠和水构成,聚乙二醇、氢氧化钠和水在双水相体系中的质量百分比为20:20:60,所述聚乙二醇的重均分子量为1000-8000;
2)将步骤1)获得的萃取上相,采用截留分子量为1000-100000的超滤膜脱盐,浓缩至相对密度为1.30(70℃时测)的浸膏;
3)取60kg新鲜的山菊花、20kg新鲜的广西甜茶,混合后,加入700kg纯净水煎煮提取1次,每次2小时,过滤,合并提取液,滤液浓缩至相对密度为1.30(70℃时测)的浸膏;
4)将步骤2)和步骤3)得到的浸膏混合后,加入1000kg的纯净水,溶解后,均质,过滤;
5)将步骤4)得到滤液用高温瞬时灭菌机在115-135℃下瞬时灭菌,无菌灌装。
实施例2
一种含鱼腥草的植物饮料的制备方法,包括如下步骤:
1)取100kg干制后的鱼腥草,打碎,放入高压罐中,加入相同重量的纯净水,加压至4kgf/cm2,使其压力均匀,并保持10-15min,恢复常压,过滤,得到提取液,对提取液进行双水相萃取,获得萃取上相和萃取下相,双水相萃取所使用的双水相体系由聚乙二醇、氢氧化钠和水构成,聚乙二醇、氢氧化钠和水在双水相体系中的质量百分比为20:20:60,所述聚乙二醇的重均分子量为1000-8000;
2)将步骤1)获得的萃取上相,采用截留分子量为1000-100000的超滤膜脱盐,浓缩至相对密度为1.30(70℃时测)的浸膏;
3)取60kg干制后的山菊花、20kg干制后的广西甜茶,混合后,加入700kg纯净水煎煮提取2次,每次1小时,过滤,合并提取液,滤液浓缩至相对密度为1.30(70℃时测)的浸膏;

实施例3
一种含鱼腥草的植物饮料的制备方法,包括如下步骤:

Claims (3)
1.一种含鱼腥草的植物饮料的制备方法,其特征在于,包括如下步骤:
1)取10重量份的鱼腥草,打碎,放入高压罐中,加入相同重量的纯净水,加压至4kgf/cm2,使其压力均匀,并保持10-15min,恢复常压,过滤,得到提取液,对提取液进行双水相萃取,获得萃取上相和萃取下相,双水相萃取所使用的双水相体系由聚乙二醇、氢氧化钠和水构成,聚乙二醇、氢氧化钠和水在双水相体系中的质量百分比为20:20:60,所述聚乙二醇的重均分子量为1000-8000;
2)将步骤1)获得的萃取上相,采用截留分子量为1000-100000的超滤膜脱盐,浓缩至相对密度70℃时测为1.30的浸膏;
3)取6重量份的山菊花、2重量份的广西甜茶,混合后,加入7-8倍重量份的纯净水煎煮提取1-2次,每次1-2小时,过滤,合并提取液,滤液浓缩至相对密度70℃时测为1.30的浸膏;
4)将步骤2)和步骤3)得到的浸膏混合后,加入100重量份的纯净水,溶解后,均质,过滤;
5)将步骤4)得到滤液用高温瞬时灭菌机在115-135℃下瞬时灭菌,无菌灌装。
2.根据权利要求1所述的含鱼腥草的植物饮料的制备方法,其特征在于:所述的鱼腥草、山菊花和广西甜茶,为新鲜的或干制后的。
3.权利要求1或2所述的制备方法得到含鱼腥草的植物饮料。
