Abstract

The invention relates to milk industry and can be used for making milk products of a dessert group, in particular ice-cream. A method for making apple-oat ice-cream includes preparing apples, sugar, citric acid and water, pasteurizing, cooling, ripening and freezing the mixture, packing, hardening and preserving the ice-cream. The apple puree after thermoacidic hydrolysis at pH 2,7-3,3, a temperature of 80- and an exposure for 19-20 min. is forwarded to homogenizing and then it is added to the oatmeal, mixed with sugar and hydrated or crushed oat flakes in an amount, correspondingly, 2-5 mass % and 1.5-4.5 mass %.The proposed production method allows obtaining the ice-cream with activated raw material allowing to fully exclude the use of stabilizing agents and to reduce the sugar content.
