    本发明主要涉及食品及其制备方法技术领域,尤其涉及一种山药素火腿。
背景技术
    市场上的火腿基本是以肉类作为主原料,脂肪含量高,然而,随着生活水平的提高,很多人有高血脂、高血压,因此,市场上所售的火腿基本上不适合这类人群食用。

本发明为了弥补已有技术的缺陷,提供一种山药素火腿及其制备方法。
本发明是通过以下技术方案实现的:一种山药素火腿,由以下重量份原料组成:山药120-130、玉米淀粉40-50、藕粉50-60、花生米30-40、糯米30-40、豆干20-30、香菇粉10-20、海带粉10-20、决明子3-4、山楂5-6、菊花3-4、金银花4-5、乌梅3-4、莲子心3-4、绿茶5-10、米酒100-120、色拉油10-20、生姜末20-30、食用盐30-60、鸡精20-30、白砂糖40-60、香醋30-40、水适量。
一种山药素火腿的制备方法,包括以下步骤:
(1)将山药洗净、去皮后,切成块状,与豆干一起放入锅中,加入所述米酒,加热焖煮2-3小时后,将锅中所有物料取出,并打成山药汁备用;
(2)将花生米洗净后,均匀的喷上色拉油,放入烤箱中,烤熟后取出,碾成花生粉备用;
(3)将糯米、香菇、海带洗净,放入锅中,加入生姜末、鸡精、白砂糖、香醋,以及适量的水,煮成糯米饭后,取出备用;
(4)将决明子、山楂、菊花、金银花、乌梅、莲子心、绿茶用5-10倍量的水,加热提取,将所得提取液喷雾干燥,得到中药粉末;
(5)将山药汁与花生粉、糯米饭、中药粉末混合,加入所述玉米淀粉、藕粉,不断搅拌,并加入适量的水,形成面团后,做成火腿肠即可。

一种山药素火腿的制备方法,包括以下步骤:

1.一种山药素火腿,其特征在于,由以下重量份原料组成:山药120-130、玉米淀粉40-50、藕粉50-60、花生米30-40、糯米30-40、豆干20-30、香菇粉10-20、海带粉10-20、决明子3-4、山楂5-6、菊花3-4、金银花4-5、乌梅3-4、莲子心3-4、绿茶5-10、米酒100-120、色拉油10-20、生姜末20-30、食用盐30-60、鸡精20-30、白砂糖40-60、香醋30-40、水适量。
2.如权利要求1所述的一种山药素火腿的制备方法,其特征在于,包括以下步骤:
(1)将山药洗净、去皮后,切成块状,与豆干一起放入锅中,加入所述米酒,加热焖煮2-3小时后,将锅中所有物料取出,并打成山药汁备用;
(2)将花生米洗净后,均匀的喷上色拉油,放入烤箱中,烤熟后取出,碾成花生粉备用;
