Abstract

A method for protein extraction from sunflower extraction cake includes extraction cake crushing, protein extraction in sodium chloride brine according to a hydromodulus 1:(8-10) with additional physical treatment, separation of solid particles of extraction cake from a protein extrait through centrifugation, protein isoelectric precipitation from an extrait by addition of hydrochloric acid solution up to pH value of 4,0-4,6 and further protein paste extraction due to centrifugation. According to the invention physical treatment used during protein extraction from cake is intermittent action of ultrasonic vibrations in a cavitating mode at initial acoustical power of a generator of 10 W, frequency interval 44 kHz and duration of ultrasonication from 3 to 6 minutes. A technical result of the proposed method of sunflower protein extraction lies in that the mass percentage of the extracted proteins from sunflower extraction cake during 8 minutes was increased approximately by 50 % in comparison with control which essentially decreases duration of the process of protein extraction from extraction cake.
