lMPROVEMENT IN CUTTING-TOOLS FOR THE MANUFACTURE OF CRACKLINGS FROM ROASTED PORK.
Specification forming part of Letters Patent No. 125,137, dated April 2, 1872.
To all whom it may concern:
Be it known that I, LOUIS F.1JANNAY, of the county of Baltimore and State of Maryland, have invented certain Improvements in Cutting-Tools, to be used in the manufacture of cracklings from the rind of roasted-pork and other similar articles, of which the followin g is a specification; and I do hereby declare that the same is a full, clear, and exact description of my said invention, reference being had to the accompanying drawing and to the letters of reference marked thereon.
My invention relates to a tool for the purposes above named, being reversible, or so made that it is double, having two cutting-edges, only one of which is, however, to be used at the one time, the other of which is to take the place of the former when it is worn or dulled by use.
In the further description of my invention, which follows, due reference must be had to the accompayning drawing, in which- Figure l is a face view of the cutter-head. Fig. 2 is a sectional view of the cutter-head, showing mode of attaching the tool thereto. Fig. 3 is a perspective view of my improved cutting-tool, shown as of a convenient size for use.

B is a diska-l cutter-head,havin g a wroughtiron band, C, shrunk around it. D D are grooves radiating from the center of the cutter-head, within which grooves strips E are fitted and secured by bolts and nuts, F. These strips are intended to clamp the cutting-tool, their shape being adapted to that of the grooves and cuttin g-tools. The cutter-head may revolve upon a horizontal or vertical shaft. A is the cutting-tool.
It is made of tempered steel, and when in use is fitted wi thin the cutter-head so that 011ehalf projects from the surface thereof, which is designated by the line a a. By the peculiar form given to the tool, which, from experiment, 1 find best adapted to the purpose for which it is designed, the knife, when in operation, is unimpeded by any clogging against it of the material operated upon. A difference will be seen existing between the distances 1). 0 and c d, the consequent taper being intended to give the desired angle to the cutting-edge e of the tool. Parts ofthenou-operating edges fare chamfered that the passage of the cuttings over them may not be obstructed. That portion f of the inner side of the tool whichis not chamfered, and slightly raised, is used in the securing of the tool to the cutter-head. The inner edges 9 are also partially chamfered to allow the free passage of the cuttings past them.
The main feature of my invention, it will be seen from the foregoing description, is, in its reversible character, its peculiar shape and the chamfered edges rendering it simpler, more effective, and more durable than other simpler tools; and, by the fact of its being double,
its convenience and cheapuess will at once be recognized.
Having thus described my invention, what I claim as new, and wish to secure by Letters Patent, is-- 1. Aflat tapering tool, double and reversible in its character, having the projecting edges 6, the chamfered parts fand g, and the plain projection j", the whole constituting a tool, substantially as shown and described, for the purposes herein specified.
2. A combination of the cutting-tool, as described and shown, with the cutter-head, substantially as set forth, for the purposes specified.
