Abstract

composições de chocolate com estabilidade melhorada à base de amido de arroz a presente invenção se refere a uma composição de chocolate semi-sólida ou líquida, produzida por meio da preparação de uma massa básica de chocolate e de um gel de amido de arroz, e à adição do gel de amido de arroz à massa básica de chocolate e da mistura dos dois ingredientes, como é obtida uma composição de chocolate homogênea semi-sólida ou líquida, a produtos contendo a composição de chocolate e a um processo para sua produção.
