Abstract

"PROCESSO DE PREPARAçãO DE UM LACTOSSORO MODIFICADO, LACTOSSORO MODIFICADO SUSCETìVEL DE SER OBTIDO COM A AJUDA DO PROCESSO, UTILIZAçãO DO LACTOSSORO E PRODUTO DE PANIFICAçãO INDUSTRIAL". A presente invenção se refere a um processo de preparação de um lactossoro modificado, que compreende as etapas a) de remoção de lactose, b) de hidrólise, c) de pré-tratamento das proteínas de captação de cálcio, d) de hidrólise das proteínas pré-tratadas e e) de inativação das enzimas. A hidrólise é efetuada em presença de pelo menos uma endopeptidase de pelo menos uma exopeptidase. A presente invenção se refere igualmente ao lactossoro suscetível de ser obtido pelo processo, de preparação, que se caracteriza pelo fato de que ele compreende uma quantidade de lactose compreendida entre 10 e 50% em peso da quantidade ponderal inicialmente presente e uma quantidade de proteínas totais representando no máximo 80% em peso da quantidade ponderal de proteínas inicialmente presentes. A presente invenção se refere igualmente à utilização do dito lactossoro modificado como melhorador de panificação e os produtos que o contêm.
