Abstract
Concentrados ambientalmente estables que rinden, al diluirlos con un líquido acuoso, una salsa, una sopa o caldo terminados. Su bajo pH ayuda a lograr laestabilidad ambiental. También es microbiologicamente estable a temperatura ambiente, preferentemente después de abrir el producto envasado. Las composicionesbuscadas pueden transformarse en salsa o sopa mediante su sola dilucion en líquidos acuosos tales como vino, leche, agua que se utilice para cocinar carnes ovegetales, o mezclas de los mismos. Por lo general resulta conveniente calentarlas para obtener la consistencia adecuada. La cantidad de sal presentedeterminará el factor de dilucion deseado para obtener una sopa o salsa terminada con la correcta cantidad de sal. La presente base de sopa o salsa puede,convenientemente verterse o tomarse con cuchara.
