Abstract
Procedimiento para fabricar una leche de almendras de frutas, en el cual se trituran las almendras de frutas en agua, para obtener una dispersión acuosa;se efectúa una extracción acuosa sobre esa dispersión; se descartan los insolubles del extracto acuoso; se aisla una fracción rica en proteínas y/o enlípidos del extracto acuoso; se homogeneiza esa fracción y se esteriliza; y utilización de esa leche de almendras de frutas que se obtiene de esa manera,para fabricar productos alimenticios.
