一种柠檬鸡块的制作方法,先将主要原料鸡块进行焯水、滑油上色,然后再调制本产品的特有调味汁;待鸡块和汤汁自然冷却后,按比例将鸡块和调味汁拌匀腌制,然后包装充氮气封口,最后经过调理多阶段杀菌,即成成品。本发明以餐饮柠檬鸡块为基础,将传统餐饮技术和食品工程技术有机结合,经过工业化生产,不含任何化学添加剂和防腐剂,常温下保质期一年。既保证柠檬鸡块(方便菜肴)肉质酥软、味含甜酸、清爽怡口,又即食、方便、卫生。本产品最大的特点是食用方便、保鲜、常温储存、简单加热即可食用。

本发明涉及一种食品加工方法,具体涉及一种柠檬鸡块的制作方法。
背景技术
由于鸡肉富含蛋白质和营养成份,而且味道鲜美,是人们十分喜爱的佐餐食品。随着人们生活水平的提高,对菜的口味要求也越来越高。
现有柠檬鸡块菜肴的制作方法,仅局限于一些饭店和家庭等固定场所,不能满足生活节奏快的上班族或得外出的消费者的需求。
发明内容
本发明的目的在于解决现有技术中存在的上述技术问题,提供一种方法即食、保鲜、美味、营养的柠檬鸡块的制作方法。
为实现上述目的,本发明采用的技术方案如下:
本发明的柠檬鸡块的制作方法,该方法包括下述步骤:
(1)将鸡肉整理、清洗,切成2-3cm块状;用麦芽糖浆将鸡块挂浆;然后把鸡丁放入油温180-200度电炒锅中滑油上色,时间1-1.5分钟,捞出淋干,自然冷却。
(2)将炒锅加热放入水、白砂糖、柠檬汁、食盐、变性淀粉搅拌加热至沸,出锅加入鸡精搅拌均匀,自然冷却得调味汁。
(3)把冷却鸡块80重量份、调味汁20重量份拌匀,腌制20分钟。
(4)将腌制好的鸡块、调味汁装入高温蒸煮袋,抽真空充氮气(氮气纯度99.99%)封口。
(5)将包装好的蒸煮袋放入杀菌锅进行调理多阶段灭菌,灭菌程序,即成成品。
所述的柠檬鸡块的配方为:鸡块80%,白砂糖5%、柠檬汁4%、食盐1.3%、鸡精0.2%、变性淀粉1.5%、水8%,上述百分比均为质量百分比。
所述的多阶段灭菌程序为:100度7分钟,110度5分钟,118度5分钟,123度6分钟,冷却至30度15分钟。
本发明以餐饮柠檬鸡块为基础,将传统餐饮技术和食品工程技术有机结合,经过工业化生产,不含任何化学添加剂和防腐剂,常温下保质期一年。既保证柠檬鸡块(方便菜肴)肉质酥软、味含甜酸、清爽怡口,又即食、方便、卫生。本产品最大的特点是食用方便、保鲜、常温储存、简单加热即可食用。
具体实施方式
实施例1
按以下比例配制柠檬鸡块:
鸡块80 kg、白砂糖5 kg、柠檬汁4 kg、食盐1.3 kg、鸡精0.2 kg、变性淀粉1.5 kg、水8 kg。
制作方法:
1、将鸡肉整理、清洗,切成2-3 cm块状;用麦芽糖浆将鸡块挂浆;然后把鸡块放入油温180-200度电炒锅中滑油上色,时间约1-1.5分钟,捞出淋干,自然冷却。
2、将炒锅加热放入水、白砂糖、柠檬汁、食盐、变性淀粉搅拌加热至沸,出锅加入鸡精搅拌均匀,自然冷却。
3、把冷却鸡块、调味汁按比例拌匀,腌制20分钟。
4、将腌制好的鸡块、调味汁装入高温蒸煮袋后,抽真空充氮气(氮气纯度99.99%)封口。
5、将包装好的蒸煮袋放入杀菌锅进行调理多阶段灭菌,灭菌程序:100度7分钟,110度5分钟,118度5分钟,123度6分钟,冷却至30度15分钟,即成成品。

1.一种柠檬鸡块的制作方法,其特征在于:
柠檬鸡块的配方为:
鸡块80 kg、白砂糖5 kg、柠檬汁4 kg、食盐1.3 kg、鸡精0.2 kg、变性淀粉1.5 kg、水8 kg;
制作方法如下:
(1)将鸡肉整理、清洗,切成2-3 cm块状;用麦芽糖浆将鸡块挂浆;然后把鸡块放入油温180-200度电炒锅中滑油上色,时间1-1.5分钟,捞出淋干,自然冷却;
(2)将炒锅加热放入水、白砂糖、柠檬汁、食盐、变性淀粉搅拌加热至沸,出锅加入鸡精搅拌均匀,自然冷却;
(3)把冷却鸡块、调味汁按比例拌匀,腌制20分钟;
(4)将腌制好的鸡块、调味汁装入高温蒸煮袋后,抽真空充氮气封口;
(5)将包装好的蒸煮袋放入杀菌锅进行调理多阶段灭菌,灭菌程序:100 ℃ 7分钟,110 ℃ 5分钟,118 ℃5分钟,123 ℃6分钟,冷却至30 ℃15分钟,即成成品。
