Abstract

La presente se relaciona con una emulsión de mantequilla líquida en agua acídica de una sustancia lipofílica capaz de impartir, mejorar o modificar las propiedades saborizantes de una composición a la cual se agrega. Estas emulsiones son particularmente estables debido a la presencia de una combinación de pectina de metoxilo elevada y de la proteína de suero en su fase continua, dicha combinación actua como un emulsificador y estabilizador de estas emulsiones. Estos sistemas pueden ser utilizadas en forma ventajosa para saborizar varias aplicaciones de alimentos, en particular productos lácteos.
