Abstract

本发明公开了一种无糖刺梨口服液,由刺梨汁、罗汉果汁和西番莲汁混合配制成的一种口服液,主要制作步骤是刺梨压榨取汁过滤处理得到刺梨汁,将罗汉果浸泡煮制得罗汉果汁,西番莲榨汁后过滤得西番莲汁,将刺梨汁、罗汉果汁、西番莲汁按比例混合,装瓶密封,杀菌冷却后得产品。该产品营养丰富,风味爽口,热量极低,纯天然原料制作,安全性高,适合大众饮用,尤其适合“三高”及糖尿病病人饮用。

技术领域
本发明涉及食品加工领域,具体涉及由刺梨、罗汉果和西番莲制备而成的口服液。
背景技术
随着人们生活水平提高,外出旅游休闲的人也越来越多,追求食品风味、营养保健以及方便携带的消费者越来越多。
刺梨营养价值很高,富含维生素C,其含量为所有植物中最高,其富含SOD及多种维生素(维生素C、B1、B2、B11、E等)、18种氨基酸和微量元素硒、钙、磷、铁、锌等营养物质;堪称“超级SOD、维C大王”。长期食用可提高人体SOD活性,增强体质,延缓衰老,具有抗氧化、解毒的作用,因此被誉为“中华水果之王”。
由于刺梨果肉酸涩,生食口感极差,果汁不经调配风味较差,如发明专利公开号为CN101406544A,公开了刺梨口服液及其制备方法,将2000~3000g的刺梨鲜果榨汁,再加山梨酸钾0.5~1.5g,甜蜜素8~16g和木糖醇70~110g,解决了小包装,方便携带问题,但只加甜蜜素和木糖醇调配,苦涩味还是很浓,口感欠佳。
罗汉果营养价值高,天然风味浓郁,醇香甘甜,口感已被广大消费者认可,罗汉果更是一种国际公认的、综合性状最佳的天然甜味物质,其中甜苷V是主要成份,是世界最强甜味物质之一,甜度是甜菊苷的2倍,甘草甜素的6倍,蔗糖的300倍。甜苷最大的优点是热量极低,理化性能稳定,水溶性好,无任何毒副作用,适合所有人群长期食用,尤其适合糖尿病人、肥胖者、高血压患者等不适于食糖群体作为调味、补助品。
西番莲也称百香果、巴西果、鸡蛋果,其原果汁中含有六十多种挥发性化合物,其可溶性固态物含量高达10%~14%,机酸含量达1.5%~3%,香味浓郁,口感独特,被誉为果汁味精。
发明内容
本发明的目的在于刺梨中Vc含量极高,一次不宜用大瓶多量服用,所以适宜制作少量服用的口服液,但若单独使用刺梨果汁,则口味酸涩,很难入口。如果通过加入罗汉果、西番莲调配,则使之风味爽口,营养更丰富,产品极大地保存了刺梨的营养成分,充分利用罗汉果的高甜度,西番莲风味浓郁的特点加工成风味独特的口服液。
一种无糖刺梨口服液,包含有如下组分,各组分的质量百分数为:
刺梨汁      70%-96%
罗汉果汁         3%-20%
西番莲汁         1%-10%
本发明工艺步骤如下(1)选择无腐烂成熟的刺梨果清洗后榨汁,过滤,杀菌,冷藏备用;(2)罗汉果干品破碎,加入一定量的纯净水,加热煮沸后再文火煮一段时间,过滤,备用;(3)选充分成熟的西番莲鲜果,除去残次果,破碎榨汁,过滤,离心分离,杀菌,冷藏备用。(4)将刺梨汁、罗汉果汁、西番莲汁按比例混合,装瓶密封,杀菌冷却后得产品。
具体实施方式
本发明的无糖刺梨口服液,包含有如下组分,各组分质量百分数如下:
刺梨汁              90%
罗汉果汁            8%
西番莲原汁          2%
上述无糖刺梨口服液,具体步骤如下:
1)刺梨汁制备:选择无腐烂成熟的刺梨果清洗后榨汁,加入2%的琼脂澄清过滤,杀菌,冷藏备用;
2)罗汉果汁制备:罗汉果干品破碎,加入20倍罗汉果重的纯净水,加热煮沸后再文火至体积为原来的1/5,过滤,备用;
3)西番莲汁制备:选充分成熟的西番莲鲜果,除去残次果,破碎榨汁,过滤,离心分离,杀菌,冷藏备用。
4)将刺梨汁、罗汉果汁、西番莲汁按比例混合,装瓶密封,于100℃内杀菌15分钟,冷却后得产品。

1.一种无糖刺梨口服液,其特征在于由刺梨汁、罗汉果汁和西番莲汁混合配制而成。 
2.根据权利要求1所述的无糖刺梨口服液,其特征在于包含有如下组分,各组分的质量百分数为: 
刺梨浓缩汁    70%-96% 
罗汉果汁      3%-20% 
西番莲汁      1%-10%。
