Abstract
Önemli miktarda taze patates içeren güçlü bir hamur sağlamaya yönelik bir kompozisyon ve yöntem geliştirilmektedir. Taze patatesler bir püre haline getirilmekte ve su içeriğini ağırlıkça yaklaşık %70?e düşürmek için santrifüjlenmektedir. Bu patates püresi nihai hamurun ağırlıkça %50?sinden fazlasını içerebilmektedir. Bu hamur yaprak haline getirilmiş veya ekstrüde edilmiş ürün yapmak için kullanılabilmektedir. Böyle bir hamur sonucunda, tamamen dehidre veya kısmen dehidre patates türevlerinden yapılmış ürünlere kıyasla gelişmiş, daha doğal tada sahip ürünler ortaya çıkmaktadır. Yöntem, patateslerin bir patates bulamacı veya püresi oluşturacak şekilde ince ince dilimlenmesini; fazla suyun patates bulamacından boşaltılmasını; patates bulamacının, yaklaşık 190 Fahrenheit dereceden fazla olmayacak bir sıcaklığa ısıtılmasını; bulamacın 140 Fahrenheit derece altında soğutulmasını; ve şekil verilebilir bir hamur oluşturmak için bir bulamaç ve diğer bileşenlerden oluşan karışıma düşük miktarda iş girdisi uygulanmasını içermektedir.
