Abstract
Description
The invention relates to the food industry and can be used to obtain biodegradable and environmentally friendly biopolymer protective coating of food products, such as fruits and vegetables, to extend their shelf life and preserve presentation.
Currently, the use of protective and environmentally friendly coatings in the food industry is of high interest due to the increasing requirements for storage and consumption of food products, such as fruits and vegetables.
Functional biodegradable polymer coating for food packaging is a film material based on biopolymers with the inclusion of functional food additives, which creates a barrier layer between the food product and the environment in order to extend the shelf life and presentation of the product. To create such materials, non-toxic substances that are biocompatible and inert to humans and animals, as well as edible and processed by the digestive system, can be used. Such substances mainly include proteins, polysaccharides and their derivatives, as well as mixtures thereof.
Биополимерные покрытия могут защитить продукт от механического воздействия, микроорганизмов и замедлить потерю качества из-за массопереноса (влаги и газов).To optimize the properties of coatings according to their application, it is possible to introduce various food fillers into their composition, for example, such as non-toxic and biocompatible plasticizers, antioxidants, reinforcing and antibacterial agents. Biopolymer coatings can protect the product from mechanical stress, microorganisms and slow down the loss of quality due to mass transfer (moisture and gases).
Coatings can be used for individual packaging of small portions of products, in particular, apples, pears, berries, beans and nuts, etc. The production of biocomposite edible coatings can be carried out from secondary raw materials and waste from the food and agricultural industries, which significantly reduces the environmental burden on the environment.
2009 г.).The composition of the protective and edible coatings for meat and meat products is known, including a dry mixture based on animal proteins, sodium diacetate, sodium lactate, liquid smoke, food coloring, table salt and water (Patent RU 2411738, publ. 2009).
The specified composition allows you to extend the shelf life of the product, but it is inappropriate and not cost-effective in relation to the packaging of fruits and vegetables, significantly modifying their properties and presentation. Moreover, the effect of synthetic preservatives on the organisms of humans and animals is not fully understood.
The known protective and edible compositions for the same products containing dry granular juice of red or black currant, sugar and gelatin (Patent RU 2501280, publ. 2012) or potato starch (Patent RU 2415592, publ. 2009) as film-forming and structuring component.
The dry currant extracts used in these compositions can lead to a decrease in the microbial contamination of the processed product, however, they suggest a strong heterogeneity of the coating microstructure and, therefore, a deterioration in its protective properties.
2005 г.).Known compositions biodegradable protective and edible compositions for the same products, including chitosan, mono-, tribasic organic acid, gelatin, or potato starch, or fiber as a structurant and water-retaining agent (Patent RU 2352126, publ. 2005).
These coatings have bacteriostatic properties and slow down the evaporation of moisture from the product, but the use of such a component as chitosan in their composition reduces the profitability of the coating in the industrial processing of fruits and vegetables.
2005 г.).Also known is a biopolymer edible composition for processing fish products based on chitosan with the addition of pectin or sodium alginate as a builder and a copolymer of vinylpyrrolidone and crotonic acid as an antibacterial agent (Patent RU 2297151, publ. 2005).
This composition also allows you to create highly effective protective coatings for fish products, however, the complexity of the composition and the cost of the components limit its use in the processing of fruits and vegetables on an industrial scale, significantly increasing the cost of finished products.
2013 г.).A known composition for processing bread and bakery products, including the protein component of vegetable origin, chickpea flour, as well as salt, water and mountain ash powder (Patent RU 2539800, publ. 2013).
The components of this composition allow you to create an edible protective coating that is compatible with the surfaces of bakery products and prolongs their shelf life. Moreover, the presence of the specified protein component in the coating composition can lead to heterogeneity of the coating and its reduced operational, in particular mechanical, properties.
An analysis of these inventions shows that basically coatings or packaging films for food processing are multicomponent materials with complex structure, whose properties depend on both structure-forming components and functional fillers, most often bacteriostatic. The increased manufacturability of inventions and their wide component composition in most cases are not suitable for processing fruits and vegetables in order to extend shelf life and preserve their presentation.
Данное покрытие практически невидимо, не имеет запаха, а процесс его производства основан на воде (www.geektimes.ru).Fibroin-based coating is known - the protein underlying the cobweb and cocoons of insects, in particular silk. This coating is virtually invisible, odorless, and its production process is based on water (www.geektimes.ru).
The properties of the fibrion allow it to stabilize in the form of a coating and protect other surfaces, while remaining biodegradable and environmentally friendly. However, this coating has not yet been tested against changes in the properties of food products.
1982 г.).A known composition for coating fruits and vegetables containing iodine, potassium iodide, starch, sodium bicarbonate and water (Copyright certificate No. 858733, publ. 1982).
This composition has bactericidal properties and is suitable for processing apples, plums, grapes, peaches, tangerines, tomatoes, carrots, cabbage, etc. However, these fruits and vegetables must be washed thoroughly before eating.
The objective of the invention is the creation of a protective and edible composition of the biocomposition for coating food products, such as fruits and vegetables, ensuring the extension of their shelf life and preservation of presentation. In the framework of the invention, the composition of the polymer composition is realized physically in the form of a film-forming solution prepared according to the composition, which makes it possible to form a coating on the surface of the processed product.
The objective is achieved due to the fact that the composition of the polymer composition for processing food products, such as vegetables and fruits, containing starch and water, additionally contains edible gelatin, glycerin, bentonite and ginger essential oil in the following ratio, g / 100 g:
The proposed composition of the polymer composition contains as the main film and structure-forming, as well as a water-retaining component of edible gelatin. Gelatin, being a product of hydrolysis of animal collagen protein, has high film-forming properties and a relatively low dissolution temperature in water, which makes it most attractive for use as a component of a biocomposite coating matrix.
