Создание технологий получения новых функциональных пищевых продуктов из морских гидробионтов является актуальной задачей. Известно, что морские беспозвоночные (моллюски, голотурии, трепанги, морские ежи и др.) содержат уникальные биологические активные вещества различной природы, в том числе макро- и микроэлементы, являющиеся основой для создания лечебно-профилактических пищевых продуктов, биологически активных добавок к пище, лекарственных средств и косметических продуктов. Микроэлементы, получаемые, в частности, из морского гребешка, принимают участие в осуществлении важнейших обменных процессов организма, входят в состав молекул белков-транспортеров, гормонов, ферментов, оказывают влияние на процессы фагоцитоза и др. Известен способ получения биологически активной добавки к пище - гидролизата из отходов разделки морского гребешка (Патент RU 2192149 C1, RU, МПК A23L 1/30, A23L 1/333, A23J 1/04, 2001). Биологически активная добавка (БАД) может применяться как самостоятельно, так и в качестве компонента в рецептуре различных пищевых продуктов для обогащения их аминокислотами, таурином, макро- и микроэлементами. Биологически активная добавка к пище представляет собой гидролизат из отходов разделки морского гребешка. Предложен также способ получения БАД путем кислотного гидролиза отходов разделки морского гребешка. Для этого отходы разделки морского гребешка загружают в реактор, в который предварительно залита соляная кислота, при этом концентрация соляной кислоты составляет не более 7% к гидролизуемой массе. Гидролиз ведут при температуре 105°С в течение примерно 18 ч до содержания аминного азота в гидролизате 0,6% или 1,5%. Массу охлаждают до температуры 36°С и нейтрализуют раствором щелочи (NaOH или КОН) до рН 5,0. Массу упаривают для удаления избытка влаги до плотности не более 2 г⋅см-3 и оставляют для созревания, выдерживая в течение 9 дней. По окончании проводят повторную нейтрализацию до рН 5,5. Готовый гидролизат отделяют от осадка. БАД содержит незаменимые аминокислоты (г/100 г белка), метионин + цистин 7,84, треонин 10,55, лизин 2,06, фенилаланин + тирозин 7,31 и таурин 3,9, минеральные вещества не менее 15%, азотистые вещества не менее 2%. Недостатком способа является выделение элементов путем гидролиза совместно с аминокислотами без акцента на величины концентраций отдельных макро- и микроэлементов. По второму изобретению для получения спиртового концентрата элементов проводят экстракцию высушенных тканей гребешка в соотношении 1:1,5 (сырье:смесь экстрагентов), причем в качестве смеси экстрагентов используют сильнополярную смесь экстрагентов, содержащую 96% этанол и диэтиловый эфир в соотношении 2:1, экстракцию проводят 24 часа при температуре 20±2°С, а диэтиловый эфир упаривают на роторном испарителе.The declared technical result is achieved due to the fact that a group of inventions is declared. Symptoms of Mg deficiency are muscle cramps; Fe - anemia, immune system disorder; Cu - weakness of the arteries, impaired liver function, secondary anemia; Mn - infertility, deterioration of skeletal growth, etc. Zn, Cu, Mn, Se, B, Co, Mo, Ni, F, Cr affect reproductive function. Microelements are especially important in the diet of pregnant women, because disruption of microelement homeostasis even during pregnancy leads to the formation of various pathologies [1]. Microelement homeostasis in the human body can be disrupted by insufficient intake of essential microelements or excessive intake of toxic elements. The entry of essential microelements into the blood is determined not only by a balanced diet, but also by the efficiency of their absorption, which directly depends on both the state of human health and the form of consumption of the elements. Высушенные ткани измельчали и заливали смесью 50 мл 96% этанола и 100 мл глицерина. Добавка этанола необходима для увеличения полярности экстрагента. Экстракцию проводили 24 часа при температуре 40-60°С. Спиртовой экстракт отделяли центрифугированием при 3500 об/мин в течение 5 мин. Этанол упаривали с помощью роторного испарителя. Степень извлечения элементов - R=qспирт/qткани, составляет в среднем 80%. Экстракцию проводили 24 часа при температуре 20±2°С. Экстракт отфильтровывали в вытяжном шкафу, диэтиловый эфир отгоняли с помощью роторного испарителя. Спиртовой экстракт очищали от оставшихся примесей тканей центрифугированием при 3500 об/мин в течение 5 мин. Степень извлечения элементов - R=qспирт/qткани, составляет в среднем 80%).
