Abstract

Food- and feedstuffs with high protein content are prepd by culturing micro-organisms pref. Saccharomyces fragilis in a liq. nutrient medium which contains carbohydrates and dissolved protein such as obtd from molasses or whey from the cheese-making process. After culturing, the medium is ultra-filtered which is pref. carried out in two stages with a water-wash in between to remove salts. The process does not require the use of separators, gives a product with a higher protein content than previously obtd, and the yeast used has a cleaning action on the membranes of the ultracentrifuge.
