Description
The invention relates to refrigeration equipment, namely, chambers for refrigerating processing meat nolushush.
The purpose of the invention is to reduce the mass loss of the product, reducing energy consumption.
The evaporation of moisture from the surface of m sa depends on the humidity of the air. The rate of evaporation of moisture decreases with increasing humidity. The latter depends on the relationship between moisture supply and moisture removal. The main source of moisture inflow is water contained in the products, which leads to shrinkage of the product. The moisture trap is a consequence of condensation of moisture on the surface of cooling devices, i.e. hoarfrost. A decrease in the intensity of the water outlet contributes to an increase in the humidity of the air in the chamber, which means it reduces usunzhu. A decrease in the thermal resistance of the heat transfer of radiation batteries with a decrease in the intensity of the frost formation contributes to a decrease in the energy consumption during cold treatment.
FIG. 1 shows a schematic representation of the camera, a longitudinal section; in fig. 2 shows section A-A in FIG. one; in fig. 3 - plate radiator battery with anti-convective walls.
The proposed chamber for refrigerating processing of meat contains a tepv oisolylated body 1, inside of which there are interdigit lamellar radiation batteries 2 with 1 1convective walls 3 of the cellular structure, located at the level of the femoral part of meat nolushus 4 between the suspension lines of the conveyor 5, air coolers 6 , a constant-pressure air distributor 7 with slit nozzles 8, made along the threads of the conveyor 5 suspension paths along the entire length of the chamber. Anti-convection walls 3 are installed along both planes of batteries 2 with a gap so that when defrosted the walls do not prevent them from being removed from the surface of batteries 2, but the gap must be such that
The air movement press in iie.M remained la.minar. Installing the walls 3 with a gap in relation to the batteries m 2 reduces the duration of the defrosting of the latter.
The camera works as follows.
Антиконвективные стенки 3 понижают скорость потока воздуха, омывающего поверхность батарей 2, что уменыпает конвективный массоперенос от воздуха к батарее 2, а следователыю, и скорость гфоцесса инееобразовани на их поверх ОСТИ .The air, cooled in the air cooler 6., is directed to the constant-pressure air distributor 7 and, through the slot nozzles 8, is supplied to the half-carcasses 4. Inter-core radiant panel batteries 2 with anti-convective walls 3 receive the thermal radiation from the half carcass 4 and cool the ambient air. Anti-convection walls 3 reduce the flow rate of air washing the surface of the batteries 2, which reduces the convective mass transfer from air to battery 2 and, consequently, the speed of the formation and formation of air over them.
The anti-reflective walls 3 have a lattice cell structure, therefore they practically do not shield the surface of the inter-panel radiation panel batteries 2 involved in radiation heat exchange with the semi-transparent semi-tubes 4, and the presence of cells somewhat increases the degree of blackness of the surface of the batteries 2. Increasing due to 1 difference in our walls 3 the boundary laminar layer near the surfaces of the inter-nanoli} b x x radiation batteries 2 does not affect the intensity of the radiation heat exchange, since the distance between the surfaces of the base Tarey 2 and meat nolutush 4 is small, and the air almost does not absorb radiation in the infrared region of the spectrum.
-,4Reducing the speed of air movement around radiation batteries due to the creation and laminar mode of its movement near batteries through anti-convection walls reduces the coefficient of moisture condensation on the surface of the batteries, and hence the intensity of the formation, which in turn contributes to air humidity in the chamber , reduce usun1ki and reduce energy consumption for the production of cold. -,four
