The aim of the invention is to increase the yield of droukey and improve their quality due to the enrichment of the nutrient medium with biologically active substances of wild yeast with simultaneous destruction of the latter.
Способ заключаетс в том, что, использу свойство пара, в предлагаемом способе осуществл ют уничтожение посторонней микрофлоры непосредственно в процессе выращивани , так как паром воздействуют на пгнный слой, в котором сосредоточена основна масса диких дрожжей, поскольку это дрожжи верхнего брожени .The method consists in using the property of steam in the proposed method to destroy extraneous microflora directly in the growing process, since the steam affects the png layer in which the bulk of the wild yeast is concentrated, since it is the top-fermenting yeast.
.По мер повторени цикла стерилизации, количество диких дролсжевых клеток в културальной среде постепенно убывает, поскольку удельный вес диких клеток по отношению к культурным посто нно уменьшаетс .In the proposed method, a new property of vapor is found - to destroy the membranes of yeast cells, due to which the nutrient medium is enriched with biologically active substances of wild yeast. Under the influence of steam, the shell of the yeast cell is destroyed and its contents dissolve in the culture medium and are rapidly oxidized under the influence of rapid aeration of the culture medium. 2-3, after the wild cells are exposed to the sterilizing agent, the disappearance of dead cells is observed. By repeating the sterilization cycle, the number of wild cells in the culture medium gradually decreases as the proportion of wild cells in relation to the culture is constantly decreasing.
At the same time, an increase in the growth rate of the dronds of the main culture is observed due to more complete use of the substrate and the additional consumption of the products of viability of wild yeast cells.
The reduction in the culture medium of the amount of wild yeast and extraneous microflora provides the possibility of long-term cultivation.

Baker's yeast is grown under aeration conditions on a nutrient medium containing molasses as a carbon source. After each 2-4 hours, the flow of antifoam agent is stopped, the pH of the medium is increased by 5-10%, the aeration is stopped, and steam with a temperature of 130160 ° C is supplied to the froth layer of the culture liquid for 10-15 minutes. This causes the destruction of extraneous microflora and wild yeasts and the enrichment of the culture medium with biologically active substances secreted from the destroyed cells. After stopping the steam supply, the air is turned on and the yeast cultivation continues, which is repeated many times. The proposed method allows to destroy almost all wild yeast, their residual content in the culture fluid is 3-5%, to enrich the nutrient medium of the main yeast with biologically active substances, resulting in
90-91%,In this case, the lifting power of the yeast improves to 30-50 minutes, and the yield rises to 90-91%,

3000 .Example 1. Commodity yeasts are grown in the apparatus of a useful capacity of 70 m at a dilution of raw materials of 1: 10. When growing yeast of the first cycle, 3.m of water, 27 kg of di-ammonium phosphate, are supplied to the apparatus. 40 kg of potassium chloride, 20 kg of magnesium sulphate, 1.58 g of destiobiotin, 50 kg of molasses, 1600 kg of the seed of the previous stage yeast, turn on the air and start the influx of molasses, nutrient substances; TV and water. 1 shows the data on the cultivation of yeast. During the yeast cultivation process, the medium temperature is maintained at 30 ° C, the pH of the medium is 4.5, at the end of the process it is 4.9, and the air flow rate is 3000.

For 8 hours, 70 m of culture medium with a concentration of 68 g / l is accumulated in the apparatus, which corresponds to the amount of yeast equal to 4760 kg.
From the ninth hour begin the selection of the culture medium in the sampling apparatus in the amount of 8. During this period, 630 kg of molasses containing in the volume of 1.47 m and 6.33 m of water are served hourly in the main apparatus and 8 m / h of the culture medium with a concentration of 68 g / l, respectively, is taken. 550 kg of yeast per hour
