Abstract

Una composicion de confitería que comprende 60 a 95% de recubrimiento de caramelo duro y 5 a 40% en peso de relleno central que comprende: a) 40 a 95% de un líquido polar comestible que puede ser acuoso, alcoholes polihídricos o de bajo peso molecular y sus mezclas y b) 0,001 a 10% de un espesante que puede ser goma xantana, goma gelana, hidroxipropilcelulosa, carboximetilcelulosa o almidones modificados. El relleno central se fluidifica por cizallamiento (accion de corte) y tiene un lof(n arroba 0,01 s-1)/(n arroba 250 s-1) de más de 0,5 a 37sC. Puede comprender un agente refrescante y/o de calentamiento con liberacion secuencial. Se aplican en golosinas con atributos reologicos que prolongan la estabilidad en almacenamiento y la percepcon de residencia del relleno en la boca.
