Abstract
La presente se refiere a una composición estructurante a base de proteína vegetal en partículas, sólida, que comprende, en base a la materia seca total, a) 50 - 95% en peso de proteína derivada de las plantas, b) 5 - 10% en peso de goma xántica, c) 1 - 30% en peso de acidulante derivado de glucono d lactona. La presente se refiere, además, a un producto alimentario que comprende dicha composición estructurante. También se refiere a un método para la preparación de dicha composición estructurante y a un proceso para la preparación de un producto alimentario con el uso de dicha composición estructurante.
