Four de boulangerie avec dispositif d'humectation à la vapeur.
L'invention se rapporte à un four de boulangerie, pâtisserie ou four analogue avec dispositif d'humectation à la vapeur, et particulièrement à un four où les produits à cuire circulent en circuit fermé dans le four sur des pla- teaux suspendus à des chaînes sans fin ou à d'autres organes transporteurs. Les fours de ce genre présentent l'avantage d'être peu encombrants. Par contre, il est difficile d'y placer un dispositif d'humectation à la vapeur. Suivant l'in- vention, on pbvie à ces difficultés en constituant les cham- bres à vapeur par une partie du four en forme de canal dans lequel circulent les plateaux porteurs, et par les parois transversales de ces plateaux, qui obturent le canal dans le

sens transversal.
De cette façon, il devient possible de pro- fiter de façon simple des avantages de ce genre de fours dans le cas de cuisson avec humectation à la vapeur.
Le dessin annexé montre à titre d'exemple, en cou- pe longitudinale, un four exécuté suivant l'invention.
Les plateaux 2 portant les produits à cuire et sus- pendus à deux chaînes 1 parcourent d'abord le compartiment supérieur 3 du four et reviennent ensuite dans le comparti- ment inférieur 5 séparé du compartiment 3 par une cloison 4.
A mesure que les plateaux sortent du four, on en retire les produits cuits, et avant de s'engager dans la chambre de cuisson ils reçoivent de nouveaux pâtons. Il est à remarquer que le trajet des plateaux peut être différent, suivant la construction du four; ainsi, par exemple, dans un four où les produits à cuire traversent une chambre de levage, le circuit peut être différent.
En avant de la chambre de cuisson supérieure 3 est disposé un espace 6 en forme de canal dans lequel circulent les plateaux 2. Ces plateaux comportent des parois transver- sales 7 dont la forme correspond à la section transversale du canal 6, de sorte que chaque paroi transversale avec son plateau obture le canal. De cette façon on constitue entre deux parois transversales des espaces clos qui avancent avec les plateaux. Dansa paroi du canal., par exemple en 8, se trou- va une lumière d'admission de vapeur située à un endroit de la paroi du canal appartenant à l'espace clos qui vient d'être formé entre deux parois transversales 7.
Avant que la paroi transversale se trouvant à l'extrémité du canal quitte ce- lui-ci et s'engage dans la chambre de cuisson 3, l'espace entre 1cette paroi et la suivante vient en communication avec un

conduit d'évacuation de vapeur 9, de façon que la vapeur soit évacuée avant l'arrivée du produit à cuire dans la chambre de cuisson.
La durée de l'humectation à la vapeur doit être ré- glée avec beaucoup de précision; à cet effet on prévoit un registre 10 commandé de l'extérieur au moyen d'une poignée 11. Ce registre se trouve dans un espace 12 communiquant avec le conduit 9, et sa paroi inférieure est formée par la paroi supérieure du canal 6. Cette paroi comporte des ouver- tures pouvant être obturées plus ou moins suivant la position du registre, de sorte que le point où la chambre à vapeur entre en communication avec l'espace 12, c'est-à-dire avec le conduit d'évacuation 9,est déterminé par la position du registre.
Bien entendu, lesplateaux peuvent comporter deux pa- rois transversales au lieu d'une seule, de sorte que chaque plateau forme une chambre à vapeur individuelle. Il est éga- lement possible de modifier de toute façon appropriée le dispositif de réglage pour l'évacuation de la vapeur, sans sortir du cadre de l'invention.

In this way, between two transverse walls, enclosed spaces are formed which advance with the plates. In the wall of the channel, for example at 8, there is a vapor inlet port located at a point on the wall of the channel belonging to the closed space which has just been formed between two transverse walls 7.
Before the transverse wall at the end of the channel leaves the latter and engages the cooking chamber 3, the space between this wall and the next comes into communication with a

steam discharge duct 9, so that the steam is discharged before the arrival of the product to be cooked in the cooking chamber.
The duration of steam wetting must be set very precisely; for this purpose there is provided a register 10 controlled from the outside by means of a handle 11. This register is located in a space 12 communicating with the duct 9, and its lower wall is formed by the upper wall of the channel 6. This wall has openings which can be closed to a greater or lesser extent depending on the position of the register, so that the point where the steam chamber comes into communication with the space 12, that is to say with the exhaust duct 9, is determined by the position of the register.
Of course, the trays can have two transverse walls instead of just one, so that each tray forms an individual steam chamber. It is also possible to modify the adjustment device for the discharge of the steam in any suitable way, without departing from the scope of the invention.
