Abstract
a invenção refere-se a um método de preparação de um produto de óleo comestível, particularmente um azeite de oliva extra virgem, compreendendo a inserção de um número predeterminado de azeitonas inteiras em um determinado volume de óleo comestível, as azeitonas inteiras tendo um conteúdo polifenólico variando de 1 a 5% de polifenóis no peso total das azeitonas, em que as azeitonas inteiras, antes de serem introduzidas no óleo comestível, são submetidas a irradiação com radiações ionizantes a uma dose absorvida compreendida dentro do intervalo de 2,5 a 15 kgray.