An additional structure-forming component, starch, being a cheap, plant-based and water-soluble polysaccharide, is also a water-retaining agent. This additive stabilizes the performance of the finished coating, in particular the permeability of water vapor and mechanical properties, and also reduces the solubility of the coating in water.
Glycerin in the composition of the film-forming solution is used as a biocompatible and inert to the human body polar plasticizer, significantly increasing the elasticity of the coating, as well as a compatibilizer, enhancing the intermolecular interaction between gelatin and starch.
As an additional agent, reinforcing the biopolymer matrix, an emulsion of microparticles of clay mineral filler of bentonite, which is also a natural enterosorbent, is used. In the food industry, bentonite is registered as a food additive E 558, which prevents caking and clumping. In the proposed composition, the presence of this component determines the increased mechanical and protective properties of the coating. Moreover, changing the degree of dispersion of microparticles in the matrix of the composite coating allows you to control the processes of vapor and gas transfer between the packed object and the environment.
An aqueous emulsion of ginger essential oil in a film-forming solution is used as a bacteriostatic additive to prevent premature microbial contamination of the packaged product.
The limits of the presented values of the ingredients of the composition are necessary and sufficient. So, at values less than those indicated - the composition of the coating will not give the claimed effect, at values above those additional costs appear and the quality of the coating decreases due to an increase in its thickness and the appearance of heterogeneity of the structure.
The invention of the proposed composition of the polymer composition is implemented through the preparation of film-forming solutions to further obtain the final coating. The following examples describe the technology for the preparation of 100 g of film-forming solutions with different concentrations of components that implement the proposed composition.
Example 1. Preparing a 2% film-forming solution based on gelatin and starch with a total mass of biopolymers of 2 g per 100 ml of distilled water with the addition of 30 mass. % glycerol of the total mass of gelatin and starch (0.6 g). For this, a portion of potato starch 10 mass. % of the total mass of gelatin and starch (0.2 g) is dissolved in 100 ml of distilled water at a temperature of 90 ° C for 10 min with constant stirring. The starch solution is subjected to ultrasonic dispersion using an ultrasonic bath at 60 ° C for 25 minutes, after which a portion of glycerol is introduced into the solution. After the starch and glycerin form a homogeneous solution, a weighed portion of gelatin of 90 mass is slowly introduced into it. % of the total mass of gelatin and starch (1.8 g), followed by ultrasonic dispersion at 60 ° C for 50 minutes Then, a sample of 3-mass bentonite microparticles is slowly introduced into the resulting solution. % of the total mass of gelatin and starch (0.06 g) at a solution temperature of 60 ° C and constant stirring, avoiding their aggregation. Next, ginger essential oil in the amount of 5 masses is introduced into the solution. % of the total mass of gelatin and starch (0.1 g). The resulting system is emulsified using a submersible mechanical dispersant at a rotor speed of 6000 rpm to obtain a stable suspension, avoiding foaming. Finally, the resulting solution is degassed using an ultrasonic bath for 10 min at a temperature of 60 ° C. The finished film-forming solution can be applied to the surface of the processed product using the methods of dipping into the solution and spraying the solution under pressure. The properties of the final coating strongly depend on the coating method, the parameters of the coating method and the temperature treatment (drying) of the solution.
The most cost-effective way to apply the coating is to spray the solution under pressure onto the surface of the processed product. In this regard, to implement the composition indicated in the example, 2 kg of apples were treated with 100 g of solution. As a result, a coating with a thickness of up to 100 μm was formed on the surface of apples within an hour. Subsequent storage of processed apples for three months did not reveal strong changes in their gas composition and presentation.
Example 2. The preparation of the solution according to example 1. The concentration of the gelatin and starch solution is 3.5%. The percentage of mass fractions of fillers in the solution of example 1. The content of components in the film-forming solution of the example is shown in table 1. The composition indicated in the example provides an increase in the viscosity of the solution compared to the composition of example 1, which allows you to vary the thickness of the coating and reduce its vapor and gas permeability. This composition can be implemented when coating products with high moisture content, for example, ripe pears. For 2 kg of ripe pear fruit, 100 g of a solution of the composition according to the specified example was applied by spraying. As a result, the coating formed within two hours had a small thickness of an average of 150 microns. Samples of coated pears according to the example retained their moisture content and presentation for two months.
Example 3. Preparation of the solution according to example 1. The concentration of a solution of gelatin and starch 5%. The percentage of mass fractions of fillers in the solution according to Example 1. The content of the components in the film-forming solution according to the example is shown in Table 1. The composition indicated in the example allows to greatly increase the viscosity of the solution, which facilitates the process of applying it to the processed food product. When using this composition, it is possible to significantly increase the mechanical properties of the product surface. This composition is effective while maintaining the marketable properties of plant products with high moisture content and a thin peeled surface. As an example of the implementation of this composition, 1 kg of red grapes was treated with 100 g of a film-forming solution of the composition according to the example. The grapes treated with the solution were dried at room conditions for three hours. Coated grape samples retained their presentation, density and moisture content for a month and a half in room conditions from the moment of coating.
The absence of toxicity of the composition according to the invention to living organisms is caused by the use of natural, mainly water-soluble components, digestible or inert to the human body. All components used are well-proven food additives in the food industry that comply with SanPiN 2.3.2.1293-03. The applied coating forms a protective layer against mechanical damage and provides optimal control of the processes of vapor and gas permeability, preventing the effects of spoilage and alcohol fermentation in the entire volume of the processed fruit.
