本发明属于饮用食品技术领域,具体为一种玫瑰饮料,采用清洗、榨汁及滤汁步骤制备,具体为清洗,将采摘的新鲜玫瑰花瓣用清水洗净后脱水榨汁,将榨碎后的玫瑰花瓣、柠檬酸和水的混合物过滤,在滤液中添加白砂糖调节甜度制得。本发明的玫瑰饮料,制作工艺简单,过滤后的玫瑰饮料引用时无杂质,添加柠檬酸后口感良好;采用新鲜玫瑰花为鲜榨原料,加之玫瑰花在榨汁过程中营养成分充分析出,使玫瑰花中的营养物质在玫瑰饮料中得到了全面保全;柠檬酸作为天然的杀菌剂,能延长制作的玫瑰饮料的保质期。

技术领域
本发明属于饮用食品技术领域,具体为一种香气、色泽、口味、营养和药用价值皆保持玫瑰花原有特色的一种玫瑰饮料制作方法。
背景技术
玫瑰鲜花气味清香,颜色鲜红,味道甘甜,是作为饮品的优质原料。另外,玫瑰含有人体所需的18种氨基酸和多种微量元素,具有通经活血、美容养颜等功效。玫瑰花瓣中还富含花青素苷、槲皮素、没食子酸等生物活性成分,特别是安宁食用玫瑰花瓣中花青素苷含量较高,达1%~1.4%,且5个花青素苷组分中矢车菊素3、5二葡萄糖苷(Cy3G5G)含量占90%以上。玫瑰花瓣中因含有大量的Cy3G5G等花青素苷而呈现鲜红的颜色。国内外许多研究表明,玫瑰花瓣中的花青素苷具有抗氧化、抗癌、诱导癌细胞凋亡、抗炎症、降血脂、减肥、改善视力等多种生物活性,具有的生物活性和药用价值。中医记载,玫瑰花入药,可以理气活血、疏肝解郁,主治肝胃气痛、食少呕恶、***、跌打损伤等症;玫瑰花蕾具有行气活血的功效,常用于胸胁胃脘胀痛、经前***胀痛、损伤瘀阻疼痛以及消化不良、***等症;经国内外医药专家研究表明,玫瑰花对治疗心血管疾病具有特效。
现有的玫瑰饮品,通常采用将干燥后的玫瑰加以煎煮或冲泡,此种饮用方式玫瑰精油、花青素苷、维生素C及等多种活性物质保留较少,使得玫瑰饮料的营养价值大大降低。
发明内容
针对现有用干燥后的玫瑰花瓣加以煎煮或冲泡得到的玫瑰饮料营养和药用价值较低,本发明技术提出一种香气、色泽、口味、营养和药用价值俱佳的一种玫瑰饮料制作方法。
本发明的玫瑰饮料,其特征在于采用下列步骤制作:
(1) 清洗,将采摘的新鲜玫瑰花瓣用清水洗净后脱水;
(2) 榨汁,按重量份计,将洗净后的玫瑰花瓣和纯净水、食用柠檬酸,按花瓣:纯净水:柠檬酸 = 28~30:90~95:0.09~0.11的比例放入榨汁机中榨碎;
(3) 滤汁,将榨碎后的玫瑰花瓣、柠檬酸和水的混合物用500目的滤布过滤;
(4) 调味,在滤液中添加白砂糖调节甜度,按每100ml滤液中添加白砂糖28~30g的比例,在鲜汁中加入白砂糖,搅匀,制得玫瑰饮料。
更佳的,所述的清洗步骤清水为高温灭菌的饮用水、反复清洗2~3次至玫瑰花瓣表面无其它杂质,然后置于甩干机中,在600~800转/分钟下甩干4~5分钟,玫瑰花瓣表面无明显水珠为佳。
作为改进,所述的榨汁步骤采用每分钟18000转左右的榨汁机榨汁4~6秒后中止,将悬浮在水面的花瓣搅入水中,再榨汁4~6秒,玫瑰花瓣被破碎至粉末状。采用这种方法可以使花瓣细胞破碎得更均匀,花瓣中富含的氨基酸、微量元素、花青素苷、槲皮素等各种营养和药用成分得到充分提取。
本发明的玫瑰饮料,制作工艺简单,过滤后的玫瑰饮料引用时无杂质,添加柠檬酸后口感良好;采用新鲜玫瑰花为鲜榨原料,加之玫瑰花在榨汁过程中营养成分充分析出,使玫瑰花中的营养物质在玫瑰饮料中得到了全面保全;柠檬酸作为天然的杀菌剂,能延长制作的玫瑰饮料的鲜红颜色和保质期。
具体实施方式
实施例1:一种玫瑰饮料,采用新鲜洁净的食用玫瑰为原料,用煮沸150分钟、充分灭菌的饮用水手工清洗玫瑰花瓣2~3次,然后置于甩干机中甩干4~5分钟。将洗净后的玫瑰花瓣30 g、柠檬酸0.1 g和水90 mL放入250 W榨汁机中榨碎,榨汁4~6秒后中止,将悬浮在水面的花瓣搅入水中,再榨汁4~6秒。将榨碎后的玫瑰花瓣、柠檬酸和水的混合物用500目的滤布过滤,获得大约100 mL滤液,在滤液中添加28~30 g白砂糖,搅匀,以调节甜度。此时玫瑰饮料制作完成,可直接饮用,或瓶装保存,保质期7~10天。
Claims (3)
1.玫瑰饮料,其特征在于采用下列步骤制作:
清洗,将采摘的新鲜玫瑰花瓣用清水洗净后脱水;
榨汁,按重量份计,将洗净后的玫瑰花瓣和纯净水、食用柠檬酸,按花瓣:纯净水:柠檬酸 = 28~30:90~95:0.09~0.11的比例放入榨汁机中榨碎;
滤汁,将榨碎后的玫瑰花瓣、柠檬酸和水的混合物用500目的滤布过滤;
调味,在滤液中添加白砂糖调节甜度,按每100ml滤液中添加白砂糖28~30g的比例,在鲜汁中加入白砂糖,搅匀,制得玫瑰饮料。
2.如权利要求1所述的玫瑰饮料,其特征在于所述的清洗步骤清水为高温灭菌的饮用水、反复清洗2~3次至玫瑰花瓣表面无其它杂质,然后置于甩干机中,在600~800转/分钟下甩干4~5分钟。
3.如权利要求1所述的玫瑰饮料,其特征在于所述的榨汁步骤采用每分钟18000转左右的榨汁机榨汁4~6秒后中止,将悬浮在水面的花瓣搅入水中,再榨汁4~6秒,玫瑰花瓣被破碎至粉末状。
