Abstract

Pantente de Invenção: <B>"PROCESSO E DISPOSITIVO PARA O TRATAMENTO DE UM PRODUTO DE OVO LìQUIDO"<D>. é descrito um processo para o tratamento de um produto de ovo líquido, consistindo substancialmente em clara de ovo e/ou gema de ovo, a fim de se obter uma vida de prateleira estendida ("VPE"). O produto de ovo é submetido a um tratamento de pasteurização, por meio do qual o dito produto de ovo é mantido em uma temperatura de mais do que aproximadamente 60°C durante algum tempo. O produto de ovo é, além disso, brevemente aquecido para uma temperatura de 78°C. Esse tratamento térmico ocorre por meio de infusão de vapor em um aquecedor de escoamento descendente (10). O resfriamento ocorre em uma rápida diminuição de temperatura.
