肠胃道功能紊乱及引发的便秘是常见的一种消化道疾病,多发于老年人,我国有超过1/4的老年人群有严重便秘问题,主要原因包括:生理性衰老引起的肠道蠕动变慢,缺乏适当膳食纤维饮食,液体摄入量不够,日常活动力不足,慢性疾病,或使用药物等。且随着社会经济发展,导致生活、工作节奏加快及不良生活习惯的养成,便秘问题亦趋于年轻化,而且这种情况在逐年上升。
针对以上问题,人们开始将研究重点由西药转向自然、副作用小的传统中草药及具有食疗作用的植物。面对肠胃道功能紊乱及便秘已经成为当前世界性顽疾的严重形势,开发具有确切疗效的功能性食品无疑具有极大的社会及经济效益。
其中水溶性膳食纤维是能够溶解于水中的纤维类型,具有黏性,能在肠道中大量吸收水分,使粪便保持柔软状态。水溶性纤维能有效使肠道中的有益菌活性化,促进有益菌的大量繁殖,创造肠道的健康环境。另外,由于膳食纤维的通便作用,可降低***周围的压力,使血流通畅,从而还有防治痔疮的功效。同时水溶性膳食纤维中的果胶可结合胆固醇,木质素可结合胆酸,使其直接从粪便中排出,由此降低了胆固醇,从而有预防冠心病的作用。

为了解决现有技术存在的问题,本发明提供了一种改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料及其制备方法。所述水溶性纤维饮料食用后既能满足人体基本的营养需求,又能促进肠道消蠕动,增加肠道有益菌数量,帮助软化消化残余物,使体内毒素、粪便顺畅排出,另一方面,食用后产生的饱腹感能够降低饭量的摄入,有利于维持体型。所述制备方法仅需将原料均匀混合即可,工艺简单、易操作,有利于规模化生产。
本发明的方案是提供一种改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料,包括如下重量份的原料:柠檬粉18~26份、燕麦15~20份、苹果膳食纤维12~20份、玉米水溶性纤维10~20份、低聚果糖10~15份、圆苞车前子壳粉1~3份和食用螺旋藻1~4份。

(3)将混合物b冷却至室温,调节pH为1.8~2.2,再进行干燥、粉碎,得圆苞车前子壳粉。
圆苞车前子壳中含可溶性纤维与不可溶性纤维的比约为3:1,经发明人验 证,圆苞车前子壳在经α-淀粉酶酶解之后,可溶性纤维的占比将会提高约25%。

(3)将混合物b冷却至室温,调节pH为1.8,再进行干燥并粉碎至粒度为480~500目,得圆苞车前子壳粉。
(II)制备改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料:
将180g柠檬粉、200g燕麦、120g苹果膳食纤维、200g玉米水溶性纤维、100g低聚果糖、30g圆苞车前子壳粉和10g食用螺旋藻在转速为60r/min条件下混合30min,完毕后再于100℃条件下灭菌20s后计量、包装。
实施例2
本实施例提供一种改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料的制备方法。
(I)制备圆苞车前子壳粉:
(1)将圆苞车前子壳、水和α-淀粉酶混合,其中圆苞车前子壳、水和α-淀粉酶的重量比为1:3:0.5,并调节体系pH为6.5,得混合液a;
(2)将混合液a加热至110℃进行糊化,糊化时间5min,完毕后再降温至95℃进行液化,液化时间1h,完毕后得混合物b;
(3)将混合物b冷却至室温,调节pH为2.2,再进行干燥并粉碎至粒度为400~420目,得圆苞车前子壳粉。
(II)制备改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料:
将260g柠檬粉、150g燕麦、200g苹果膳食纤维、100g玉米水溶性纤维、150g低聚果糖、10g圆苞车前子壳粉和40g食用螺旋藻在转速为80r/min条件下混合20min,完毕后再于120℃条件下灭菌10s后计量、包装。
实施例3
本实施例提供一种改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料的制备方法。
(I)制备圆苞车前子壳粉:
(1)将圆苞车前子壳、水和α-淀粉酶混合,其中圆苞车前子壳、水和α-淀粉酶的重量比为1:1:0.5,并调节体系pH为5.5,得混合液a;
(2)将混合液a加热至105℃进行糊化,糊化时间10min,完毕后再降温至85℃进行液化,液化时间2h,完毕后得混合物b;

(I)制备圆苞车前子壳粉:
(1)将圆苞车前子壳、水和α-淀粉酶混合,其中圆苞车前子壳、水和α-淀粉酶的重量比为1:3:0.3,并调节体系pH为6.5,得混合液a;
(2)将混合液a加热至110℃进行糊化,糊化时间5min,完毕后再降温至95℃进行液化,液化时间1h,完毕后得混合物b;
(3)将混合物b冷却至室温,调节pH为2.2,再进行干燥并粉碎至粒度为400~420目,得圆苞车前子壳粉。
(II)制备改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料:
将260g柠檬粉、150g燕麦、200g苹果膳食纤维、100g玉米水溶性纤维、150g低聚果糖、10g圆苞车前子壳粉、40g食用螺旋藻、8g竹盐、10g柠檬酸、30g覆盆子粉、20g蓝莓粉和60g水蜜桃粉在转速为80r/min条件下混合20min,完毕后再于120℃条件下灭菌10s后计量、包装。
实施例5
本实施例提供一种改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料的制备方法。
(I)制备圆苞车前子壳粉:
(1)将圆苞车前子壳、水和α-淀粉酶混合,其中圆苞车前子壳、水和α-淀粉酶的重量比为1:2:0.4,并调节体系pH为6.0,得混合液a;
(2)将混合液a加热至107℃进行糊化,糊化时间7.5min,完毕后再降温至90℃进行液化,液化时间1.5h,完毕后得混合物b;
(3)将混合物b冷却至室温,调节pH为2.0,再进行干燥并粉碎至粒度为440~460目,得圆苞车前子壳粉。
(II)制备改善肠胃环境润肠通便、纤体养颜的水溶性纤维饮料:
将240g柠檬粉、175g燕麦、160g苹果膳食纤维、150g玉米水溶性纤维、125g低聚果糖、20g圆苞车前子壳粉、25g食用螺旋藻、6g竹盐、12.5g柠檬酸、25g覆盆子粉、25g蓝莓粉和50g水蜜桃粉在转速为70r/min条件下混合25min,完毕后再于110℃条件下灭菌15s后计量、包装。
