Abstract

 本発明は、大豆たん白素材を含む、低粘度で且つ凝集物が少ない良好な物性の濃厚流動食を得ることを課題とした。  以下a)~d)の物性を持った大豆たん白素材を用いることで、濃厚流動食が得られる。a)100g中に、大豆たん白素材を固形分として5g及び、乳酸カルシウムをカルシウムとして30mg含む水溶液の、121°C,10分間の加熱後の20°Cにおける粘度が10mPa・s以下で且つ、同水溶液の1,300×g,5分間の遠心後の沈澱量が1容量%以下、b)大豆たん白素材の12重量%水溶液の、5°Cにおける粘度が1,000mPa・s以下、c)大豆たん白素材の0.22M TCA可溶率が11%未満、d)大豆たん白素材のPSI(蛋白質水溶性指数:Protein Solubility Index)が70以上。また、該大豆たん白素材は、大豆たん白原料の水溶液または水分散液をpH5.7~7.4で、110°C~160°Cにて15~70秒間加熱処理することで得ることが出来る。
