Растительное сырьё: ферментированная слива, 2 кг; ферментированный чеснок, 150 г; свежий стручковой острый перец, 80 г; свежая зелень укропа и кинзы, по 15 г. Чеснок, сливу и перец охлаждали до температуры 8 – 9 0Сг и измельчали до степени дисперсности 5 мм. Свежую зелень, охлажденную до той же температуры, измельчали до степени дисперсности 8 – 10 мм. Перемешанные компоненты размещали на противни слоем не более 5 мм. Заполненные таким образом противни помещали в вакуумную камеру и понижали давление в течение первых 20 мин с атмосферного до 70 - 80 мм рт.ст., после чего отключали вакуумный насос на 20 мин, затем весь цикл повторяли. Температуру обогревающих полок поддерживали постоянной - 40°С. Следующие 60 мин давление в камере поддерживали постоянным 20 мм рт.ст., после чего насос выключали и процесс сушки завершали. The temperature of the heating shelves was kept constant at 40 ° C. For the next 60 minutes, the pressure in the chamber was kept constant at 20 mm Hg, after which the pump was turned off and the drying process was terminated. The finished pasty product was packaged in consumer containers.
